Does An Egg’s Freshness Affect How Easy It Is To Peel

Perfect Instant Pot Hard Boiled Eggs

The age of an egg does make a difference, but only when the eggs are super fresh: Freshly laid eggs are more likely to stick to the shell.

In the US, eggs can sit for up to 30 days before being packaged, and the sell-by date can be a further 30 days after that, which means that, most likely, the eggs you’re getting at the supermarket are old enough that no further aging at home should be necessary. Still, it certainly doesn’t hurt to look for the package with the closest expiration date.

If you’re buying your eggs direct from the farmer, or if you keep a couple hens out back, you may want to let your eggs sit around for a couple of weeks before using them for boiling.

Much more important to the result is the way in which the egg is cooked.

    Why The Pressure Cooker Works

I’ve actually been sitting on this revelation for a few months now, just because I didn’t trust the evidence I saw with my own eyes: Two eggs or a dozen, fresh eggs or weeks old, white eggs or brown eggs, it didn’t matter. The shells slipped easily off each time, leaving a smooth and pristine hard boiled egg.

There are a few theories for why this is. Some say that, similar to steaming eggs, the pressure cooker forces steam inside the egg’s shell during cooking, causing it to separate from the egg white. Alton Brown’s theory is that it’s more about the rapid temperature change inside the sealed pot.

Whatever the reason, it works! Making hard-cooked eggs in the pressure cooker is the only method I’ve found that has worked for me every single time.

Do You Use The Natural Release On An Instant Pot

Natural release just means not opening the valve for a quick pressure release. That means once the cooking time is over, you would let it sit so that the pressure releases on its own naturally.

This process takes a lot longer, anywhere from 15-20 minutes, which in the case of our hard boiled eggs is not the way to make them.

Instead, we find that if we follow the 5-5-5 method the hard boiled eggs come out perfectly every time.

My Favorite Time For Tried Tested And True Instant Pot Hard Boiled Eggs

I usually do 5 minutes high pressure with a 4 minute natural pressure release, which I still think is an excellent go-to.

After tasting the eggs side-by-side, the 2/15 eggs were much more tender and not rubbery at all! The 2/15 method is also much more flexible, because the high pressure cooking is only happening for a shorter time.

This will be my preferred method and time from now on.

I always put my eggs in my steamer basket, which fits over 2 dozen eggs . Since my basket doesnt fit into my 3 quart Instant Pot, I use a silicone steamer net. If you dont have a basket, just place the eggs on top of the trivet!

How To Store Hard Boiled Eggs:

Always refrigerate hard boiled eggs right away. They should not be left out at room temperature for longer than 2 hours.

If unpeeled, hard boiled eggs can be stored in a bowl in the fridge and will last for up to a week. If you peel them right away, the eggs should be stored in an airtight container and eaten within 3-4 days.

Tips For Instant Pot Boiled Eggs

  • Make as many eggs as you want . I’ve cooked a single soft-boiled egg in the Instant Pot , but you can cook up to a dozen, or as many will nestle comfortably on the steaming insert.
  • Always add water. The eggs are actually steaming when they cook in the Instant Pot, and you’ll need to pour in water to provide that steam heat. Pour in 1 to 2 cups of water before sealing the machine.
  • Cook on low pressure. It might not be good for much, but the low pressure setting comes in handy here. High pressure will also cook your eggs, but the yolks are more likely to come out chalky if overcooked . Low pressure is much more forgiving here.
  • Use the quick release. Not only does using the quick release decrease your wait time, it gives you more precise control over the texture of your finished eggs. The eggs will continue to cook as the pressure naturally falls, since there’s no way to remove them immediately to an ice bath, so consider than when determining total cook time. To keep your hands at a safe distance from the jets of steam, use the end of a wooden spoon to maneuver the nozzle into the release position. I also often drape a dish towel over the vent so as to avoid plunging the kitchen into humidity.
  • Plunge the eggs into an ice bath. Once the pressure has been released, stop the residual cooking that will make all your eggs hard-boiled in just a few minutes by transferring them immediately to an ice bath. Plus, it’s easiest to peel eggs under water.

The secret to a good Sriracha Egg Salad Sandwich starts with good hard-boiled eggs. Im talking creamy yolks and easy to peel shells.

Last year we added a new member to our small appliance family, a 3 qt Instant Pot Duo Plus Mini.

After reading the manual we couldnt wait to cook something with it and settled on a batch of hard-boiled eggs.

Looking online and in the IP Books Id checked out of the library I found about 100 different methods.

The most popular is something called the 5-5-5 Method.

    • You cook the eggs on High Pressure for 5 minutes
    • Let them naturally release for 5 minutes
    • Then carefully quick release the remaining steam
    • And dunk the eggs in an ice bath for 5 minutes

We gave it a try using 2 eggs and ended up with overcooked grey yolks and cracked egg shells.

Skimming through the 5-Ingredient Vegetarian Pressure Cooker Cookbook, I noticed the author had a different version that used LOW pressure for 6 minutes followed by a quick release.

So I grabbed 2 more eggs and gave it a try. The whites were perfect but the yolks were a tiny bit overdone.

The Best Way To Peel Boiled Eggs

One last factor that improves your chances of a successful peel, and it’s a major one: Make sure to chill your eggs completely. I mean, let them sit in that ice bath for at least 15 minutes, or, better yet, let them sit overnight in the fridge. The cooler the egg is, the firmer and tighter its structure will be, and the less likely it will be to develop craters when you pry off the shell.

Chilling eggs overnight reduced my count of poorly peeled eggs by a further 50% compared with those peeled after a few minutes of shocking .

Sure, sometimes you may want to serve your hard-boiled eggs hot. My advice for those times? Serve them in the shell so that if they don’t peel well, it’s your guests who will feel inadequate. This is a good strategy for instilling a bit of insecurity and fear in them before a brunch-time debate over politics or religion.

Before I start to peel my eggs, I crack them gently all over their surface, starting at the fat end and gently rotating and tapping all around. I don’t use the roll-it-against-the-counter method, as I’ve accidentally squashed too many eggs with my ham-hands that way.

The many cracks make it easier to gently peel away the shell under running water.

When I’ve got a bunch of eggs to peel, I’ll place either a fine-mesh strainer or the insert of a salad spinner in the sink under the tap and peel the eggs under the flow, letting the shells drop down into the strainer below for easy cleanup afterward.

Can You Freeze Instant Pot Hard Boiled Eggs

Most foods can be frozen to preserve them for a future time, but hard boiled eggs are not one of them. If they are frozen the texture becomes terrible. Dont make more than you are going to eat within the week.

Since hard boiled eggs are so good, making them in the instant pot is so easy that you can make a new batch every week if you want to.

Pour The Water Over The Eggs

Instant Pot HARD BOILED EGGS Using The 5-5-5 Method

Simply pour the 4 cups of water with baking soda over the eggs. The water should go slightly above the bottom of the rack basket, so the eggs will barely be in a bit of water. They will not be submerged. The main point of this method is pressure steam cooking. You are not boiling them in the classic sense.

How Long Does It Take To Boil An Egg In A Pressure Cooker

While cooking eggs in the Instant Pot isnt quicker than on the stovetop, it is pretty much foolproof. It takes about 5 minutes at high pressure and then it natural releases for 5 minutes and in ice water for 5 minutes. If youd prefer a bit of a softer yolk try 4 minutes at high pressure, theyll be a bit more creamy but still hard cooked.

Cooking hard boiled eggs in a pressure cooker may take close to the same time but when I say they come out perfectly hard boiled I mean absolutely perfect. Tender whites with picture perfect yolks that are completely cooked with a soft texture.

Does It Matter What Size Eggs I Use

It doesnt really matter what size eggs you use when making them in the instant pot. I use large eggs because they are more readily available in the stores and the price is the best one too.

If you like them larger then feel free to use X-large or Jumbo. If you increase the size of the eggs, you will also have to increase the cooking time of the instant pot eggs, by 1-2 minutes.
