If your tamales are cold , start with a 5 minute steam time. Ive found this is the perfect amount of time for reheating tamales, but this is just a starting point.

If your Instant Pot is crammed full of tamales, you may need to increase the steam time by a minute or two. Likewise, if your tamales are large and have a lot of filling, they may need additional steam time.

How Do You Make The Masa For Authentic Pork Tamales

Ive seen recipes where they recommend using oil instead of lard.; Dont do that.; You want masa flour and lard.; Otherwise, you wont get that authentic tamale flavor.;;

You also want to use the pork roast drippings.; Its best to run it through a fine mesh sieve, and then combine it with chicken broth until youve got about 3 to 3 1/2 cups.; Then, slowly add it as you mix the masa until you have the right consistency.;The perfect consistency is like peanut butter thick but spreadable.; If its too runny, slowly add a bit more masa at a time until you get that peanut butter consistency.; If its too dry, add more of the pork juice.;;

How Long To Steam Frozen Tamales

If your tamales are frozen, all you have to do is increase the steam time to 15 minutes. This worked great for my fairly large tamales.

If your tamales are smaller, you will likely be able to get by with less timeyou could try a steam time of 10 minutes.

After the steam time is complete, do a quick release and carefully open the lid to lift out the basket.

What Are The Ingredients

Tamales are made with a masa dough and are usually filled with a variety of fillings that can range from meat to cheese to, well, anything you want.

I’ve had plenty of tamales where the masa dough was bland, dry, and flavorless. One of my main goals with this recipe was to make the masa dough as tasty as the filling that it held. Some recipes just mix masa with water to form the dough. Not me. This masa is delicious!

And because I cooked the pork roast in the Instant Pot with chili peppers, the meat is infused with just the right amount of heat and flavor.

  • Insert the trivet that came with your Instant Pot.
  • Then insert the steamer basket on top of the trivet.
  • Pour the water into the bottom of the Instant Pot.
  • Insert a small ramekin or something similar to help hold the tamales upright.

    Next, its time to cook that pork shoulder. This is the easy, set-it-and-forget it step to Instant Pot Pork Tamales. Just like you would for pressure cooker pulled pork, start with a flavorful cooking liquid.;

    We flavor the filling with onion, garlic, two kinds of chili powder, and cumin.

    Dont be alarmed by the two kinds of chili powder! They give this dish a great flavor without making the meat too spicy! These pork tamales are fully kid-approved. Especially when the filling is encased with fluffy masa dough!

    Set the pork shoulder on top of the cooking liquid and seal the pressure cooker. The meat cooks on High Pressure for 75 minutes. This long cooking time results in tender, fall-apart pork shoulder that shreds beautifully.;

    When its finished, transfer the meat to a bowl and shred.;

    In a separate bowl, reserve the cooking liquid, which will flavor your masa!;

    After cooling, store the meat and cooking liquid in the fridge overnight.;

    Three: Cook Chicken In The Instant Pot

    Make sure to use the Instant Pot steamer rack trivet during this process. It helps keep the chicken nice and juicy. All we do is allow the chicken and sauce components to cook on high pressure for 15 minutes, then vent naturally for an additional ten minutes. SO EASY!

    Can You Reheat Them

    Absolutely!

    If they were frozen, be sure to thaw the tamales completely. A good day in the refrigerator should do the trick.

    There are a couple different ways to reheat your homemade tamales.

  • You can steam the tamales again. They’re still wrapped in the corn husk, so the steam will heat the tamales without taking away any of their moisture. You can do this in the Instant Pot on low pressure for 5 minutes or you can do it on the stove top in a pot with a rack, a lid, and a bit of water. You can also steam frozen tamales this way, but it will take more time.
  • You can microwave the tamales to reheat them. Keep them in their husks, cover them with a wet paper towel, and heat on 50% power until heated through, about 4 minutes.
  • Baking An Instant Pot Cake Without A Pan + Other Options

    • I do not recommend making this Instant Pot Cake without a pan , as the batter will burn.
    • If youd like to make an Instant Pot chocolate bundt cake, you can try using a 6-cup bundt pan that will fit inside the Instant Pot like this one.
    • Ive also heard rumors of baking Instant Pot cakes inside of heatproof bowls but have not played around with this myself yet.

    Why This Recipe Works:

    Don’t be intimidated! A lot of people never make their own tamales because they’ve heard the process is long and complicated. Yes, it’s a lot of work, but they’re actually very easy to make and taste amazing!

    This might sound crazy, but much like making homemade pasta, it’s really not that complicated and tamales are so satisfying to make.

    With this particular recipe, the shredded pork is infused with a ton of flavor. Then, because the liquid from the meat is added to the masa, that is also infused with all of that great flavor!

    Make Your Masa Tamale Dough

    REHEAT TAMALES IN THE INSTANT POT / CAN I HEAT TAMALES UP IN THE INSTANT POT / COOK FROZEN TAMALES

    I use Maseca masa harina for all my tamales. It comes in a regular corn masa version and a tamal masa version. You can use either for tamales. We buy whichever is available.

    If you want to try out your own corn tortillas too, you can buy the regular Maseca masa harina and use it for both tamales and tortillas.

    Tip #5 Remove Stuck On Food

    If your recipe calls for browning meat or anything else that leaves sediments stuck to the bottom, be sure to deglaze the pot before starting it. Fortunately, this is fairly easy as EVERY IP recipe requires liquid. All you need to do is add some of that liquid after you remove the meat, keep your pot on the sauté function, and work off food residue as the liquid heats up. If you dont, those pieces will continue to burn during the cooking process.

    But dont toss out that liquid!! It probably has great flavour and will taste amazing in whatever youre making. Feeling a bit confused about this one? Dont worry, most Instant Pot recipes will tell you to deglaze the pan and now you know why and how!

    Im a little embarrassed that after living in Mexico for 5 years Ive only just now made tamales. Seems like something I should have made the first year here but I didnt.     Tamales: How To Store And Reheat

    Leftover tamales may be kept in a zip top bag in the fridge for 4 days or in the freezer for a few months after they have fully cooled.

    To reheat refrigerated tamales, cover them with a wet paper towel and microwave for 2 minutes, or until warm. To keep the tamales from drying out while reheating, keep the corn husk on them. Remove the husk before eating.
