  • Now add the kale, turmeric powder, and half the salt.
  • Sprinkle some water and mix well.
  • Now change the Instant Pot mode to Manual / Pressure Cook mode and set the cooking time for 1 minute.;
  • Once the steaming is done and as soon as the IP beeps, quickly and carefully release the pressure.
  • Once the pressure is all gone, open the lid and set it to saute mode again.
  • Now add the remaining salt and red chili powder and mix well.
  • Let it cook in saute mode for 2 to 3 minutes, and thats it.

The beauty of the Instant Pot is that you can do pressure cooking without any of the stress involved in a stove top pressure cooker. You simply set it and go, either releasing the pressure after the designated cooking time or letting the cooker release the pressure naturally. It really could not be easier.

Of course, you do not need fancy kitchen equipment to steam greens. Just put a bunch of greens in a pot with some water, cover, cook to desired tenderness and go. But I dont know if I could do that every single day. The Instant Pot makes this greens in the morning thing just about the easiest thing you could ever make for breakfast, outside of eating some processed garbage.

Plus, you can put the stems in the Instant Pot along with the leaves and they cook until tender. No more ripping leaves off of stems. I was never able to do that simply by steaming my greens on a stovetop. The stems were always woody and chewy. With the Instant Pot, they are tender and delicious!

Add 1/2 cup water.

Put the lid on and lock it.

Plug in the Instant Pot.

Set the thingie on the top of the lid to sealing .

Press the manual button.

Using the – button, lower the cooking time at pressure to 4 minutes.

In a few seconds, the until will beep, letting you know that its starting.

Remove the lid.

Onto the greens, pour about 2 tsp of your favorite vinegar. There are amazing flavored vinegars out there these daystry some!

  • In a 3 qt soup pot on medium-high heat, heat OLIVE OIL until it shimmers .
  • Add ONIONS, CARROTS, CELERY, and GARLIC; sauté a few minutes until slightly tender, stirring as needed.
  • Stir in TOMATOES, VEGETABLE STOCK, BEANS, SALT, ITALIAN SEASONING, and CRUSHED RED PEPPER.
  • Bring the bean soup just to a boil; then lower heat and simmer 10 minutes, stirring as needed.
  • Add KALE to the pot and continue simmering until kale is wilted.Note: you can add kale during the simmering process of the previous step if you prefer.

    Start by preparing the kale. Trim off the woody stems and roughly chop the leaves.

    Rinse the kale and set it aside.

    Next, add olive oil to your Instant Pot basin and press the sauté button.

    Add a sliced onion, salt, garlic powder, and red chili flakes, and cook until the onions are tender.

    Press cancel to end the sauté feature.

    Next, press the slow cook button until the temperature display reads less. Set the timer for three hours.

    Add the kale and broth, and cover the pot with a glass lid.

    Resist the urge to open the lid while the kale cooks.

    When the kale is cooked down and tender, its ready!

    You can eat it immediately, store it in the fridge for a few days, or freeze it in batches for later.

    To store: Store remaining kale soup in an airtight container in the refrigerator up to 5 days. I recommend glass meal prep containers because I find the locking lid to maintain freshness better than any plastic containers or zip-top storage bags.

    To freeze: First, cool the soup to room temperature before freezing and transfer it into freezer-safe containers or zip-top freezer storage bags. If you use the zip-top bags, lay them flat in the freezer so they take less freezer space. Frozen soups in these bags keep well for about 6 weeks. After that, it will begin to lose flavor and may develop freezer burn.

    To reheat:;White Bean and Kale Soup can easily be reheated in on the stove over medium-high heat for about 5 minutes, or in a microwave in short intervals on medium-high power. Either way, do not overheat as the vegetables may become mushy.

    You can use any color quinoa but make sure you buy fair-trade sourced brands. Rinse the quinoa under cold water and allow to sit in a sieve for a few minutes while you prepare the kale.

    The kale works well in this recipe because it needs a similar cooking time to quinoa. You can use regular kale, Lacinato kale , Swiss chard or other chard, or collard greens. If you dont have any hardy leafy greens on hand, feel free to add a few florets of broccoli or halved Brussels sprouts.;

    Our other cooking ingredients include onions and carrots, which we will saute for a couple of minutes to release the sweetness; plus, a handful of chopped raisins, garlic, lemon zest, cumin powder and vegetable stock cube . These will flavour our cooking broth and consequently the quinoa.

    Time To Make Instant Pot Braised Kale And Carrots

    Serves 2

    • 10 ounces of kale, roughly chopped
    • 1 tablespoon of ghee or fat of choice
    • 1 medium onion, thinly sliced
    • 3 medium carrots, cut into ½ slices
    • 5 cloves of garlic, peeled and roughly chopped
    • ½ cup chicken broth
    • Kosher salt
    • ¼ teaspoon red pepper flakes

    Method:

    I love buying organic produce at the farmers market but when I need a quick veggie side, I just grab a bag of washed and chopped kale from Trader Joes.

    Once you cut open the bag, youre ready to go. Theres no tedious washing, spinning, or removing ribs.

    Get your 6-qt or larger pressure cooker and melt the ghee over medium heat.

    Toss in the chopped carrots and onions

    and saute until softened.

    Throw in the garlic and stir until fragrant . Pile in the kale, pour in the chicken broth

    and sprinkle on salt and pepper to taste. Make sure you still have at least 1/3 of the head space at the top of the pot or it just might go kablooey.

    If youre using a stovetop pressure cooker, increase the heat to high, lock the lid in place, and wait until the cooker reaches high pressure. Once high pressure is achieved, decrease the heat to low and maintain high pressure for 5 minutes. At the end of the cooking time, take the pot off the heat.

    You can let the pressure drop naturally or if youre impatient like me, activate the quick release valve and the steam will hiss right out.

    Ladle it up and dig in.

    If youre not familiar with pilaf , you might find it quite similar to dishes like risotto , biryani rice or Mexican rice.   • Onion, garlic, carrot and celery.;These veggies add flavour to the soup. If youre missing carrot or celery, no big deal. You can use either or, if needed. Onion and garlic are a must!
  • Herbs.;Youll need dried parsley, thyme and oregano to add the perfect savory flavor.
  • Yukon gold or red potatoes.;Different varieties of potatoes have different starch contents and will react different when cooked in soups. I recommend using red, Yukon gold or white potatoes.

    This recipe is for a 16 ounce bag of pre-washed raw kale. Some bags are 10 ounces, so make sure you know what size youre dealing with. The recipe should work either way.

    Heres how to make this recipe on the stovetop:

  • Add the carrot, onion, garlic and onion to a soup pot with about 2-3 tbsp water or broth. Saute over medium heat for 6-7 minutes.
