Tell me guys Do you have an Instant Pot yet? Im hoping you do, because Ive got a lot of Instant Pot recipes lined up for your over the next few weeks. Mainly, its because Im using it like all the time. So much so that Im thinking about buying a second one
So, Im going to try not to overwhelm you with Instant Pot recipes Ill limit it to one recipe a week, with regular recipes too, but Im telling you If you dont have one yet You really should get one!
The Instant Pot doesnt always meant that dinner happens in an instant Some recipes can take just as long as the regular version when it comes down to it. It takes time for the pressure to build in the Instant Pot, so cooking time needs to also take into account the time for that pressure to build before the actual timer begins.
The more you have in the pot, the longer it takes for the pressure to build But in this case, these Instant Pot steamed artichokes are a total time saver.
Because theres only a cup of water in the pot, that pressure builds super quick. And while steamed artichokes can take up to 45 minutes on the stovetop, these Instant Pot steamed artichokes only take about 15 minutes, add another 5 minutes or so for that pressure to build So, 20 minutes!
How Long To Pressure Cook Artichokes
I found that medium sized artichokes turn out great when pressure cooked for 15 minutes. Smaller globes only take 10-12 minutes, but super-large ones take somewhere between 18 and 20 minutes.
You know an artichoke is done when it can be easily pierced with a knife, and the petals/leaves can be easily removed.
Preparation & Cooking Instructions
To start cut off the stem of the artichoke close to the base. Cut about a ¼-inch or so from the top of vegetable. Trim the tips off all the leaves on the artichoke. Brush with lemon juice if not cooking straight away.
Pour the minimum amount of water in your Instant Pot, and insert the rack. Drizzle with olive oil, salt and pepper, and then top with minced garlic and butter if using.
Cook on high pressure for 20 minutes, and follow with a quick release. If you vegetables are very large then increase the time to 30 minutes.
Once cooked you will want to remove the hairy inside of the plant prior to serving. To do this just cut around stem and pull out all of the hairy stringy insides.
Serve immediately with some garlic butter sauce, mayo, or lemon mayo! A delicious snack or appetizer along with Instant Pot Sweet Heat BBQ Meatballs, or Air Fryer Chick Peas.

Why Do You Soak The Artichokes In Lemon Water
When the leaves are cut the flesh is exposed to oxygen, the natural enzymes in the vegetable create a browning reaction. To reduce this color change, combine water and lemon juice to create an acidulated bath for the artichokes. The acid-like environment halts the enzyme activity, leaving the leaves nice and green.
Prep Instant Pot Artichokes
Before you do anything else, add a cup of water into your Instant Pot. Then, add the trivet or a steamer basket. I like to use my 6 quart instant pot just because theyre so big.
Next, weigh your artichokes so that youll know how long to cook them later on. Try to buy artichokes that are all the same size!
If youre using a 3 quart Instant Pot to make your artichokes, youll be able to fit 1-2 artichokes. Wash your artichokes carefully under cool running water. Then, trim off the pointy barbs on the leavesthey can really hurt!
With a sharp knife, cut the top 1/4-1/3 off the top, as well as the bottom 1/2 inch of the stem.
Trimming is not completely necessary, but the leaves can be quite sharp and swear-word inducing if youre not prepared for its poke.

How To Serve & Eat Steamed Artichokes
I serve the artichoke leaves with melted butter or mayonnaise to dip them in. If you like a little extra flavor, add some dried dill and a pinch of garlic powder to the melted butter.
To eat them, you gently grip the leaf about halfway up between your teeth and pull. The meat of the artichoke will slide off as you pull.
Dont chew on the leaves or try to bite through them. The meat on the inner side of the leaf is all that should be eaten. And it should come off easily if steamed properly.
Once youve pulled off all the leaves, you can eat the artichoke heart, which is the tender part at the base of the leaves.

How To Make Instant Pot Artichokes:
Pour 1/2 cup water in the bottom of InstantPot
Add the metal rack to elevate the artichokes
Place garlic clove in the water at the bottom of InstantPot
Wash and dry the artichokes
Add salt and pepper to artichokes to your taste
Set all four artichokes in Instant Pot
Place lid on Instant Pot and use the manual setting for 30-minutes
Note: We have had success at 30-minutes but time may vary depending on the size of artichokes.
When youre finished, why not give your Instant Pot a deep clean.

Before you cook artichokes in the Instant Pot, they need a little primping. Fun fact: the artichoke that we eat are actually the flower of the artichoke plant and not all of it is edible. The part that we all want to eat is the heart of the artichoke and it is located in the center of the flower/vegetable. So, by doing a little prep work is needed.

How Long To Cook Artichokes In Instant Pot
The cook time needed for tender artichokes depends on the size of the artichokes, and also possibly varies by the season the artichokes were harvested. Its possible that two artichokes of the same size may cook a little differently. The cook times in this recipe are my best estimates based on my recipe testing with different artichokes.
Use the pressure cook function of the Instant Pot:
- Pressure cook small artichokes for 15 minutes.
- Pressure cook medium artichokes for 20 minutes.
- Pressure cook large artichokes for 25 minutes.
When the cook time ends, use a quick release to release the pressure from the pot.
Cooked artichokes should be tender when you pierce the stem with a fork or knife.

To Cook Artichokes In The Instant Pot Or Pressure Cooker:
- Place the steamer rack in the bottom of the Instant Pot and place the artichokes on the rack, top side down, so the moisture doesnt collect in the bottom of the artichoke.
- Add sliced lemon and garlic cloves to the Instant Pot.
- Pour in 1 cup of water and place the lid on the Instant Pot. Set the vent to sealing.
- Set the Instant Pot to High Pressure and cook for 5-10 minutes depending on the size of the artichoke.
- When the artichokes are done cooking, manually release the pressure using the quick pressure release button.
Adjust Artichoke Cook Time In Instant Pot
Place the artichokes into your Instant Pot. For unstuffed artichokes, I didnt notice any difference between placing them cut side up or down.
Lock the lid, turn the knob to sealing, and cook on manual high pressure for 25-40 minutes.
Now.
A few words about cooking times.
Every stuffed artichoke recipe seems to have a different opinion for what cooking time is best. So, Ive tested and tweaked until I found my sweet spot: 45 minutes for a 1lb artichoke. That translates roughly to about 30 minutes for a .85lb artichoke.
Remember this: never undercook your artichokes!
UNDERCOOKING will be so much worse than overcooking in this instance, so add a couple minutes if youre worried. If you dont mind putting them back in the Instant Pot and cooking longer if they are undercooked, then do that. The key to steaming artichokes in an Instant Pot is to let them cook long enoughespecially for a large artichoke.
The first time, I cooked my .86 lb artichoke for 15 minutes. After a quick release, I cut it in half to test the doneness. It was still quite firm in the middle and the outer leaves had a little resistance. I placed them back in the pressure cooker and cooked an additional 5 minutes. They were better, but still not perfect.
I reheated an artichoke from this batch in the microwave the next day for 3 minutes, which yielded the results I wanted. This confirmed to me that they needed even longer than 20 minutes of cook time in the Instant Pot.

What Youll Need To Make Instant Pot Artichokes
- Artichokes Choose artichokes that are bright green with supple leaves. Avoid leaves that are dry or brown. Artichokes come in different sizes and some have more tightly packed leaves than others. Choose artichokes of similar size and density to ensure they cook at the same rate.

- Instant Pot We used a 6-quart model which fits 4-6 artichokes depending on their size.
- Sharp knife The sharper the knife, the better. If you dont have a sharp chefs knife, a large serrated knife will also work.
- Cutting board
- Scissors or kitchen shears A good pair of heavy-duty kitchen shears is a must for every kitchen. We like these because they come apart for easy cleaning .
- Your favorite dipping sauce Melted butter or ghee is simple and delicious but so are more adventurous sauces like Chipotle-Lime Mayo, your favorite salad dressing or vinaigrette, or even our 5-Ingredient Homemade Buffalo Sauce mixed with a little mayo
Dress It Up: Dips & Sauces For Artichokes
Artichokes are lovely on their own, but they truly need something rich to soak up for that truly magic appetiser dish or snack. You can pull apart the veggie when it comes out and sprinkle with some of your favourite cheese, or simply pour a bit of olive oil and salt on top. You could simply melt a few pats of butter if you want to keep it simple, but here are some inventive ideas some of which you can make in the Instant Pot!

You don’t need much to make Pressure cooked artichokes! Here is what you will need.
Ingredients:
- Fresh artichokes: You can fit 3 large or 4 medium artichokes in a 6 quart Instant Pot
- Water: For steaming
- Aromatics: optional! Try fresh lemon juice, bay leaf, and a bit of salt in the water

Equipment:
- An Instant Pot: we have the Instant Pot Duo Nova 7-in-1 6 quart
- A steamer basket or trivet insert for the Instant Pot: If you don’t have one, see our tip below this section for a great hack!
- Measuring cup: for measuring the water
- Tongs: for removing the artichokes
Don’t have a steamer basket or trivet insert for the Instant Pot? No problem! Just roll up some tin foil into balls and place them in the bottom of the Instant Pot. They should keep your artichokes out of the steaming water.
How To Eat Artichokes
Okay, it might seem silly to have to explain to you how to eat something, but as someone who has become hopelessly confused mid-artichoke, this is worth covering! You do NOT want to bite into the fluffy bits or start gnawing on a spiky end of the leaf that jabs the inside of your mouth. In short, it can get weird. Avoid the awkwardness!
Its not hard simply pull off the outer leaves and petals, and dip the bottom into your preferred sauce or our melted lemon butter . Eat the bottom portion of the petal it will be soft, tender, and fleshy, and discard the rest. At some point, this will become intuitive, as the tops of the petals are tough and their corners are sharp. Ouch!
There will be a fluffy layer at the base that you also want to discard, but stop right there! Below the fluff is the artichoke heart the luscious part of the veggie that you find in cans, pizzas, and salads all over the place. This is arguably the most delicious bit. Save it for last.

How To Make Instant Pot Artichokes Step
STEP 1: Trim artichokes .
STEP 2: Place the trivet into the Instant Pot insert. Pour in the amount of water called for based on your Instant Pot size. Add lemon pieces to the water .
STEP 3: Place artichokes on the trivet, stem side down . Seal the lid. Cook on Manual HIGH PRESSURE for 20 minutes.
STEP 4: After cooking completes do a Quick Release. Serve artichokes immediately .
