    To start off, beef ribs as the name states, are from a cow. These ribs are typically the ribs that come from a rib roast. These are the ribs labeled beef ribs in the grocery store. When you have a boneless ribeye, these are the bones that have been removed.

    How To Prep The Ribs

    To prep the ribs, wash and pat dry to remove any excess moisture. Check if the membrane is still there on the boney side, as usually it is already removed. However, if its still there, heres how you remove it:

    Place the ribs upside down on a cutting board, and using a butter knife slide under the membrane on the back of the bone. It is a thin layer, so you dont need to go deep. Once you have loosened it, take a paper towel and grab onto it with one hand. Hold the ribs down with the other hand and gently pull on the membrane, It should come off easily.

    How To Make Instant Pot Ribs

    The best Instant Pot ribs start with baby back ribs as theyre so tender.

    PREPARE THE RIBS

    I always rinse the ribs and then remove the membrane. The membrane very thin and located on the back of the ribs. Simply slide your knife under it to get ahold of it and then pull it off. If you cant seem to find it, ribs sometimes come with the membrane already removed and some people leave it on .

    Once youve pulled it off, cut your slabs of ribs into two or 3 pieces as theyll need to fit into the Instant Pot. Combine your spice rub and massage it into the ribs on both sides.

    ADD TO THE INSTANT POT

    A trivet ensures the ribs are not sitting in the liquid if you dont have one you can prop them up on the onion slices.

    Finally add the liquid to the bottom of the slow cooker and the ribs, seal, and cook .

    FINISH THE RIBS

    Once the ribs are nice and tender, allow them to naturally release for a little bit.

    Add salt & pepper or bbq sauce and either broil or grill them for a few minutes to crisp up a bit.

    Can I Skip The Alcohol

    If youre worried about the alcohol content, you need not be.

    Since the alcohol in this recipe is being used to deglaze, it does evaporate a lot. However, if you prefer the alcohol to be completely gone, cook it a little longer before adding the other liquids. You can also add less burbon.

    I have also had readers who substituted the bourbon with wine , and even coffee.

    These pressure cooker short ribs are braised in my own homemade beef and chicken stock, but you can braise them in a good quality beef stock instead too.
