Hi there, friends! Today I am sharing how to make a meatloaf in the Mini Instant Pot. Although, I did not make this meatloaf in the mini Instant Pot. I know that sounds confusing. I used a pan specifically made for the mini Instant Pot, but used it in my 6 Qt.
The recipe remains the same regardless. I made a meatloaf and potatoes in the 6 Qt. at the same time. It was amazing and such a breeze. I jumped on Facebook live to share the demonstration.
I have used my new mini flower bundlette pan for other goodies such as a pizza omelet, a double devil dog cake, and an ultimate pancakeand absolutely adore my 3 Qt. Mini Instant Pot, my pot roast was amazing too! I had a little trick to make a larger one.

I really like this Instant Pot Meatloaf recipe because it checks all the boxes. Its not hard, the meat loaf itself is full of flavor, and there is a great use of spices. The added parmesan cheese gives it a little bit of a salty flavor, with a fun twist to a traditional meatloaf.
And that sauce! Oh my goodness. It is not your traditional ketchup and sugar. But had depth of flavor and a tiny bit of kick from the horseradish.

Make Two Meatloafs At Once
For this recipe we use two aluminum mini loaf pans in a 6qt Instant Pot. They are the perfect size to fit in the pot and can be purchased at almost all supermarkets and even at discount dollar stores. Because were making 2 meatloafs, we can add additional ingredients to either one if we want. That works out perfectly because if you have picky eaters like I do, you can make one meatloaf exactly as the recipe calls for, and the other with some extras added in. More on that in a minute

Mommas meatloaf always has been and always will be one of my favorite recipes. So much so that I made it into a crock pot recipe AND had a blast doing a cooking video of the crock pot recipe with Mikey. It also freezes well, so if you dont need as many servings, you can always freeze some to have a quick dinner for later! It only makes sense that I would give it a try in my Instant Pot! You guys are gonna LOVE this! Meatloaf has never been so easy!
How To Make Instant Pot Meatloaf And Potatoes Recipe:
STEP ONE: First, arrange the potatoes, chopped onion, and chicken broth in the bottom of the Instant Pot. Sprinkle the seasoned salt over the potatoes.
STEP TWO: Next, make the meatloaf mixture. Place the meatloaf on a piece of foil that will fit inside the Instant Pot.
STEPTHREE: Place the meatloaf on a piece of foil that will fit inside the Instant Pot.
STEP FOUR: Fold the foils sides around the meatloafs edges and place it on top of a trivet. Place the trivet on top of the potatoes inside the Instant Pot.
STEPS FIVE, SIX, AND SEVEN: Then, cover and seal the Instant Pot. Cook on higher pressure for 25 minutes with a 10-minute natural release. Allow the meatloaf to rest for ten minutes on a cutting board. Finally, glaze the meatloaf with ketchup and serve with the potatoes.
Pressure Cooker Meatloaf Instructions:
Add all of your meatloaf ingredients in a bowl and mix it together with your hands.
In a separate bowl, mix together the red topping sauce ingredients. Make sure you mix this thoroughly so that all the brown sugar incorporates into the rest of the ingredients.
Add 1 cup of liquid to the pressure cooker. The liquid is what creates the steam to cook your meal. I like to use beef broth in this recipe but you can also use vegetable broth or even just plain water too.
I used a vegetable steamer rack to place my meatloaf on in between the potatoes and carrots. The key is to not submerge the meatloaf in the water/broth at the bottom of the Instant Pot Pressure Cooker. You dont want a soggy meatloaf.
You can use tin foil if you dont have a steamer rack. I really like to use this steamer rack though because it holds the meat secure in place while its cooking. It creates a cradle around the meat and holds it in place nicely. I also used tin foil but that was mainly to have handles that came up along the edges so that I could grab the meatloaf out of the pressure cooker when it was done.
Ive made this recipe so many times since I first wrote this post. Heres a few updated photos of the process.
This photo shows me using the rack that came with the pressure cooker and very small baby red potatoes. They were so small I didnt have to cut them. Easy!

Yes, you can halve this recipe! Heres what you need to know
- Use the scale feature in the recipe card to adjust the quantities needed in the meatloaf and potatoes.
- You will still need at least 1 cup of chicken broth in the potatoes to allow the instant pot to gain enough pressure.
- After the potatoes have cooked, strain off about half the liquid and continue with the recipe.
- The cook time should remain the same.
How To Make Instant Pot Meatloaf:
Add all of your meatloaf ingredients to a large bowl and mix it together with your hands.
Combine the Red Meatloaf Sauce ingredients in a separate small bowl.
Youll want to mix until the brown sugar incorporates into the rest of the ingredients.
Using the Saute button on the Instant Pot, heat Instant Pot for one minute.
Add 2 Tablespoons of olive oil to the bottom of the pot.
Add potatoes, onions, and carrots.
Sprinkle with salt and pepper to taste.
Cook on saute for about 5-minutes, stirring to coat the carrots and potatoes with the oil.
Add 1 cup of beef broth or a cup of water and turn the pressure cooker off.
You will need to create a platform for the meatloaf.
You can use aluminum foil , or if you have room, I use the steamer rack that came with my instant pot and spray it with nonstick cooking spray.
You just need something to cradle around the meat and hold it in place, and that has handles that are on the edge so you can lift the meatloaf out of the instant pot when done.
You can make a foil sling from a large piece of aluminum foil.
Once you have your platform on top of the potatoes and carrots, shape your meatloaf.
It will need to be round, and there should be spacing between the edges of the meatloaf and the instant pot.
I place the meatloaf on top of the trivet that came with the Instant Pot and just adjust my potatoes, carrots, and onions to make it fit!
Spread half of the Red Meatloaf Sauce on top of the meatloaf.
Remove meatloaf and place on a baking sheet.

What Ingredients Are In Instant Pot Pressure Cooker Meatloaf
For the Meatloaf:
- Milk this can be replaced with water or soy milk. This is just to wet the breadcrumbs for moisture.
- Egg this is used as a binder to hold the meatloaf together.
- Panko Breadcrumbs This is another binder to hold the meatloaf together. Regular breadcrumbs may also be used
- Onion I use Vidalia onions. The onions may be omitted without substitution.
- Garlic I used freshly minced garlic cloves. Fresh garlic is the best and most flavorful!
- Carrot I grate half a carrot just for sweetness and moisture.
- Celery Minced celery adds flavor and keeps the meatloaf moist and juicy.
- Parsley freshly chopped parsley adds a bright, fresh flavor!
- Lean ground beef I use 93% lean. Up to 80% lean is okay but will result in excess fat drippings that will need to be drained from the packet.
- Ground Pork its possible to get lean ground pork, which is what I use. Regular ground pork may be used but will have added fat.
- Salt and black pepper to taste. The nutritional value was calculated using 1 teaspoon of salt.
- Ketchup I have listed other serving suggestions below but since ketchup is used often, I have included it here to calculate nutritional information you see on the recipe card.
For the Vegetables:
- Small red potatoes or Gold Potatoes I like both. If they are petty small leave them whole and halve only the larger ones.
Other Options for the Meatloaf glaze or Sauce:
- Brown gravy
- Barbecue Sauce

How much liquid should I add to the insert if I dont make mashed potatoes with it? Pressure cooking only works when liquid is converted to steam. Therefore, youll still need to add water to your pressure cooker. Potatoes or no potatoes use 1 1/2 cups water.
COOKING TIME ADJUSTMENT TIP: The thicker that the meatloaf is vs the wider that it is pressed into, the longer it can take to cook. If youre halving the recipe and making a smaller portion, the time can reduce to about 25 minutes cook time.
Grandmas recipe uses milk. Can I use it and where do I add it? Grandmas or moms meatloaf recipe may feature milk as an ingredient. In fact, to add more moisture to your meatloaf and to prevent it from falling apart, soak cracker crumbs in 1/2 cup milk for a few minutes. Drain the milk out and add the moist crumbs to the bowl.
