Buttons On The Instant Pot
The Instant Pot does have a lot of buttons on it and it can get confusing. Different models may have slightly different buttons but I will like to talk about the ones which we most commonly use.
These are also the ones that I have used for most of my recipes in my cookbook and on the blog.
Keep Warm/Cancel: This button is used to cancel the current program and choose the next one. You would use this button all the time to end the sauté function before choosing the next cooking program like manual or rice.
Once the food is cooked, the Instant Pot goes into this mode and keeps the food warm.
Sauté:The sauté button as the name suggests is to sauté things in the pot. 90% of the recipes on my blog and book would use this function.
Using the adjust button, adjust the sauté to less or more depending on how much heat you want for a particular recipe.
It can also be used to get rid of excess water from the pot.
Manual: The manual button which is also the pressure cook button on some models is the one you will be using all the time.
It lets you pressure cook at high or low pressure and this is the button that you will be using all the time.
Most recipes would call for cooking on high pressure but few might need the low-pressure cooking. You can use the adjust or pressure level button to adjust the pressure to high or low.
Rice:Pre-set cycle of 12 minutes on low pressure for cooking rice.
Slow Cooker: Used for slow cooking the food. Time can be adjusted using the adjust button.

How Does It Work
Putting it simply: airtight container + water + heat + food = fully cooked meal. But how that actually works is pretty cool. Usually, water/liquid can only boil at 100 degrees celsius, because most pots are not airtight, so steam escapes. This means that food can only get up to that temperature, increasing cooking times considerably. Instant pots and pressure cookers create a situation where steam and heat cannot escape, increasing the boiling heat of liquid and food to 120 degrees celsius . Essentially, your food is cooking considerably faster at higher degrees.
But what does it do about heat regulation? Instant pots don’t let your food burn because they have a pressure sensor inside the outer pot. The inner pot with deform slightly at such high temperatures, and touch a pressure plate. When this happens the pressure cooker turns off the heating element. This allows the heat to cycle so your food cooks evenly, and shouldn’t burn. Interestingly, ovens work a similar way. They’ll shut off the heat to maintain the temperature inside.
In order for an instant pot to not just be a fancy pressure cooker, the internal computer can adjust temperatures and heat cycles to different foods in different ways. That’s how an instant pot can achieve all those different settings.
Which Instant Pot To Buy
Okay, one of the most common question that I get everyday is which Instant Pot to buy?
One common misconception that people have that there are different brands of Instant Pot and they ask me which brand they should buy.
Well, Instant Pot is the brand itself. There are different models which you can choose from.
Instant Pot comes in 3 different sizes 3 qt, 6 qt and 8 qt. I personally own the 3 qt and 6 qt. The size you choose would depend on the size of your family. I would say a 6 quart is pretty decent size for most families.
Now there are DUO and LUX models in all sizes so which one to go for? My recommendation is always to go for DUO. The LUX model doesnt have the yogurt button and also there isnt an option for low pressure.
So 6 Qt DUO 7-in-1 is my recommendation! Its the most basic model and does a good job.

How To Cook Rice In Instant Pot
Before getting started, if you are new to using an Instant Pot, read my guide on how to use an Instant Pot.
For this recipe, use your favorite long grain white rice. Both basmati and jasmine rice work well.
First, rinse your rice under cool water to remove excess starch. I use a fine mesh strainer to rinse and drain the rice. Place the rice in your Instant Pot.
Add the water and stir to combine. If desired, you can also stir in a little bit of salt to flavor the rice. If you cook your rice in broth you dont need to add any extra salt.
Make sure that all of the rice is in the water and not stuck to the sides of the pot. Then close the Instant Pot lid. Be sure to turn the steam release valve to the sealing position. If you forget to do this, your rice wont cook properly.
White rice needs 4 minutes of cook time at high pressure. Depending on your Instant Pot model, you will use either the Pressure Cook or Manual button.
After the cook time ends, allow the pressure to release naturally for at least 15 minutes by just leaving the Instant Pot alone. You need to do a natural release when cooking rice because this makes the rice fluffy and perfectly cooked. A natural release also helps to keep the rice from sticking to the bottom of your Instant Pot.

Update: Amazon Price Specials On Instant Pots
- Three years ago during Amazon Prime Day, I purchased a 6 qt. Instant Pot that was on sale. And I quickly realized what a great addition it was to my kitchen. The first thing I made was a continuous beef bone broth. I cooked the bones and water under pressure and then switched to slow cooking and kept it going for several days. We were having cups of delicious and healthy bone broth every day and I simply added additional water each day to replace what we had taken from it.
The next year when Amazon Prime Day came I wanted to get my daughter her own Instant Pot as she was getting married that fall. The one that was on special was the 8 qt. size. When it arrived we realized how much bigger it really was than the one I already had.
Then just a few days later my sister told me about the newest Instant Pot that was a 3 qt. size. I immediately began thinking of ways that this size would be helpful. When it arrived we were instantly struck by how small and cute it was!
