You Can Only Pressure

If you have a different model of the Instant Pot, you can, however, do boiling-water canning, which is great for pickles and jams. How To Do It:
The first thing to do is pour about 3 or 4 cups of water into your instant pot. The freshwater poured should be medium-heat, not boiling water.; We advise using a digital thermometer to check the water temperature for more conciseness.
Then, install the steam rack into the pressure cooker and fix it. Place the glass canning jars onto that tray and stabilize it later on. Next, please fill the instant pot max with more hot water.
The height must be one inch above the jars. In other words, the jar needs dipping into a hot water bath so the steam release when boiling can affect the jars quicker.

Note: To make things just a little more confusing, Presto also makes;cookers and they call their canner a canner/cooker.
The All American Pressure Canning manual states that you should NEVER cook the following foods in the canner: rice, applesauce, beans, cranberries, rhubarb or spaghetti plus any other food you think might foam up.

When youre working with a pressure canner, you have two different ways to test your pressure. Youll either have a dial gauge or a weighted jiggler.
If you have a dial gauge, youll want to be sure to take it into the county extension office every single year, and before the first time you use it to be sure its reading the pressure correctly.
If you have a weighted gauge, they work with simple physics principles, so these are always correct.
The problem with the pressure cooker is there is no way to test the accuracy of the pressure your food is cooking at.
Please dont take your familys safety or health lightly when it comes to the safety of preserving your food.

Using A Large Stock Pot For Canning
A large stock pot can save you time and money while canning! Time, because you can do double duty. Money, because you dont need to buy a large canning pot.
Have you ever been in the middle of canning and realized that you can fit everything but a few extra jars into your big canner?
Canning is rewarding, but lets be real. Its also a big time investment. The whole process of getting the water up to boiling, processing the jars for the required time, and then allowing them to cool for a few minutes before removing from the racks can take an hour for a single batch.
When you end up with a couple of leftover jars, who wants to go through all of that again just to get the last few jars processed and sealed?

What Is The Safest Way To Can Foods
People have been using water bath as well as pressure canning methods. But, water bath canning is the most recommended method. Although, there are instructions mentioned on the manual of electric pressure cooker, but pressure canners are specially designed for this purpose. These are heavy pots containing a lid with a vent, safety fuse and pressure gauge.
What Is Pressure Canning Exactly
Pressure canning is when you preserve food by bringing it to a temperature of 240 to 250 degrees Fahrenheit to eliminate the risk of spoilage from the bacteria known as Clostridium botulinum or botulism for short.
It can be killed at a temperature of 212 degrees Fahrenheit but its spores can survive and spread so they need a temperature of between 240 to 250 degrees Fahrenheit to kill them off.
The Instant Pot Max claims it can maintain a steady pressure of 15PSI which keeps the temperature at a steady 240 degrees Fahrenheit or higher.

How Pressure Canning Works
Pressure canning is a type of canning that you use for low-acid foods. When you have a food thats higher on the pH scale than a 4.6, it is possible that bacteria can survive in it. This is why we have to sterilize the food inside the jar, known as processing, in order to make it safe and shelf-stable.
I want you to always remember that I firmly believe that home-canned food is safe, as long as its safely canned.
In order to reliably kill off any bacteria that could be in your jar, you have to bring the contents of the jar all the way up to 240-250 degrees F.
The only way to do this in a home setting is to do it under pressure. This is where the pressure canner comes in. Adding pressure and pressurizing the chamber of the pressure canner allows the temperature to come all the way up to that safe canning range.
This is something you just cant do with a pot of boiling water.
