    Bone broth is good for you because it has potent amino acids that we severely lack in our typical Western diet. The jiggly texture of bone broth means that it is rich in gelatin which makes it good for your health and longevity.

    The jelly consistency tells you that it is rich in protein from gelatin. Beef bone broth in particular is also good for you because it tends to have more glycine and gut healing amino acids than chicken.

    How To Make Instant Pot Chicken Stock

    • If using a metal strainer insert and place it inside the instant pot. While this makes straining the broth so easy, it is completely unnecessary.
    • Place bones of leftover roasted chicken in Instant Pot or strainer.
    • Place scraps of carrots, celery, onions, or full vegetables in Instant Pot or strainer.
    • Season with salt and herbs.
    • Cover with water. Be careful NOT to overfill Instant Pot. You do not want to fill your instant pot more than two-thirds of the way full. It is okay if the bones and stock are not fully covered.
    • Place the lid on the pressure cooker and be sure the vent knob is pointed towards sealed.
    • Cook on High Pressure for 45 minutes for chicken stock and 120 minutes on high pressure for bone broth.
    • Once the cooking time has elapsed, allow the Instant Pot to release pressure naturally for AT LEAST 30 minutes, before releasing pressure manually. This is so important so your vent knob doesn’t spew stock all over your kitchen and you!
    • Strain the chicken stock using the strainer insert or a fine mesh strainer over a large bowl.
    • Cool before transferring to storage containers.
    • Once cooled, refrigerate until fully cooled.
    • If desired, skim off any fat with a spoon and discard.
    • Store in the fridge for 7 days or freeze for up to 3 months.

    Best Bones For Bone Broth

    • The best beef bones to use are knuckles, joints, feet, and marrow bones.
    • For added flavor incorporate meaty bones like oxtail, shank, and short ribs.
    • Chicken feet contain loads of gelatin and are less expensive than other gelatin-rich bones.
    • The bones of younger animals contain a lot of cartilage, as it is this cartilage that will eventually turn to bone as the animal ages. For this reason, veal bones are particularly prized for making stock.
    • If you cant get your hands on any marrow bones, 1-2 whole roasted chicken carcasses will also work. Keep in mind, however, that your broth will contain less collagen.

    What bones did I use in this recipe? For this Instant Pot Bone Broth recipe, I added a mix of collagen-rich beef bones as well as chicken feet. If youre unsure at all, ask your local butcher for the best broth bones and then request that he or she cut them in half.

    The Best INSTANT POT Beef Bone Broth Recipe

    Cooking in a pressure cooker is just my thang. You can make anything and everything so fast so that is where I went to make this. Yes you could do the same thing on the stovetop on medium high heat for a few hours but who wants to watch and make sure the contents dont boil over. This way you throw it all in, set the time and come back when done.

    Now for what you want to include inside. That is up to you. You can go for super simple with just onions and salt and pepper like we did here.

    • If you want to add more flavor and nutrition you can include large chunks of celery and/or carrots as well. I didnt have those on hand this go around, no big deal.

    As for seasonings use what you love. I add garlic to everything so in that went along with salt and pepper of course as well as some oregano and basil. When it is done you can taste and re-season if you want to add more flavor. The first time go light on them, taste, adjust, and make note of what you like best.

    The recipe card at the bottom is printable so you can make notes as you go. Then ongoing, take that out and season it exactly as you wish. That is what makes homemade everything so great.

    Are Beef Marrow Bones Good For Bone Broth

    Yes! They are high in collagen which is fabulous for your skin, hair and nails. It is also quite high in glucosamine which helps prevent joint pains and inflammation. I found these in the meat section and works better than just bones in my opinion. All you need is

    • Beef bones and/or marrow
    • Onions, carrots and celery are great to add in large chunks
    • Seasonings of course, garlic and salt and pepper work great
    • Love bay leaves? Add those too, strain them out later

    How To Make Good Bone Broth

    The most important thing when making bone broth is ensuring you get good-quality bones. Bones from pasture-raised animals who lived happy, healthy lives will be higher in nutrients and lower in potential toxins.

    If youre thinking that this sounds well and good, but you have no idea where you would actually find bones, dont worry, Ive got you covered. A few options:

    • At your local farmers market. Ask around at stalls that sell grass-fed/pasture-raised meats, many of them will sell bones.
    • From a local butcher.
    • Save the leftover bones when you roast a whole chicken.
    • Online. There are companies that will ship pasture-raised bones to you like Primal Pastures or Healthy Traditions. You can also do an online search for farms in your area that will deliver bones to you.

    If youre making chicken broth, its best to use a mixture of bones, including backs, necks, feet. This will make sure the broth is rich in healing nutrients like collagen, glucosamine, and hyaluronic acid.

    The amount of bones you need per batch honestly depends on the size of your pot. Between 1-3 pounds is usually good, but again, feel free to fit as many bones in your pot as you can, and save the rest in the freezer for the next batch.

    How To Make Beef Bone Broth In Instant Pot

    Prep:This step is totally optional and you can still have great beef bone broth without it. However, there is a benefit to it. Soak your beef bones in salted water for at least 30 minutes. If its overnight in the fridge thats even better. This will help extract all of the blood from the bones and once it is drawn out, you can discard the water.

    Step 1:Turn the pressure cooker on sauté mode. Add the oil, beef shank , and brown the meat on both sides for about 10 minutes. To be honest, browning the meat is also optional but I highly recommend it for additional flavor.

    Step 2: Next, add the cut onion, celery, carrots, bay leaves, and seasoning. Fill the pot with water until it reaches the max line. Cover with the lid and turn the steam release knob to sealing mode.

    Step 3: Press the Broth/Soup button and set it to cook for 60 minutes. Once the time is up, naturally release the pressure for 15 minutes .

    Step 4: After 15 minutes of natural release, move the valve to venting to release the remaining pressure.

    Step 5:Strain the broth into mason jars or freezer-friendly containers or bags. You can use it right away in recipes, or cozy up with a cup to sip on. Whatever you dont use, store for later on.

    How Do You Store Bone Broth

    Instant Pot Beef Bone Broth That Gels Every Time

    Bone broth is best stored in glass jars and airtight containers. You can safely refrigerate homemade bone broth for up to five days or freeze it for up to six months. If you’re planning to freeze it, you can also portion it into ziploc bags or pour into ice cube trays for easy use. This makes of efficient storage and convenient defrosting. Leave about an inch of headspace at the top of your stars to allow for expansion.

    Instant Pot Chicken Bone Broth Ingredients:

    • Bones from 3-4 lb chicken we like to use the leftover bones from our Instant Pot Whole Chicken recipe or leftover bones from a rotisserie chicken to make things easy.
    • Apple Cider Vinegar vinegar is a key ingredient as it pulls the nutrients from the bones into the broth.
    • Vegetables Carrots, Celery, Parsnip, Onion, and Garlic. We recommend adding vegetables as they add great flavor and nutrients, however, they are optional.
    • Fresh Herbs we like to use a mix of sage, rosemary, thyme, and/or parsley. Like vegetables, herbs are optional.
    • Seasoning salt, peppercorns, and a bay leaf

    Pro tip: we like to collect leftover bones and vegetable trimmings in separate bags in the freezer. Throughout the week, well throw in any leftover bones from our meals, plus any veggies or herbs that are starting to go downhill. Then, when were ready to make some bone broth, we have everything we need in the freezer!

    Can You Freeze Liquid Broth

    Yes. If you arent going to use all of this in the next few days then you will want to store it for up to 3 months in the freezer instead. You can either pour it into an ice cube tray if you only want to use small amounts at a time later. If using more use pint size freezer bags instead.

    Either way make sure the liquid is completely cooled and you have removed the layer of fat on the top first. If not it is more likely that it may grow bacteria. If you love batch cooking you could double this if you have a 10 quart pot. Mine is only 6 quarts so it barely fits what is listed below.

    What Are The Best Bones For Pressure Cooker Bone Broth

    Sourcing quality bones for pressure cooker bone broth is no easy task. Especially when there are brands like mine buying up all the Organic bones.

    Beef bones should be grass fed and pasture raised. I also recommend Organic because it provides 3rd party validation you cant get with grass fed / pasture raised claims.

    Certified organic beef will be pasture raised and grass fed for 95% of their life. Go here for specific types of bones to use.

    Grass finished is really the gold standard. But there is no certification for it, so you must be confident your source can back up their claims.

    You can use leftover rotisserie chicken bones, but they don’t work as well as feet, wings, necks or drumsticks. Look for Non-GMO and chickens that have access to pasture.

    Why not free range/run birds that frolic around all day?

    Because this does not exist in reality. Ive visited a ton of chicken farms to vet our suppliers and I continue to learn a lot about the chicken industry.

    If given the choice, chickens choose to be warm and undercover indoors in a barn vs. outdoors where there is poor weather and risk of predators.

    Storing And Freezing Beef Bone Broth

    Quick Instant Pot Chicken Bone Broth

    If youre storing your beef bone broth in the fridge, leaving the fat layer intact until youre ready to use it is a good way to reduce spoilage. The fat layer limits oxygen, meaning that the broth will have a bit longer of a shelf life versus if you skim the fat and then continue to store the broth.

    Broth with the fat removed can store in the fridge from 3-5 days, while broth with the fat in place often stores for 1 week or longer.

    How To Make Gelatinous Bone Broth

    Simply run the 120-minute cycle a second time on low-pressure this time to produce a gelatinous bone broth. A gelatinous broth is a good indicator that its is rich in nourishing collagen. Note: the bone broth has to be cooled for it to gelatinize. Once its reheated it will return to a liquid consistency.

    How Do You Freeze Bone Broth

    I like to freeze my Instant Pot bone broth in these silicone ice cube molds for easy use in recipes. Once the cubes are frozen, I package them up into a large ziploc bag.

    Each cube is about 1/3 cup of broth. If I need to thaw some bone broth quickly, its easy to just pop a few of these cubes into a small saucepan or into a microwave to thaw them quickly.

    Its much faster than thawing an entire mason jar of bone broth.

    Bone broth has been touted as being better than Botox because its full of goodies like collagen and gelatin. Theyll help plump your skin, coat your digestive tract and cushion your joints.

    However, bone broth may have some potentially harmful effects.

    LEAD is the serious concern in bone broth. Lead and other metals build up in bones and its just true to human bones. Even animal bones store heavy metals, particularly lead.

    When bones are boiled for longer time, lead is released from bones into the bone broth. Even if you use organic chicken or beef or turkey, there organic bone broth would also have lead in it.

    And researches show that lead is serious concern and can be serious harmful to humans. When human body is exposed to lead, there may be adverse effects on almost all organs in the body.

    Lead builds up body fat and causes irresponsibility to neurons. Its dangerous for kids, especially with risk of behavioral problems like hyper activity, or impaired growth, hearing problems, lower IQ, anemia.

    There is no research for safe level of lead exposure. So we cant really tell you how much of lead intake is safe for you.

    That means you may want to restrict the amount of consumption of bone broth instant pot.
