Instant Pot Roast Beef
These cooking instructions apply to chuck roast, rump roast, tri-tip, brisket, and pot roast. The most important thing to consider is that a successful and delicious beef roast is based entirely on minutes per pound of meat being used, so having an accurate measure of the size of your roast is important.

These cuts are also notoriously tough and take a long time to cook. With the Instant Pot, you can cut back on cooking time significantly with tender, juicy results every time. You get that slow-cooked or braised flavour without the wait.
For these recipes, use enough liquid for the pot to come to pressure and to avoid a burn notice . You can also use broth to cook instead.

You’re Slow Cooking On Low
The miraculous Instant Pot also moonlights as a slow cooker, but you won’t get very far if you’re using the “low” setting for your beef stew. Because “low” is more comparable to the “keep warm” function on your slow cooker, you can imagine that your meat will still be about as raw as when it went in, even after hours of cook time. Use the “normal” setting for a true slow cooker “low,” and the “more” setting for “high.” Or scrap the raw beef stew and opt for plan B: steak tartare.

Can I Use Instant Pot Without Lid
You always leave the lid on Not every mode on your Instant Pot needs the lid secured for proper cooking. For example, its perfectly OK to saute or heat up foods with the lid off. In fact, sauteing mode wont brown and crisp your food with the lid trapping in steam.
Manual Pressure Cook With Quick Release Or Npr
Many Instant Pot users almost always use manual settings. While Smart Program buttons are handy, cooking instructions can vary for different types of rice, smaller or larger beans, and soup with or without meat. With manual settings, you have more control over the time and pressure level. Here is how to use the Instant Pot with manual pressure cooker settings.
Step 1. Star the Instant Pot as mentioned above.
Step 2. Add food, seasoning and liquid to the pot. The liquid can be cold or hot hotter liquids take less time to heat up so the Instant Pot comes to pressure quicker. Stir if needed.
Note on stirring: If adding tomato sauce or paste, keep them on the top and dont stir too much as these foods can sometimes thicken and burn during cooking again, this depends if water and stock are also added as when diluted, its less of a problem.
Step 3. Get your lid and quickly check that the sealing ring on the inside is in place. If its loose or sticks out, the pot might not seal properly and it will not be able to come to pressure. Place it on top and twist it until it locks in place.
Step 4. On older models like Duo Classic, check that the steam release handle on top of the lid is pointing to Sealing. On the more advanced models of the Instant Pot, the vent will automatically seal when the cooking process begins. On the Duo Nova the quick release button should be popped up and not pressed down.

Remembering To Thaw My Meat
I cannot describe how many times I have waltzed into the kitchen at 4:00pm only to realize that my meat was rock solid and still in the freezer.

Taking The Plunge
So I ordered the Instant Pot and promptly let it sit unopened in the box.
For a month.

So my friend Tricia stopped by my house and totally blew my mind. She taught me how to cook frozen ground beef in my Instant Pot. And my life has never been the same.

Option : Saute The Meat
Using the saute function on the Instant Pot, is nearly the same as browning the meat on the stove.
- Hit the saute function on the Instant Pot and then hit Adjust to change the heat to normal heat.
- Let the Instant Pot heat for 2-3 minutes. Some models display Hot once heated, some do not, but after a few minutes of time, you can begin to saute the meat.
- Add in a couple of teaspoons of oil and let the oil heat for 1 minute.
- Add the ground meat, and allow to cook, breaking the meat up into small pieces as it browns.
- Once the ground beef is cooked thoroughly, this takes about 6-7 minutes, turn the Instant Pot OFF.
- Drain off any excess grease and then use as desired. This works great for recipes like Instant Pot Beef Stroganoff, Instant Pot Chili, or Instant Pot Hamburger Helper.
A note to this method–it seems silly to get out your pressure cooker if you are just sauteing your meat , but if you are using it to start another recipe you will finish in your Instant Pot, it is a great method to use!)
Why Does Browning Cause Stickiness
Meat sticking during the browning process is not limited to Instant Pots. Skillets, pans, etc. all present the same challenges if certain techniques arent used.
For all scientific questions regarding food I go to Harold McGee who is author of the two books On Food and Cooking: The Science and Lore of the Kitchen and Keys to Good Cooking: A Guide to Making the Best of Foods and Recipes. Im a self-taught cook, so I study and reference these books frequently to master different cooking techniques.
In the latter book, McGee explains that high heat causes proteins to form bonds with the surface of the pan its being cooked on. The more protein-rich the food, the greater the stickiness factor. This factor is multiplied for more delicate proteins like eggs and fish. Think about scrambling eggs as a reference.
The simple obvious solution is to create a buffer between the pan and the protein, which is why oils and butter become so important. But if it were all that simple Fat/oils dont always do the trick alone, technique matters too!

Do You Cover Meat With Liquid In Pressure Cooker
When you use a pressure cooker, you need to have enough liquid in the pot for it to come up to pressure and cook the food properly. The rule of liquids in pressure cooking is to always add at least 1 cup of liquid unless the recipe states otherwise. The liquid will help create enough steam to cook the meal.
