Yes, you should take time to rinse sushi rice before cooking it. Rinsing it will remove debris and excess starch from the rice. If this isnt done, the starch may bubble up during cooking and can clog the Instant Pots venting mechanism.
You dont need to rinse the rice for very long just until the water runs clear. A time of 10 to 15 seconds per rinse usually does the trick. Just add the rice to a mesh sieve and run under cold water.
Whats With All The Vinegar
I have to admit. I was skeptical at first too. It does look like a lot of acidity for the amount of rice.
However, if you follow this Instant Pot recipe, you wont regret it!
The vinegar enriches the rice with so much flavor that you will not want to have sushi rice in any other combination from the first moment you taste this.
Quick tip: When you get the rice out of the IP, put it in a glass bowl, and use a wooden spoon to mix the sauce in. The wooden spoon is gentler with the rices texture and the glass bowl doesnt react to the vinegar .
Also, dont use a stirring motion when you mix the sauce into the rice unless you want mushy rice. Instead, use the wooden spoon or spatula to create a folding motion thats gentle with the rice.
How To Make This Recipe
Place the rice in a fine mesh sieve over a glass bowl.
Fill the bowl with cold water and rinse for 30 seconds. Repeat this process 3-5 times, until the water runs clear.
Drain the rice with a fine mesh sieve until dry.
Add the rice and water to the Instant Pot and set to “pressure cook” on high pressure for 10 minutes. Allow the pressure cooker to naturally release – this should take 10-15 additional minutes.
While the rice cooks, combine rice wine vinegar, sugar and salt in medium bowl and stir until the sugar is fully dissolved.
Once the rice has cooked, place it in a glass bowl and mix in the sushi vinegar mix.
Allow the rice and vinegar to cool completely before making any sushi rolls.

When there are around 5 minutes left on the 20-minutes natural release, cool the sushi vinegar by placing the saucepan in a sink filled with cold tap water.
Once cooled, remove the kombu from the sushi vinegar.
Gently transfer the sushi rice to a Hangiri Sushi Rice Barrel or large container.
Gently spread out the sushi rice with a Wooden Rice Paddle or plastic rice paddle.

Luckily, you can use your Instant Pots manual pressure function to cook white, brown, or wild rice on high pressure in just a few minutes. Heres how to do it.
Components Of Perfect Sushi Rice
- Rice: Use rice thats meant for sushi. Medium to short grain white sushi rice is easy to find in most places. Using an electric rice cooker or pressure cooker will yield the best results.
- Rice to Water Ratio and Cook Time: When sushi rice is overcooked or cooked in too much water it will become mushy. When using a rice cooker, the ratio of rice to water is typically 1:2, but this can vary, so always check your appliances instructions. For the Instant Pot, the ratio is 1:1 1/4, as there is almost no evaporation. When doubling rice and grains in the Instant Pot, its best to reduce the amount of water after the first cup, so for this recipe which uses 2 cups of sushi rice, I use 2 cups of water. You can also halve this recipe and use 1 cup of rice. Simply use 1 cup of water and halve the vinegar ingredients.
- Cooking Method: An electric rice cooker or Instant Pot is the best method for cooking rice perfectly every time.
- Rice Vinegar: Look carefully at your bottle of rice wine vinegar, as there are two different types. Seasoned rice vinegar has sugar and salt added, while some others are made with rice and water only. You can use either type, but if using seasoned, you dont add the sugar and salt, you simply add it to the cooked rice as-is.
