If you want to be sure the pork is adequately cooked use a meat thermometer to check the internal temperature is at least 145ºF . This temperature is accurate for pork tenderloin, pork chops, or pork loin.

I think that in the world of pork roasts, these two are the most confusing. Since the names are so similar, they often are mistaken for each other.

PORK LOIN ROASTThis is a rectangular shaped pork roast. It can be bone-in or boneless. The pork loin usually weighs 2 pounds or more, often up to 6 or 7 pounds. It needs a much longer cook time than the tenderloin.

PORK TENDERLOINThis is a smaller, more rounded cut of pork. This tubular shaped little roast is very tender when cooked appropriately. Tenderloins are usually 1 to 2 pounds and boneless. It needs a shorter cook time than the loin roast.

If the temperature is too low, simply flip over the pork loin in Instant Pot, then close the lid. The temperature should rise 8°F 10°F per 15 minutes.

*Note: Do not pressure cook again because were using the Keep Warm mode to slow roast the pork loin.

When we were testing this recipe, we knew we wanted to make a pretty traditional pork roast recipe. We were going between two cuts of meat: a pork loin roast or pork shoulder roast.

  • Pork Loin Roast: A pork loin roast comes from the back of the pig. It is usually a very lean piece of meat, so if you are slow roasting, you have to be careful you dont overcook it. In this recipe, you can use a pork loin roast if you are looking for more pork chop or pieces of pork rather than shredded pork.
  • Pork Shoulder Roast: A pork shoulder/butt comes from the shoulder of a pig. It generally has more fat and is great for slow roasting. We use this cut of meat when we want to use carnitas or if we want a juicy piece of meat.

It is all about how you want your pork roast to turn out. We tested both cuts of meat for this recipe and though we prefer the pork shoulder, both cuts are delicious!     For keto pork tenderloin, use keto-friendly vegetables like turnips, carrots, Brussels sprouts, eggplant, or green beans instead of potatoes. Replace corn starch with your preferred keto thickener.

    Since the goal is to limit carbohydrates, other options would be asparagus, zucchini, spinach, and tomatoes. Since these vegetables arent as thick as potatoes, it might be best to cook them on the side so they dont overcook in the Instant Pot with the pork.

    Frozen Pork Loin Instant Pot Recipe Tips:

    • You can use a 6 quart or 8 quarts Instant Pot or pressure cooker. Both work great. The main difference is that in the larger sized version you can cook/add more meat.
    • Also, it is important for pressure to release naturally. DO NOT do a quick release of the meat when the cooking time is up. It is best for it to do the release naturally, and wait for it for about 10 minutes.
    • You can skip the Honey Garlic Sauce and simply cook without it. However, the sauce is really complimenting this dish nicely, and we love using it.

    What Should I Do With The Pan Juices

    The juices left behind from the cooking process are like liquid gold. After I take the roast out of the pot and remove the trivet, I use the sauté function again to turn pan juices into a delicious, rich sauce to serve over the pork.

    In just under an hour, you can have a tender, flavorful roast on the table any day of the week or for a special occasion.

  • Take roast out of the fridge and cut slits in the fat.
  • In a small bowl, combine salt, pepper, and garlic powder. Stir to combine.
  • Rub pork roast with 1 tablespoon of olive oil and season with the salt mixture on all sides.
  • Let seasoned pork rest for 45 minutes.
  • Select the Sauté button to heat the Instant Pot. When Hot is displayed, add the remaining tablespoon of olive oil and a tablespoon of butter.
  • Add the seasoned pork and sear on all sides, approximately 3 minutes each on top and bottom and one minute each on the long sides.
  • When roast has been seared on all sides, press Cancel and remove pork from the Instant Pot. Set aside on a plate.
  • Add the broth or water to the Instant Pot, scraping any browned bits from the bottom with a wooden spoon or rubber spatula.
  • Place the trivet and onion in the bottom and lay the pork fat side up on top of the trivet.
  • Cover pot, lock on the lid, and set the steam release valve to Sealing

    This pulled pork recipe is so easy to make, youll kick yourself for not trying it sooner! It doesnt matter if you use a bone-in pork shoulder or a boneless one, if its frozen or thawed. The method remains the same. The only note here is if using a frozen pork shoulder, the instant pot will take longer to come to temperature, extending the cooking time.

    When I have leftovers I store the sliced pork in an airtight container. It keeps well for a few days in the refrigerator. You can also freeze it for up to 3 months.

    Difference Between Pork Loin And Pork Tenderloin

    Sometimes it gets confusing, right? With so many different cuts of meat its good to know the difference!

    • For this recipe, you will want to use a pork loin which is a larger cut than a tenderloin. As you can see in the above photo, once its cooked you can slice it into large pieces. You can get it with the bone-in or boneless and I recommend getting a boneless one. Its a lean cut of meat and its perfect for cooking in the Instant Pot.
    • Pork tenderloin is thinner and longer and cooks quicker. Its also lean and tastes similar but for this recipe, I dont recommend using it because it needs a different cooking method.

    Once you have your ingredients all you do is mix up the spices and rub them all over the meat. Thats it!

    What Is Pork Sirloin Tip Roast

    Did you know that the USDA changed the names of cuts of pork for pork loin and pork chops? Theyve been rolling out the changes for a while, but it explains why you may keep finding new cuts of pork at the grocery store or in restaurants.

    Sirloin tip roasts come from the top-back of the pig, next to the sirloin but before the ham. Its a very lean cut of meat, so you have to be careful not to overcook it.

    I first learned about pork sirloin tip roasts when I received an email from Pat, a sweet Pressure Cooking Today reader. If youre a Costco shopper, you may have noticed them. Costco sells these pork roasts in a bundle of four, and each roast is about 2 to 3 pounds.

    Its a fairly inexpensive cut of meat, often selling between $1.50 and $2 per pound. Despite the bargain price point, the pork cooks up lean and tender.

    One thing to be aware of is that the Costco sirloin tip roast is injected with pork broth and salt. If youre watching your sodium or sensitive to salt, you may want to omit the salt from this recipe.
