How I Perfected Instant Pot Bread

Of course the texture was all wrong: the Instant Pot traps moisture, whereas a;12 to 18 hour rise at room temperature would have allowed the;moisture to evaporate. After seven;more tests,;I was;finally happy with the results. I modified the original recipe quite a bit for it to work in the Instant Pot. For instance, I increased the yeast to account for the shorter proofing time and I threw in some sugar to help the yeast produce carbon dioxide more quickly. I also reduced the amount of water and increased the flour so the dough would be less hydrated.

Everything I;love about no-knead bread is still here: a short ingredient list, no elbow grease and a;delicious crust.;But now you;can make it in a fraction of the time, thanks to the Instant Pot. Line and grease a 6-8 cake pan that can fit easily inside your instant pot.

Place the trivet in your IP and add 1 cup water.

Put your flour in a large bowl.

In a small bowl, combine the water, yeast and salt.

Let the yeast proof for about 3 minutes.

Add the liquid mixture into the flour.

This is a no-knead recipe, so just mix the dough by hand until no dry patches appear.

Fold the dough out into the prepared cake pan

Place the cake pan in the IP and place the lid on top .

Select the keep warm setting and let the dough rise for 2 hours.

After the dough has doubled, you can refrigerate or continue baking.

To remove the bread from the pan, I use a sturdy glass jar or cup. Put the pan on top of the jar, and then push the cake plate up to remove it from the rimmed pan.

From here you can slide the bread out onto a platter or slice and serve directly from the plate. Your choice!

Tips And Tricks For Making Instant Pot Bread

  • Always ensure to weigh each ingredient correctly to ensure perfect results.
  • Combine the flour with water gently to mix it well.
  • The flour absorbs the liquid while resting.
  • When you reshape the bread, let it rest for about half an hour.
  • Cook the dough until the spots are dark. This lets you know when your bread is perfectly cooked.
  • Place the bread on a baking rack after removing it from the oven. This gives it time to cool as desired without absorbing moisture, unlike if you were to put it on a plate.
  • Only cut into the bread after it has cooled. It will need time to rest.

  • Check the expiration of Active dry yeast.
  • Check the water temperature before adding the yeast. Perfect water temperature is 110 to 115.

How can you check the perfect temperature?

The answer to the question is to use a candy thermometer or Finger test. Insert a clean finger in the water count 1 to 30. You should be able to leave your finger in the water.

  • Use fresh rosemary.
  • I like the deeper olive oil flavor so I have used Extra virgin Olive Oil in the bread.
  • Flour-water ratio Depending on how you measure the flour, quality of flour and how dry the weather is, you may need to add/less water to bring the dough the right wet and sticky consistency. If your dough is dry after you mix it, add water by the tablespoon until it feels perfect.;
  • Make a wet shaggy dough.
  • Give the dough a proper warm temperature to rise
  • Shape the dough on parchment paper into a tight ball. I forgot to use the parchment paper. Shaping the dough into a round tight loaf on a parchment paper makes it easier to add and take out the bread from the Dutch Oven.
  • Slashing the dough I do prefer to make a cut in the dough. Use a sharp knife and gentle pressure. .
  • Bake No-Knead Bread in a Dutch oven. Dutch Ovens holds heat well and keep the steam created by the bread inside the pot for a crisper crust and texture.
  • Adjust the Oven temperature Depending on your oven, you may need to adjust the temperature. I bake my no-knead bread @450 degree F.

Things To Remember About Using The Instant Pot For Bread Proofing

Firstly, you need to have an Instant Pot yogurt setting to do this. If your pressure cooker doesnt have a yogurt setting, unfortunately youre out of luck. So keep an eye on Amazon and sales and try to get one cheap because its probably the most used feature on my own Instant Pot.

Also, not every bread recipe wants you to proof the exact same way. For example I have several bread recipes on my website and some ask for a single proofing where others ask for several. So keep that in mind and make sure that you take a good look at the bread recipes youll be following to make sure that you have a good understanding of whats being asked and how you can manage this method with that recipe.

Finally, we thought wed share a recipe especially for those of you with a sweet tooth. Banana bread is a simple and delicious dessert bread that uses the Instant Pot to give it a moist and delicious texture.

No need to transfer pots here because this is a one instrument job but you will need a bundt pan to bake the bread in. This bread recipe calls for walnuts but you can easily substitute in pecans, raisins, dates, even chocolate chips, and anything else you think would pair well with banana bread.

Just like a frozen loaf of freshly baked bread, you can thaw bread dough out in your refrigerator overnight.

Unwrap it from the plastic and foil, then place it in a plastic bag. Thaw it out overnight.

Before baking, place it back in your Instant Pot on the Yogurt setting for 10 minutes to allow it to rise again. This will proof the bread.

    Making bread in the Instant Pot is different than baking it in the oven, primarily due to the fact that the Instant Pot is a moist environment and the oven is a dry environment. This does affect the consistency just a bit, particularly the outside crust.

    I use foil to cover the bread during cooking, so that condensation doesnt drip onto the top.

    If you prefer to bake your bread in the oven, you can always use the Instant Pot to rise the dough, then transfer it to the oven for baking.

    While testing this recipe, I accidentally added extra milk;to the batter. The cornbread;with the extra milk;came out lighter and fluffier than the cornbread I prepared following the package directions.
