  • Remove the stem from a 2 to 3 pound pie pumpkin and place on the trivet in the Instant Pot insert pot.

Once the pressure has fully released, I generally remove the lid of the Instant Pot, and allow the pumpkin to cool right in the pot, until it’s cool enough to work with comfortably.

That’s it! You should have a perfectly cooked pumpkin. You can remove it from the pot, cut it in half, and scoop the seeds out. Depending on the variety of pie pumpkin, you may find that the flesh has pretty much separated itself from the skin, so that you can just about lift off the skin. Other varieties hold more tightly to the skin, and you can easily scoop the flesh out with a large spoon.

If you’re using your pumpkin to make a smooth puree for baking with, you can either whip it with a fork, whisk, or hand mixer . Or you may want to put it the bowl of your stand mixer and use either the wire whip or flat beater to whip it into a perfect puree.

I like to freeze pumpkin puree in pre-measured amounts – either in one cup portions, or in amounts required by recipes that I make very frequently.

    Cooking squash in an Instant Pot is ridiculously easy!

    You can even make your own pumpkin puree if youre feeling ambitious. Or at the very least, mildly interested.

    If youve got squash exploding out of your garden you can cook a bunch and freeze it for quick soups and sides during the winter, too.

    Those little pie pumpkins and smaller squashes can be put into the pot WHOLE, which is great news.

    That means you dont have to cut the squash in half and theres a 76% less chance of losing a finger. Whoop!

    But if you cant fit the whole thing in make sure your knife is sharp. Get the knife into the middle a half inch or so deep and work your way around it until you can get it apart.

    How To Cut A Pumpkin

    • Begin by washing the pumpkin and removing all the dirt and grimes on it. Pat it dry before cutting it. Because pumpkin skin can be slippery while cutting, you need to ensure that its totally dry before inserting a knife into it.
    • Use a sharp knife, preferably a chefs knife, to cut the pumpkin into two halves. Always cut it from the top to the bottom after removing the stalk. Once the pumpkin is cut into halves, take a spoon and scoop out all the seeds and thread-like fresh in the core.
    • If you want to bake, leave the skin and cut the pumpkin into smaller halves. Even for the instant pot cooking, you can leave the skin on the pumpkin.
    • For sautéing, baking, broiling, grilling, and air-frying, you will need to peel the pumpkin skin. I really find it hard to peel the pumpkin skin with a vegetable peeler. Therefore, I use my knife to cut the skin off and then cut the pumpkin into smaller cubes.

    Unfortunately, no.; You can not can any leftover pumpkin puree.; There are several reasons that pumpkin puree is not safe for canning.

    The first is that the pH changes from batch to batch, so you can’t guarantee that it’s a high acid food.; This can allow bacteria to grow.

    Secondly, you need to add water to pumpkin puree.; This changes the viscosity.; Since the viscosity is different for each batch, you can’t test it for safety.

    Third, and closely related to the second reason, pumpkin puree can be quite thick.; While the outer part of the jar might reach a safe canning temperature, the inside might not.

    For these reasons, it’s recommended that you freeze any leftover pumpkin puree.; I freeze min 15-16 ounces per container to substitute for a can of pumpkin puree.

    It’s no secret this year has been a bit out of the ordinary for everyone. The aluminum shortage has affected the availability of canned soft drinks as well as other canned items.
