After trying a few too many “foolproof” tricks with spotty results, I relegated easy-peel eggs to the same category as unicorns and cheap airfare: nice to fantasize about, but if they were truly real, you’d think we’d have heard about it by now.

But that’s the thing about mythsjust when you’ve thrown your hands in the air and walked away, something new comes along to rekindle your hope. Like Fox Mulder, we want to believe.

For me, that something new was my pressure cooker and a friend’s improbable suggestion that I try using it to make a batch of eggs. Just like that, the dream was alive again.

    • I use 1 tablespoon prepared yogurt for every quart of milk. Therefore for ½ gallon of milk, I whisk in 2 tablespoons of already prepared yogurt into my milk.
    • You can cut this recipe in half if you would like. If you have an 8-quart pressure cooker, you can also double this recipe for homemade yogurt.
    • Do NOT try to make homemade yogurt with flavored yogurt as your starter. You need to either use a yogurt starter or plain yogurt with active live cultures. How do you know if you store-bought yogurt has live cultures?;The label on the yogurt will say Lactobacillus bulgaricus or;;Streptococcus thermophilus.
    • A huge tip for making yogurt in the future is to FREEZE your starter immediately after fresh yogurt is made. I recommend using an ice cube tray. Each ice cube holds 1 tablespoon of yogurt so you will know exactly how much yogurt to defrost when making a new yogurt batch. Just be sure to thaw your yogurt cubes in the fridge to not alter the cultures in the yogurt.

Hard Boiled Eggs Without The Green Ring

Growing up, I always thought hard boiled eggs naturally had a green ring around the yolk. I didnt know that was the result of overcooking them!

My mom has always had the tendency to over-cook food because shes paranoid of salmonella contamination , so I didnt know any better. But now I do.

To prevent the green ring, its important to place the eggs in a cold water bath immediately after cooking them. This stops the cooking process. Use the cooking times below to make sure you dont overcook them, too.
