Just like you would cook any other bean. Nothing special about fava beans that I can think or know of.

Blast em 4:1 water to beans for however long it takes til they get soft. Since fava beans are pretty chunky I’d do like 35 min and natural release. My pressure cooker is old and off brand so I’d probably do like 45 min. If I had foresight I’d soak them and then only have to cook them for like 20 min in the cooker.

Depending on what you want your Instant Pot Beans for you may or may not want to flavor them.

If you want your beans for a salad which will have a salad dressing its probably best to simply cook them in filtered water and nothing else. Drain the water and use the unflavored beans for your salad.

For Instant Pot Beans and Rice or for soup youll probably want to flavor while cooking. There is a couple simple rules to follow. Add onion, garlic, spices before or during cooking but salt after cooking. Salt can keep beans from softening up so you want to avoid adding while they are cooking but rather once theyre already soft.

What I love to do is to prepare a sofrita first. You hit the sautée button first and while the pot heats you peel and finely chop onion and garlic. Once hot, add a splash of oil, the chopped onion and garlic and sauté until nice and brown. Then add beans and water and cook as instructed in the recipe card below.

How To Prepare Bissara

The first thing to know is that you can make Bissara with either dried fava beans or dried split peas or a combination of both. You dont have to soak your beans, but they will cook faster if you do.

I personally dont soak them.

If you want to cook them faster, you can do so by using an Instant pot or any other kind of pressure cooker you like.

That said, there are 2 main steps to this recipe:

1. Bring to a boil your peas/beans in a large pot of water. Add your garlic cloves, olive oil, salt, turmeric and cumin. Lower the heat and cook until your beans get very soft. This should take about 30 to 35 minutes.

2. Let your soup cool down, and blend it. You can use an immersion blender or a regular one. If you find that your soup is too thick then add a little more water to it, if not, enjoy as is.

As far as garnish goes, I like to garnish my soup with some flaky salt, hot cayenne, cumin and a drizzle of olive oil. And of course some crispy bread.
