Spaghetti squash is is a winter squash and is closely related to acorn and butternut squash. Typically harvested in the late summer and fall, but can usually be found year-round in the grocery store. Spaghetti squash is easily grown in most backyard gardens and takes about 100 days to harvest. This is a great article on how to grow your own spaghetti squash.

Recipe Tips & Substitutions

  • Pick a small to medium-sized spaghetti squash to make sure it will fit inside your pressure cooker pot. Ideally your squash will be less than 8-inches in length to fit inside a 6-quart Instant Pot.
  • Serve immediately or store the cooked squash in an airtight container in the refrigerator for up to 4 days.
  • For smaller squashes, cut the cook time down to just 12-15 minutes. A medium whole spaghetti squash weighing around two pounds requires about 18 minutes.

Tips For Cooking Perfect Spaghetti Squash:

6 Minute Instant Pot Spaghetti Squash
  • If youre planning to make stuffed spaghetti squash like these taco boats, cut your squash in half lengthwise. For longer noodles cut your squash width wise.
  • Spaghetti squash is easier to cut once its cooked, but the seeds are easier to scoop out before its cooked.
  • Spaghetti squash is super versatile. Its great as a filler for stuffed peppers, a base for protein, or keep it simple and serve al dente with olive oil, salt, and pepper.
  • If youre only cooking 1/2 of a squash, reduce your cooking time to 3 minutes per pound. This is a rule for any electric pressure cooker. If you chose to cut your squash but want to cook it all, place the squash halves on the trivet, cut side up, and still cook for 6 minutes per pound.
  • If youre filling your squash, you might want to bake the spaghetti squash in a baking dish for a few minutes to brown the top before serving.

Why We Should Love Spaghetti Squash

  • It is sooooo versatile! Make it sweet, savory, spicy, whatever! It will work. It’s a blank, mildly flavored canvas just waiting for you to create your masterpiece
  • It’s full of fiber, low in carbs, high in nutrients and protein, and if we’re gonna compare it to pasta, it contains about 30 calories for one cup compared to most pasta that is easily over 100 calories
  • It stores for a long time. If it’s fresh, you’ll be able to store it in a cool, dry place for up to 3 months. However, when I talked to a guy at the Farmers Market, he says they last him until spring. I’m not gonna say this is right, just passin’ along his recommendations and I will test his theory this winter

Instant Pot Spaghetti Squash

You can cook spaghetti squash in the Instant Pot in just 7 minutes, plus the time it takes to come to pressure .

I feel like the Instant Pot isnt always a time-saver, but in this case, it totally is. It normally takes me 45-60 minutes to bake a spaghetti squash in the oven!

Now, Im sure you could probably bake the spaghetti squash whole if you wanted to, but I much prefer to slice it in half first, so that it cooks faster and so I can scrape the seeds out easily. When you try to scoop the seeds out AFTER the squash is cooked, I feel like you lose too much of the good, cooked squash in the process.

Does Instant Pot Spaghetti Squash Taste Like Pasta

Um, no. Lets not fool ourselves. As delicious and nourishing as veggie noodles are, they do not taste like real pasta.

Actually, spaghetti squash has a slight sweet and nutty taste. Although this isnt necessarily a bad thing. In fact, its a very good thing!

Why? Because the mellow flavor of the noodles takes on the flavor of whatever sauce you serve with them.

ALSO, making spaghetti squash in an Instant Pot cooks it to al dente. That is the preferred way to enjoy spaghetti/pasta, am I right? Just a little bit of a bite rather one big soggy pile of squash.

What To Serve With Spaghetti Squash

Cooked spaghetti squash can be shredded with a fork and flavoured with a little salt and pepper. Thats as simple as it gets and can be used as a side dish with pretty much anything. You can also drizzle it with a little oil or melt some butter into it. The fats will help your body to absorb all those fat-soluble vitamins in the squash. I like it with a little grated Parmesan on top.

As a base, the squash is super versatile. It can be used instead of spaghetti or noodles with your favourite sauce on top. Try our Instant Pot Bolognese Sauce or this amazing Vegan Moroccan Chickpea Stew.

You can incorporate it into casseroles, like this low-carb, cheesy number, this meat sauce based one, or this vegan casserole.

Another idea is to stuff the cooked spaghetti squash halves with a filling such as cooked quinoa, taco meat, shredded chicken or stir-fried tofu.
