This Instant Pot stew tastes as if it simmered for hours on the stove. The beef is melt in your mouth tender and the broth is thick and flavorful. It reminds me a bit of one of my other favorite Instant Pot beef recipes, Instant Pot Pot Roast. The difference is that this beef stew cooks more quickly and has a thick, brothy base surrounding the meat and vegetables.

Making Potato Soup In Advance
Store: This Instant pot potato soup recipe makes great leftovers when kept refrigerated in an airtight container for up to 3 days. You can also keep it in the lining of the Instant Pot if youve got a lid for it. Super convenient for heating the entire batch of leftovers.
Freezing: Freeze in a glass container or resealable silicone bags. Leave extra room for expansion. Can be kept frozen for up to 3 months.
Reheating: If frozen, thaw overnight or on the counter for 6 hours. Reheat the amount you need by simmering on low in a pot on the stove top. This should take about 5-7 minutes. You can add more broth or milk to thin it out as necessary.
What Order Do You Put The Ingredients In
Most soups start with a mirepoix sauteed onions, carrots, and celery. This creates a delicious, flavorful base that you cant really recreate if you simply dump everything into the Instant Pot and press START.
However, some soup recipes are different. For example, if youre making chili, you brown the ground beef first, then add the rest of the ingredients.
Here are the basic guidelines:
- For meat-less or bean-based soups, saute the onions, carrots, and celery first.
- For chicken-based soups, either brown the chicken then remove it and make the mirepoix, or add it raw with the liquids, then shred it after the soup is cooked.
- For ground meat, brown the meat first, then add the onions and such.
NOTE: Some people prefer removing meat or chicken from the pot then making mirepoix separately. This doesnt make enough of a flavor difference to me, so I usually add the veggies right on top of the browning meat.

Storage Freezing And Reheating Instructions
- Store cooled, leftover homemade vegetable soup in an airtight container in the fridge for up to 5 days.
- Freeze cooled soup in an airtight, freezer-safe container for up to 3 months.
- Reheat from chilled or frozen in the microwave or in a medium-sized pot on the stove until warmed through and simmering.

How To Release Pressure When Using Instant Pot
You will find there are different directions depending on the recipe. Natural release and quick release.
Natural release is when once your timer is done it will beep letting you know your food is done. Well instead of pushing the valve over and releasing all the pressure you leave it for 10-20 minutes or depending on how long the recipe calls for.
Quick-release means once the recipe is done, you push valve over and let the pressure come off.
After you get more familiar with your pressure cooker, you will find it is a lot easier to navigate.

This method works with any of the chowders. Again, for a large soup just add 1 cup less water than the instructions call for. For a small soup, add 1/2 cup less water than the instructions call for.

Can You Freeze Vegetable Soup
Yes, you can freeze this vegetable soup. The vegetables may break down and soften a bit more after freezing and reheating, but the soup will still be delicious. And you cant beat having a homemade meal ready to enjoy from your freezer!
Before freezing the soup, let it cool completely. Then store it in an airtight container in the freezer for up to 3 months.
The easiest way to thaw frozen soup is to place it in the refrigerator for a day. If you need to thaw soup more quickly, you can place the container of frozen soup in a bowl of cool water. Once the soup has loosened from the sides of the container, you can transfer it to a pot on the stove and finish thawing it over low heat.

You may cook your soup covered or uncovered depending on the outcome you want. Leaving the lid off will make liquid evaporate faster, potentially creating a thicker and more flavorful soup. This soup is somehow forgotten. I dont see a lot of people making it or food places offering it like I used to. Is it that people dont like it? I dont think so.
A soup made with melt in your mouth beef, flavorful broth, colorful veggies and potatoes. You can even thicken the broth, if youd like to. I did not do it in this recipe.

How To Make Instant Pot Greek Lentil Soup
- Add the onion, carrots, celery, and olive oil to the Instant Pot and season with a pinch of salt. Set it to the Sauté feature for about 10 minutes or until soft and golden, then add the garlic for about 2-3 minutes longer.
- Next, add the lentils, bay leaves, water, salt, pepper, tomatoes, and crushed red pepper flakes.
- Then, cover the Instant Pot and set the valve to seal. Pressure cook on High for 10 minutes and allow it to slow release for 15 minutes. Open the valve to release any remaining pressure.
- Taste the soup, and adjust the seasoning if needed. Then, stir in the oregano, and garnish with finely chopped parsley.

Why Dont You Add All The Ingredients At Once
Its important to add the ingredients in the order specified in the recipe for optimal cooking.
I opted not to add the tomatoes with the initial soak because it increases the cook time needed for tender beans. Hurst recommends adding tomatoes after the beans are tender.
In addition, I love the pop of color the carrots give to the soup, but theyd be mushy if you added them too soon. Adding the spinach after pressure cooking wilts the spinach, but adds a nice fresh green color.
Adding the lemon juice at the very end enhances the flavor of the beans and adds a little brightness to the soup. If you wanted, you could also add the spice packet with the lemon juice.

Can You Simmer Soup In An Instant Pot
Instant electric pot cookers can be used to simmer different types of food. According to research, the right temperature range for simmering food in an instant pot is about 180 F to 205 F at sea level. Some of the common foods that can be simmered are vegetables, soups, tough meat and rice among many others.
What Kind Of Chicken To Use In The Instant Pot
I use a whole chicken for my soup for a few reasons:
- First, its the most economical way to go.
- Second, I like having a mix of white and dark meat.
- Third, all of the bones and cartilage help to create a rich, nourishing broth.
You can also use any mix of bone-in drumsticks, thighs, or breast meat. Remove the skin if you like, but I like a little bit of rendered chicken fat in my soup!

How To Freeze This Vegetable Soup:

Simply let cool to room temperature, pour into a freezer safe container or freezer bag, seal and freeze .
With soup, you need to make sure you leave room at the top if using a container of any kind as the soup will expand as it freezes.
To heat, let thaw overnight in the refrigerator or in a sink of cold water. Then reheat in the microwave or on the stove top .
