Tips To Make Perfect Sushi Rice

  • Use good quality of Japanese short grain rice. They are easily available in local Asian grocery stores and Amazon.
  • Pour vinegar onto the hot rice, so that the rice turns out nice and shiny.
  • Carefully add the vinegar to the rice and gently spread it with a rice paddle. Over Stirring will mash the rice.

Why Do We Season Rice With Vinegar To Make Sushi

You might wonder why the Japanese season rice with vinegar. It actually goes back to the origin of sushi. The literal meaning of sushi means sour flavor. Historically, the way people stored fish was by wrapping it in fermented rice. When they were ready to enjoy the fish, the fermented rice was actually tossed away. Sometime between the 1300s and 1500s, the Japanese slowly stopped using fermented rice and instead added vinegar to the rice to further increase the shelf life. The vinegar made the rice taste good as well so they started to eat the fish and the rice together, which evolved to todays sushi.

Rice. For best results, use sushi rice . The best options are rice that is labelled sushi rice or Japanese style rice. The next best alternative is Calrose style as a more budget friendly option.

If you’re in a real pinch, arborio rice or glutinous rice can work though will miss the same texture and either be too sticky or too hard. Sushi rice is best.

Vinegar. Rice vinegar is the best for sushi rice. If you live somewhere that you can’t find rice vinegar, you can use white wine vinegar or slightly diluted apple cider vinegar in a pinch. Try to find the real stuff!

Natural Release For 10 Minutes And Then Release The Pressure

Because we do not want mushy texture for rice, we must release the pressure from the Instant Pot after 10 minutes. The rice is still being cooked during this natural release stage, but 10 minutes is plenty of time for the rice to finish cooking. After 10 minutes, there is not much pressure left, so you dont need to worry about releasing the pressure.

How To Cook Sushi Rice In An Instant Pot

To make the most delicious sushi rice in the Instant Pot perfectly every time, start by thoroughly rinsing the rice 6 to 8 times without allowing the rice to absorb too much water.;

Pour the water and rice into the inner pot and close the lid. Set the valve to sealing and pressure cook for 6 minutes. Once it goes off, allow the pressure to naturally release pressure.

While the rice is pressure cooking, make the seasoning in a glass bowl. Dissolve the salt and sugar thoroughly in the sushi vinegar or rice vinegar. Carefully open the vent to do a quick release.

Once the rice is ready, carefully open the lid and fluff the rice with a fork. Gently remove the rice into a glass or wooden bowl without breaking the rice. Next, pour in the sushi rice seasoning and gently mix it in the rice using a wooden spoon.

Once you have mixed the rice, the sushi rice is ready to roll into a sushi roll or to be added to a sushi bowl.;

Instant Pot Cooking Method

Instant Pot Sushi Rice Recipe – How To Cook Sushi Rice In The Instant Pot – Perfect Sticky Rice!

Rinsing the rice: Place the rice into a mixing bowl and cover with cold water. Clean the rice in the water with your hand, 2-3 times or until the water is clear.

After the rice is rinsed, let the rice drain in a colander or strainer for 5-10 minutes.

Cook rice: Pour in cold water and the well rinsed & drained rice in Instant Pot. Ensure all the rice is fully submerged in the water. Pressure cook for 5 minutes at HIGH pressure. Allow for a natural pressure release for five minutes before releasing steam manually.

Seasoning: While the rice cooks, mix the vinegar, sugar, and salt in a bowl until blended. Gently heat in microwave or in a pan on stovetop, if needed.

Note: Do not bring sushi vinegar to a boil. Mix it well and make sure that the sugar and salt get dissolved in the vinegar mixture.

Season the rice: Transfer the rice to a large container or a bowl and gently spread out the rice with a rice paddle. Slowly & evenly pour the sushi vinegar over the rice. Gently mix the rice with the rice paddle.

That’s it your sushi rice is ready to eat! If you are making sushi rolls, keep it covered with a kitchen towel to prevent it from drying till the sushi rice is cooled to room temperature.

How To Make Sushi Rice:

After having experimented with various traditional and non-traditional methods for making sushi rice, this is the basic method Ive landed on. The main goal here is to cook the rice al dente and to try not to mash the sticky rice as you stir it . Good sushi rice should look polished and shiny, and the individual rice grains should stay fairly separated instead of being all smooshed together. But that said, however your rice turns out, I assure you it will work well in sushi and be delicious!

Also, I highly recommend opting for the rice cooker or Instant Pot methods, as they are the simplest and most foolproof here with sometimes-temperamental short grain rice. But the stovetop method will work well too just note that gas and electric stoves can make a difference in cook time, so double-check that your rice is tender before removing it from the heat.

If you have the extra time, I will note that its also traditional to soak the rinsed rice in its cooking water for 20-30 minutes before cooking. But after trying that out a few times, we honestly didnt notice that the extra soaking made that significant of a difference, so I usually skip it and just cook the rice immediately after rinsing.

    • Place rice in the Japanese Rice Washing Bowl or similar strainer.
    • Rinse rice under running water for about 2 minutes or until water is clear.
    • Drain all water.
    • Transfer rice to Instant Pot.
    • Add water. Use a 1:1 ratio for Rice to Water. If you cook 2 cups of rice add 2 cups of water.
    • With a wooden spatula gently mix water and rice.

    Use the RICE setting for 12 minutes.

    Sushi rice is perhaps the most necessary component in a good sushi roll. Not only does it provide bulk and something to soak up the delicious soy sauce youll be using, but it keeps things held together.   • In a mesh strainer, rinse the sushi rice under cold water, swishing your hand through it in a circular motion, until the water runs clear. Set it aside and let it drain for 30 minutes. Note: this step rinses off some of the starches, so your rice cooks more consistently.
  • Transfer the rice to the bowl of your Instant Pot. Add the water and stir to mix the rice and water.
  • Close and lock the Instant Pot, and set it to cook on low pressure for 12 minutes with natural pressure release.
  • While the rice cooks, add the vinegar, mirin, sugar and salt to a small ball and whisk together until the sugar dissolves.
  • Transfer the rice to a large bowl. Add the vinegar mixture by pouring it over a spatula which you want to move from side to side, so that the liquid sprinkles evenly over the rice. Use the spatula to cut the mixture into the rice, allowing the grains to stay intact.
  • Allow the rice to cool until you can barely feel any heat coming off it. It helps to flip it a few times while its cooling.
  • Serve it while it is still lukewarm. If you have leftover rice, wrap it tightly in plastic wrap and store it in the refrigerator for no more than a day.

    Add sushi rice to the Instant Pot along with the water and mirin.

    Close the lid and turn the valve to a sealing position. Press the Pressure Cook or Manual button and set the time to 4 minutes on HIGH pressure.

    When the Instant Pot is done cooking, let the pressure release naturally for 10 minutes followed by a quick release to release the remaining steam.

    Open the Instant Pot, remove the cooked rice from the Instant Pot, and serve!

    Soak Rice For 20 Minutes

    I tried both soaking rice and skip soaking rice prior to cook rice in the Instant Pot. Whether its cooked in manual mode or Rice mode,;when I didnt soak rice, it did not become tender all the way through.

    This is probably the only difference between cooking other types of rice. I often get asked why we need to soak Japanese short grain rice. Unlike the other types of rice, Japanese short grain rice is plump, and it takes time for the moisture to go through. Therefore, we always soak the rice first, giving the dry rice a head start in absorbing moisture.

    Whether you’re making Instant Pot sushi rice or cooking it on the stovetop, it’s easy to get a good result once you get the hang of a few techniques. You can see the whole process in action in the video that accompanies this post.

  • Prepping the rice is key. You’ll rinse the rice in quite a few changes of water until the water is clear, and then you’ll soak it in fresh water and drain it. Rinsing removes excess starch, and soaking contributes to the texture of the finished dish.
