How To Make Instant Pot Mississippi Roast

Sear the beef. You can do this in the Instant Pot itself or you can do it on and transfer the roast to the instant pot. I prefer to do it on the stove because theres more space in my pan, but do what works for you.

Once you have the chuck roast in the Instant Pot, add the remaining ingredients and close the lid with a sealing position.

Pressure cook it. Set your pressure cooker to high pressure for 25 min per pound. I did an hour and 15 minutes for our 3 pound roast. Natural release for about 15 minutes, and then use the valve to release any remaining pressure.

If youre cooking from frozen, add about 10 minutes per pound, which would be about an hour and a half for 3 pounds.

Shred the meat and return to the pot to let it fully absorb the flavor of the cooking liquid before serving.

Chuck Roast. Much like a traditional pot roast recipe, youll want to choose a well marbled chuck roast. The chuck roast comes from the shoulder of the cow.

Find a chuck roast with many thin strands of white . These will melt away while your roast cooks, creating a tender cut of meat.

I use a 3-4 lb roast for a single recipe. Cut it into large chunks so that it will fit well in the bottom of the Instant Pot.

Seasoning. One dry packet of ranch seasoning and one dry packet of au jus provide the perfect pairing of seasonings to todays Mississippi Roast recipe.

Pepperoncini Peppers. These are the star of the show. Use either whole or sliced pepperoncinis to flavor the meat. While they have a little spice to them, its mild not hot.

If you want to add even MORE flavor swap out some of the beef broth for extra liquid from the pepper jar.

It is traditionally a chuck roast, slow cooked with just 4 other ingredients ranch, Au Jus, peperoncini, and butter. Now, Im not sure why those ingredients scream Mississippi, but I didnt name it I just make it and eat it.

How To Cook A Roast In An Instant Pot

INSTANT POT MISSISSIPPI POT ROAST

Making a pot roast in your Instant Pot is pretty easy to do. Instead of braising your roast in the oven, you can make an Instant Pot chuck roast in about half the total time.

I do something a little different than other recipes you may see online. I like to cook my vegetables after the meat is cooked. I have found that if I cook my vegetables for the same amount of the time I cook the meat, the vegetables become soft.

I like the vegetables to be tender, so I cook a pot roast in two stages. One long cooking cycle for the meat, seasonings, and liquid, followed by a very short cycle for the vegetables.

Here are the recipe steps:

  • Set your Instant Pot to sauté and add the vegetable oil.
  • Sprinkle salt on both sides of the roast.
  • Place the roast in the bottom of the pot and sear both sides of the roast until browned, about 6 to 7 minutes per side.
  • Add the onion soup mix, tomato paste, and beef broth or stock.
  • Close the lid and set your Instant Pot to high pressure for 60 minutes.
  • After the cooking cycle has finished, perform a quick pressure release.
  • Add onions, potatoes, and carrots.
  • Set your Instant Pot to high pressure for 4 minutes.
  • After this cooking cycle, perform a quick release.
  • Transfer the roast and vegetables to a serving platter.
  • If you want to thicken the gravy, whisk in a cornstarch slurry and cook until it thickens. Use the saute setting for cooking the gravy.
  • Stir the gravy. Add cream if desired. Then pour it over the roast or into a gravy boat.
  • Serve and enjoy!

    How To Make The Pot Roast Gravy:

    Remove the beef and peppers from the instant pot and switch the instant pot to the sauté setting.

    Then mix 2 tablespoons of cornstarch with 1 cup of cold water. Whisk together until blended completely.

    Whisk this mixture into the juices in the instant pot. Then cook for 2-3 minutes until the sauce has thickened.

    Taste test it and seasoning with salt and pepper. Then its ready to serve with the Mississippi roast.

    Can You Make Mississippi Pot Roast Without Pepperoncini

    While the pepperoncinis do add in a great flavor profile to the roast they are not necessary and you can make the Mississippi roast without them. It may not taste the same, but it will still taste great!

  • Prep: Press the SAUTE button on your Instant Pot and get the vegetable oil heated up.
  • Cut your chuck roast into 3 to 4 even chunks so it will fit more easily into your Instant Pot.
  • Saute: Add the meat to the hot oil and saute it for 5 minutes. Flip it over and continue to cook for 5 more minutes. Add more oil, if needed.
  • Remove the meat from the Instant Pot and set it aside.
  • Slowly add your beef broth to the Instant Pot. Stir the broth and loosen up all the browned bits from the bottom of the pot. Whisk in pepperoncini juice.
  • Transfer the meat back into the Instant Pot
  • Sprinkle the meat with the ranch seasoning mix and the gravy mix. Add pepperoncinis and butter.
  • Turn off the SAUTE mode.
  • Pressure Cook: Close the Instant Pot with the lid and set the steam release knob to the sealing position.

  • When the cooking cycle ends, do a Natural Pressure Release for 15 minutes.
  • Turn off the pot and release remaining pressure by turning the knob to the venting position.
  • When the pin drops, you can open the lid.
  • Serve: Remove pot roast from the Instant Pot and serve with the juices.
  • For a Thick Gravy: If you want to thicken the juices, you can whisk together 2 tablespoons of cornstarch with ¼ cup cold water. Select the saute setting on the IP and bring the juices to a boil. Whisk in the cornstarch mixture and cook for 2 minutes, stirring frequently, until slightly thickened.

    What If You Have A Different

    This recipe is written for a 6 quart Instant Pot . If you have a larger Instant Pot, you need to increase your ingredients. For example, a 4- to 5-pound roast, and then increase everything else by one-third.
