How To Peel Eggs
One of the major quandaries when troubleshooting this recipe was how to easily peel a hard-boiled egg once its cooked.
3 Tips for Easy-to-Peel Hard-Boiled Eggs:
- Ice Bath:; An ice bathimmediately after you finish cooking the eggs is crucial and ice them for at least 5 minutes!; The longer you ice them the easier they are to peel.
- Rolling it Out:; Hitting the rounded bottom of the egg and then vigorously rolling the egg resulted in an egg that was easier to peel.
- Running under Cold Water:; If your eggs are still being a bit tricky, run them under cold water while peeling.; Make sure the water runs between the egg white and the membrane so it helps to separate the two.
Some say old eggs are easier to peel.; If you happen to have some week or two-week-old eggs, go ahead and use those up.
If you dont, no problem!; In my dozens of egg trials, I did not see a huge difference.

Do I Need To Make Any Adjustments At Altitude
I see a lot of debate on what the best method is; it seems to be between the 5-5-5, 6-6-6 and 7-7-7 methods .
I live at a higher altitude in Colorado, and I have found that the 6-6-6 method works the best here. Ive played around with the timing, and I really think that is the best method.
You may have to play around with it a little bit if you live elsewhere.
Why Use An Ice Bath
The ice bath will cool the eggs immediately so they wont keep cooking in the residual heat. Plus, the eggs will be shocked, which makes them very easy to peel.
What if you dont have ice? No problem at all! Simply run the eggs under cold tap water for 1 to 2 minutes, until they are cooled enough to peel. The eggs might be slightly easier to peel using the ice bath method, but the tap water method is a lazy one that I use all the time.

What Is An Ice Bath
An ice bath is exactly as it sounds. Its a bowl of cold water that also contains a good amount of ice. Its used in cooking to help stop the cooking process for items such as boiled eggs. It allows foods to come down in temperature quickly and safely.

- Age matters old eggs are easier to peel. Select eggs that are a week or more old for hard-boiling.
- To peel hard-boiled eggs, try this trick from the American Egg Board: First, drain hard-boiled eggs under cold, running water to help the shell ease off. Next, gently tap the large end of the egg onto a hard surface until the shell is slightly cracked. Peel the egg, starting from the cracked end.;;
- A green ring around the yolk means your egg was cooked too long or at too high of a temperature. This is harmless, but can be prevented by setting your Instant Pot pressure to “low” before increasing to “high” and reducing the cooking time by one minute.;

Why The Pressure Cooker Works
I’ve actually been sitting on this revelation for a few months now, just because I didn’t trust the evidence I saw with my own eyes: Two eggs or a dozen, fresh eggs or weeks old, white eggs or brown eggs, it didn’t matter. The shells slipped easily off each time, leaving a smooth and pristine hard boiled egg.
There are a few theories for why this is. Some say that, similar to steaming eggs, the pressure cooker forces steam inside the egg’s shell during cooking, causing it to separate from the egg white. Alton Brown’s theory is that it’s more about the rapid temperature change inside the sealed pot.
Whatever the reason, it works! Making hard-cooked eggs in the pressure cooker is the only method I’ve found that has worked for me every single time.

It simply means you cook the eggin your electric pressure cooker on high pressure for 5 minutes
Do natural pressure release for 5 minutes then
Give it a cold-water bath foranother 5 minutes. I do not often wait around for the whole of 5 minutes as Ifind any time from 2 minutes good enough. Also, I dont use Iced water bath, Ijust use cold water from the tap or simply run the boiled eggs under cold waterif I am using just one or 2.
Note that 5 5 5 method would notwork for soft boiled eggs. You only need to pressure cook for 3 minutes
