This Potato Salad recipe will work in any brand of electric pressure cooker, including the Instant Pot, Ninja Foodi, or Power Pressure Cooker XL.

My favorite part about this pressure cooker potato salad is that you can cook the potatoes and hard boil the eggs at the same time!

Place the peeled and diced potatoes in a steamer basket in the pressure cooking pot, then gently nestle the eggs on top.

Cook for 4 minutes on high pressure, use a quick release, then remove the lid for perfectly hard-boiled eggs and tender potatoes.

While the potatoes are cooking, make the potato salad dressing. I like to mix up the dressing ingredients right in the bowl Ill serve or store my potato salad in. Add the cooled potatoes and eggs, mix everything together, and theres no need to dirty another dish.

Take the eggs to an ice water bath to cool and allow the potatoes to cool.

    Yukon Gold Potatoes Russet Potatoes And Red Potatoes

    There are thousands of varieties of potatoes and Im sure this method will work with any type. I often cook with three varieties of potatoes: Yukon gold, red, and russet. Ive tested this recipe with these three varieties. For Indian cooking, I typically use gold or red potatoes.

    Yukon Gold Potatoes: Yukon gold potatoes are a good all-purpose potato. They are a bit waxy and also a bit starchy . They are thin-skinned, creamy, and have a slight sweetness to them.

    • When to use: Great all-purpose potato that you can use in nearly any recipe. They are great for mashing, roasting, baking, frying.

    Red Potatoes: these waxy potatoes are typically smaller than other varieties, though they can vary in size as well. Like gold potatoes, they are also thin-skinned.

    • When to use: Great all-purpose potato. These potatoes hold their shape well which is good when you dont want the flesh to fall apart in a recipe, for example when making potato salad, hash browns, scalloped potatoes, or when adding to a soup/stew.
    • When not to use: dont suggest using this variety when making mashed potatoes as they can be a bit gluey.

    Russet Potatoes: Russets, also known as baking potatoes, are starchy and a bit drier than red or gold potatoes. They are thicker-skinned than red and gold potatoes and so if Im using them in a recipe, Ill usually peel the skin.

    For Whole Butternut Squash:

    • Peel the butternut squash if desired. Slice the butternut squash in half or quarters either way horizontally or vertically and remove the seeds.
    • OR leave the butternut squash whole. You can skip the first step and make it seriously easy if you can fit the entire squash in the pot. It will be more difficult to scoop out the seeds cleanly, and this is not my preferred method personally.
    • Place the halves into the trivet or directly into the put with one cup of water.
    • Cook on high pressure for around 12 minutes and follow up with a natural pressure release for 5 minutes before performing a quick release.

    Firstly wash and clean the potatoes with water. Add water into the instant pot insert. Place the trivet and then arrange the potatoes. I have used extra-large Russet Potatoes here.

    Furthermore, close the lid on the pot, and turn pressure valve to the SEALING position. Set the pot to MANUAL/PRESSURE COOK and timer to

    3 minutes for diced potatoes ,1 inch OR

    5 minutes for small/baby potatoes OR

    6 minutes for medium potatoes OR

    10 minutes for large potatoes OR

    12 minutes for extra-large potatoes

    Once the instant pot beeps, Wait for the pressure to release naturally and thenopen the lid. Check the doneness of potatoes by inserting a knife or fork in the center.

    Peel the skin and use it right away or store it without peeling in the refrigerator for later use.

    Note: These times mentioned will result in perfectly cooked/boiled potatoes, if you want the potatoes more soft and mushy consistency then add 2 more minutes of pressure cooking.

    How Long Does It Take To Boil Potatoes

    The traditional over the stove method can take up to 30 minutes, depending on the potato size and if they are cooked whole. With the Instant pot, the cooking time is cut by half and even more. Here is the cooking time for different types and sizes:

    • baby potatoes, that are around 1-inch long will take 5 minutes with a quick release or natural release
    • medium potatoes that are around 2.5-inches require 1-2 minutes with a quick release or natural release
    • large potatoes that are 4- 5 1/2-inches long require 10 to 12 minutes of cooking with quick or natural pressure release
