But the worst part about canning tomatoes is all of the prep work you have to do to them. Scoring, blanching, coring, removing the seeds.. all before you actually turn them into something you can use. But all of that can be wasteful and youre losing some of the items you use in your sauces.

So what do you do? You make a recipe using all of the parts you can without wasting it as you go. Its a lot easier, brings in more nutrients and takes a lot less time.

This recipe basically requires you to toss your ingredients in your pressure cooker or Instant Pot and let it do the hard work. And its one that your family is going to love.

Ingredients:

  • 1 Tbsp Italian Seasoning
  • 6 oz Tomato Paste

Step 1: Add all of your ingredients, except the tomato paste and place inside the inner liner of your pressure cooker.

    Can I Use My Electric Pressure Cooker Or Instant Pot To Pressure Can

    Unfortunately, there are some electric pressure cooker manufacturers advertising their products as safe for pressure canning.; One, even said in their infomercial that their electric multi-cooker Meets USDA standards for pressure canning prompting NCHFP to post an alert on their website warning consumers against these products3.

    The NCHFP warning said..

    Even if there are referrals to the National Center for HFP in the instructions for canning in the manufacturers directions, we do not currently support the use of the USDA canning processes in electric, multi-cooker appliances.

    The manufacturer of that product claim that their product reaches the right temperatures for pressure canning under 2,000 feet and fits four-quart jars so whats the problem? Doesnt that meet the USDA standards?

    The reason electric pressure ;and multi-cookers ;are unsafe for pressure canning are:

    Even if the electric pressure cooker manufacturer claims that their cooker can reach 15psi for example, the Instant Pot MAX, because of the way electric pressure cookers operate there is no way to verify that the temperature is maintained throughout the entire processing time.

    Why Not Just Process Everything For The Longest Time Possible

    The problem with pressure canning everything;more than the recommended time;is that the contents of the jars could be impacted negatively by color, texture, and taste. This is called over-processing. ;Lets say youre pressure canning green beans, and the USDA says that they only need to process 20 minutes, but you want to make sure those green beans are safe so you process them for 100 minutes, instead. Youll;end up with are jars of tasteless gray pulp, instead of delicious green beans. ;Its ok to go a little over the processing time, its not ok to double, triple or quintuple it.

    Do I Need To Adjust My Recipes At Higher Altitude

    The short answer is yes. Some Instant Pot models e.g. Ultra and MAX will allow you to set your altitude and the cooking times will be automatically adjusted for you. Otherwise, cooking should be adjusted 5% for every 1,000 feet above 2,000 ft. above sea level. So, for example, at 3,000 ft., you will increase cooking time by 5% and at 4,000 ft., you will increase cooking time by 10% and so forth. One of our team members has lived at many varying high elevations and personally, I have never run into altitude-related issues with my Duo model.

    How To Use Your Instant Pot For Canning

    Its important to note that there are multiple types of canning methods, and we will not be using a pressurized method with your Instant Pot.;

    A pressure cooker is not the same as a pressure canner!

    If you wish to do the pressure canning method, youll need to pick up a;proper canning machine.

    Yet that doesnt mean you cant begin canning some types of foods! Thankfully you can use water bath canning to preserve a wide variety of foods.;

    Double Check The Doneness Of Your Favorite Recipes

    Its always a good idea to check the inner temperature of a slow-cooked meal to ensure the ingredients are heated throughout, and this step is especially important when youre slow-cooking in an Instant Pot.

    You see, there are a few key differences between an Instant Pot and a traditional slow cooker. For one, a traditional slow cooker pot is typically made of thick ceramic, so the sides of the bowl heat up, cooking your food from all sides. With an Instant Pot, the thin metal pot doesnt get nearly as warm, so your food is only being cooked from the bottom.

    Additionally, the temperature settings on an Instant Pot arent exactly the same as on a slow cooker. The brand lists the following temperature ranges for each setting:

    • Less: 180-190°F
    • Normal: 190-200°F
    • More: 200-210°F

    On a standard slow cooker, the low setting is generally around 190°F and the high setting is around 300°F. As you can see, the settings between the two appliances dont match up precisely, so it may take some trial and error to recreate your favorite recipes.

    For these reasons, slow cooker recipes often take a bit longer to make in an Instant Pot, and youll want to check the inner temperature of your meal to confirm its reached a safe temperature before you dig in.

    Instant Pot Steam Canning: Part Two

    Many Instant Pot users almost always use manual settings. While Smart Program buttons are handy, cooking instructions can vary for different types of rice, smaller or larger beans, and soup with or without meat. With manual settings, you have more control over the time and pressure level. Here is how to use the Instant Pot with manual pressure cooker settings.;

    Step 1. Star the Instant Pot as mentioned above.

    Step 2. Add food, seasoning and liquid to the pot. The liquid can be cold or hot; hotter liquids take less time to heat up so the Instant Pot comes to pressure quicker. Stir if needed.

    Note on stirring: If adding tomato sauce or paste, keep them on the top and dont stir too much as these foods can sometimes thicken and burn during cooking; again, this depends if water and stock are also added as when diluted, its less of a problem.

    Step 3. Get your lid and quickly check that the sealing ring on the inside is in place. If its loose or sticks out, the pot might not seal properly and it will not be able to come to pressure. Place it on top and twist it until it locks in place.

    Step 4. On older models like Duo Classic, check that the steam release handle on top of the lid is pointing to Sealing. On the more advanced models of the Instant Pot, the vent will automatically seal when the cooking process begins. On the Duo Nova the quick release button should be popped up and not pressed down.

    For a first-timer, it can feel like some sort of mysterious potential-to-explode gadget that ends up sitting in the back of your kitchen cabinet for years out of fear. Or, its only lugged out to make that pot of brown rice or mysterious batch of dry beans .

    But weve been around the Instant Pot block a few times. And were here to tell you that this little beauty basically lives on our countertop at this point. Its our rice cooker, soup maker, freezer meal magician, last-minute dinner miracle all in one. And we just cant stop.

    Can You Cook In A Pressure Canner

    An All American Pressure Canner

    The answer is: Yes, sometimes.

    It really depends upon the food you want to cook and the brand/size of pressure canner you have.

  • First, you must check the manual of your particular brand and model size to verify it is okay to pressure COOK in your canner. Some brands vary as I describe below.
  • You should avoid cooking;things that bubble up or foam because they can potentially clog and block the steam vent of the canner. A blocked vent would cause the pressure to build in the canner which would be dangerous.
  • There are two main brands of pressure canners here in the United States: All American and Presto. And there are different sizes/models;of each.

    Note: To make things just a little more confusing, Presto also makes;cookers and they call their canner a canner/cooker.

    The All American Pressure Canning manual states that you should NEVER cook the following foods in the canner: rice, applesauce, beans, cranberries, rhubarb or spaghetti plus any other food you think might foam up.

    However, the Presto Pressure Canning manual states that you CAN cook these items IF you only fill the canner half way so that the food can not foam up to the lid.

    So to cook in your pressure canner,;you must find or look up the manual for your brand and model and verify its use.

    How To Make Baked Potatoes In An Instant Pot

    Instant Pot Steam Canning: Part One

    The only equipment you’ll need when making baked potatoes in your electric pressure cooker is the trivet that comes with the Instant Pot. Alternatively, you can use your own metal steamer basket.

  • Clean the potatoes. Scrub the potatoes under cool running water and pat them dry.
  • Prick with a fork. Working your way around each potato, poke each one a few times with the tines of a fork to make small, shallow holes. This will help a little steam escape and keep the potatoes from bursting while cooking.
  • Prepare the Instant Pot. Add 1 to 1 1/2 cups of water to the inner pot of the cooker. Top with the metal trivet that comes with your Instant Pot or your own steamer basket. The water should come close to the bottom of the trivet without touching the potatoes.
  • Add the potatoes. Place one to four small cleaned and pricked potatoes on the trivet in a single layer.;
  • Cook the potatoes. Lock the lid, turn the valve to sealing, and program the Instant Pot to cook at high pressure for 12 minutes. For medium potatoes and large potatoes , Manning recommends 15 minutes and 18 minutes, respectively.
  • Use a natural release. Let the pressure release naturally before opening the lid. Open the lid away from you to deflect any steam.
  • Test for doneness. Use a sharp paring knife or fork to poke each potato and make sure they are done. If not, return them to pressure for up to five minutes.

    How To Can In An Instant Pot

    The first thing you need to do is make sure that there are no cracks on the jars that you are using for canning. Next up you can sterilize your jars in the Instant Pot.

    Put a bit of water and vinegar and then load your jars on the trivet. Close the Instant Pot and set the vent to seal. Start the steam cycle and run it for 1 minute.

    Now for the steaming process, pour your water and a bit of vinegar into the Instant Pot. Next up, pour your food into the hot jar leaving a ¼ inch headspace.

    Clean the rim of the jar. This ensures that you get a tight seal each time. Put the lid on and make it fingertip tight. His means that the moment you start to feel any resistance, you stop.

    Repeat this process with all your jars then load them into your Instant Pot. Put on the lid then set to venting and not sealing.

    This is very important to remember. Set to steam and wait for the float valve to come up. Once the float valve has come up, you can now start timing your processing.

    Once you have reached the recommended processing time for that food type, switch the Instant Pot off then allow the pressure to come down.

    This takes roughly about 2 minutes. Once the float valve comes down again, carefully open the Instant pot and take out the jars and put onto a cooling rack and leave them undisturbed for about 12 hours.

    You Can Only Pressure

    A frequently asked question around the internet is whether or not you can pressure-can in the Instant Pot and the answer is simply no. Unless you have the Instant Pot Max. If you have a different model of the Instant Pot, you can, however, do boiling-water canning, which is great for pickles and jams.     Foods That Can Be Pressure Cooked

    It is important to know what foods can be pressure cooked and those that cannot. For example, most fruits cannot be pressure cooked because the heat is simply too intense, and the fruit will break apart. Fruit needs to be canned using a gentle method like the water bath method, which would boil the fruit.

    Remember that high-acid foods do not have to be pressure cooked they can simply be water bathed, while low-acid foods need to be either pressure cooked to fully sanitize them of bacteria or brought to a high acid state with the addition of high acid foods or vinegar.
