This comforting soup is all you need to warm up on chilly nights. And because its so versatile, you can make it over and over and it might taste unique each time . Its similar to my Easy Minestrone Soup recipe, but minus the pasta although this recipe also tastes good with pasta added if you want to give it a little more oomph! Just cook it separately and add right before eating.

And, because its made in an Instant Pot , its quicker than a typical soup.

Season & Serve Instant Pot Vegetable Soup

Stir occasionally and break down some of the potato cubes to thicken the vegetable soup.

Finally, taste the vegetable soup and adjust the seasoning with more salt.

*Note: Our tomatoes were really sour, so we added ½ tsp sugar to balance our vegetable soup.

*For Reference: We used 3 4 pinches of salt to properly season the Instant Pot Vegetable Soup.
