I serve the artichoke leaves with melted butter or mayonnaise to dip them in. If you like a little extra flavor, add some dried dill and a pinch of garlic powder to the melted butter.;

To eat them, you gently grip the leaf about halfway up between your teeth and pull. The meat of the artichoke will slide off as you pull.

Its Time To Cook The Artichokes

Once you press the pressure cook or the manual button, youll need to choose the cooking time based on the size of your artichokes, as follows:

  • Small artichokes: 7-minute cook time
  • Medium artichokes: 10-minute cook time
  • Large artichokes: 15-minute cook time

Once the pressure cooking cycle is over, perform a quick release of the steam. You do so by turning the steam release knob to its venting position or by pushing the release valve if theres one on your instant button. Open the lid, and youll know your artichoke is ready when your knife slides into the bottom seamlessly.;

How To Prepare The Artichokes:

  • With a bit of trimming and peeling you can eat most of the artichoke stem, so I always pick the ones with the longest stems. Trim the discolored end, then cut off the any stray leaves and peel the stem if needed.
  • After the stem is trimmed and peeled, cut the artichoke in half, cutting lengthwise through the stem. This makes the artichoke quicker to cook and easier to eat, but maybe I love doing it because thats how my mom did it.
  • The center part with the fuzzy texture is called the choke and it needs to be cut out. Use a small sharp knife to make a deep cut under the fuzzy choke. Grab the very inside leaves, and pull out, taking the choke with it. With practice you can get it out in one or two pulls, and leave as much of the leaves as you can while removing all the choke.
  • My mother never trimmed the artichoke leaves But lately I like to use kitchen shears and cut off the sharp ends; your choice on that.
  • Artichoke Cooking Time In The Instant Pot

    This recipe is written for medium sized artichokes which take 20 minutes cooking time.;

    How To Make Steamed Artichokes In The Instant Pot:

    We will need to gather up just a few simple ingredients, in addition to a trivet or steam basket that fits inside the Instant Pot. This recipe comes together so easily with just a few steps:

    • Remove the outer leaves, and remove the stem from your artichokes.
    • Brush each artichoke with lemon juice
    • Pour water in the bottom of the Instant Pot and insert the steam trivet. Arrange artichokes stem side down so that they sit upright.
    • Secure the lid and select manual or high pressure for 12 minutes. Use a quick release.
    • Meanwhile, prepare the lemon garlic butter by stirring the dijon mustard, remaining lemon juice, garlic and salt with butter.
    • Serve warm with the lemon butter garlic sauce.

    Sautéd artichoke hearts are a delicacy, whether they come from a jar or from a fresh choke. In our instance, we already had several hearts steamed and ready, so well be using fresh ones. Well be using the Instant Pot to sauté but you could use a regular skillet or sauté pan on the stove.

    Youll first need to remove all the petals and remove the choke from the center. The easiest way to do this is to slice the artichokes lengthwise and carve out the choke with a butter knife or spoon.

    Add 1 tablespoon of butter or olive oil to the Instant Pot and set it to Sauté. Add chopped garlic and cook for 1 minute, stirring constantly.

    The garlic will infuse the butter with rich garlic flavor. When the minute is up, add the artichoke hearts and cook for another 5 minutes, stirring occasionally. The hearts should brown slightly around the edges.

    Sprinkle lightly with sea;salt and serve these artichoke hearts as a side dish. They offer a mild, nutty flavor akin to broccoli or asparagus. A delicacy like this fits right in on special occasions, like Easter dinner.

    How To Make Instant Pot Artichokes

    Place the trivet or a steamer basket in the Instant Pot inner pot.

    Pour in a cup of cold water.

    Place the artichoke halves on the trivet, face down. You can stack them on top of each other, if there are too many for one layer.

    Lock the lid and set the vent to sealing. Press the pressure cook button and set the timer to 8 minutes. When the time is up, allow a natural pressure release for 5 minutes, then release the remaining pressure.

    The artichokes should be perfectly tender and ready to eat. If they arent as soft as you would like, put the lid back on immediately and set the time for another 2 minutes.

    Adjust Artichoke Cook Time In Instant Pot

    Place the artichokes into your Instant Pot. For unstuffed artichokes, I didnt notice any difference between placing them cut side up or down.;

    Lock the lid, turn the knob to sealing, and cook on manual high pressure for 25-40 minutes.

    A few words about cooking times.

    Every stuffed artichoke recipe seems to have a different opinion for what cooking time is best. So, Ive tested and tweaked until I found my sweet spot: 45 minutes for a 1lb artichoke. That translates roughly to about 30 minutes for a .85lb artichoke.;

    Remember this: never undercook your artichokes!;

    UNDERCOOKING will be so much worse than overcooking in this instance, so add a couple minutes if youre worried. If you dont mind putting them back in the Instant Pot and cooking longer if they are undercooked, then do that. The key to steaming artichokes in an Instant Pot is to let them cook long enoughespecially for a large artichoke.

    The first time, I cooked my .86 lb artichoke for 15 minutes. After a quick release, I cut it in half to test the doneness. It was still quite firm in the middle and the outer leaves had a little resistance. I placed them back in the pressure cooker and cooked an additional 5 minutes. They were better, but still not perfect.

    I reheated an artichoke from this batch in the microwave the next day for 3 minutes, which yielded the results I wanted. This confirmed to me that they needed even longer than 20 minutes of cook time in the Instant Pot.

    To Cook Artichokes In The Instant Pot Or Pressure Cooker:

    • Place the steamer rack in the bottom of the Instant Pot and place the artichokes on the rack, top side down, so the moisture doesnt collect in the bottom of the artichoke.
    • Add sliced lemon and garlic cloves to the Instant Pot.;
    • Pour in 1 cup of water and place the lid on the Instant Pot. Set the vent to sealing.
    • Set the Instant Pot to High Pressure and cook for 5-10 minutes depending on the size of the artichoke.
    • When the artichokes are done cooking, manually release the pressure using the quick pressure release button.

    How To Choose Fresh Artichokes For Steaming

    When buying artichokes, look for a globe shape with tightly packed leaves. A couple of brown spots are fine as long as they aren’t soggy.

    The artichoke should feel firm and heavy for it’s size.

    Do the squeak test: Hold the artichoke close to your ear and gently squeeze it with your hands. If you hear it slightly squeak, you’ve picked a good one!

    Step 1: Prep Instant Pot Artichokes

    Before you do anything else, add a cup of water into your Instant Pot. Then, add the trivet or a steamer basket. I like to use my 6 quart instant pot just because theyre so big.

    Next, weigh your artichokes so that youll know how long to cook them later on. Try to buy artichokes that are all the same size!

    If youre using a 3 quart Instant Pot to make your artichokes, youll be able to fit 1-2 artichokes. Wash your artichokes carefully under cool running water. Then, trim off the pointy barbs on the leavesthey can really hurt!

    With a sharp knife, cut the top 1/4-1/3 off the top, as well as the bottom 1/2 inch of the stem.

    Trimming is not completely necessary, but the leaves can be quite sharp and swear-word inducing if youre not prepared for its poke.

    The cooking time for artichokes in the Instant Pot will depend on a few different factors. You have to consider the size of the artichokes, how dense they are, and how many youre cooking at once. If you overstuff the pot with artichokes, they will take longer to cook and they might not cook evenly. If you mix together dense large artichokes with small, open leaved artichokes, you may have uneven cooking throughout your vegetables. Its better to put the same kind of artichokes together or consider taking the smaller ones out earlier in the cooking process. That can be difficult to do with the Instant Pot, so its best to simply make sure all of your artichokes are about the same density and size.

    There are many methods for cooking an artichoke, of course, but this Instant Pot artichoke recipe has been my fail-proof way to get perfect artichokes every time. Why, because it evenly steams the veggie and makes getting them on the table in time for dinner extra easy.

    Another important tip for making the perfect artichoke is to cook them cut-side-down . Steaming artichoke in your Instant Pot or on the stove top, this is an important step. This allow the hot steam to easily get in between the petals of the artichoke and evenly cook your veggie throughout.

    Also, try to select artichokes that are similar in size when cooking them as a batch. Smaller artichokes will cook faster than large ones. Cooking artichokes of different sizes will make for very unevenly cooked veggies and some serious disappointment at the dinner table.

    How To Eat The Artichoke

    • Pull the leaves off and dip: Pull the outer leaves off, one at a time. Dip the white fleshy end in the sauce.
    • Place light end in mouth, dip side down, pull, scraping through your teeth: Tightly grip the other end of the leaf. Place in mouth, dip side down and pull through teeth to remove the soft, pulpy, and delicious portion of the leaf. Discard remaining petal.
    • Cut the artichoke heart into pieces and dip into the sauce to eat.

    Preparation & Cooking Instructions

    To start cut off the stem of the artichoke close to the base. Cut about a ¼-inch or so from the top of vegetable. Trim the tips off all the leaves on the artichoke. Brush with lemon juice if not cooking straight away.

    Pour the minimum amount of water in your Instant Pot, and insert the rack. Drizzle with olive oil, salt and pepper, and then top with minced garlic and butter if using.

    Cook on high pressure for 20 minutes, and follow with a quick release. If you vegetables are very large then increase the time to 30 minutes.

    Once cooked you will want to remove the hairy inside of the plant prior to serving. To do this just cut around stem and pull out all of the hairy stringy insides.

    Serve immediately with some garlic butter sauce, mayo, or lemon mayo! A delicious snack or appetizer along with Instant Pot Sweet Heat BBQ Meatballs, or Air Fryer Chick Peas.
