You can store cooked beets either in the fridge or in the freezer.

Cooked beets lasts for 7 days in the fridge in air tight moisture free containers and upto 3 months when frozen.

Pro Tip: Slice/dice the cooked beets lay them on a baking tray and freeze them. Load the frozen beets in freezer safe bags and store them in the freezer for upto 3 months. This way you wont end up with a clumped frozen beet giant slab.

Tips For Best Results

  • The choice to peel the beet is up to you. Its possible to eat it, but some find it to be much like eating the skin on a russet potato. Its not great.
  • Use a trivet or steamer basket for easy removal of pressure cooker beets from the pot. It will be hot!
  • The skin should peel off easily, however, they do stain so be careful. If youre like me and dont want to use disposable gloves, peel off using a compostable paper towel. Alternatively, you could just use a vegetable peeler.
  • Beets should be fork tender. Dont be afraid to close the lid and cook for a few extra minutes if need be.
  • When beets are fresh they are typically sweeter. The earthier deeper flavor comes from beets that are slightly older. It doesnt mean they cant be eaten, its just good to be aware of the difference in taste when you want to use them in other recipes.

Tip: Beets will be very hot to the touch. Be very careful taking them out of the pot. If you are not using a steamer basket for easy lifting, make sure to use tongs to lift them out one by one.

How To Tell When Its Cooked Through

When its your first time cooking beets, you might not be sure when your beets are tender and cooked through.

Simply take a fork and pierce the beet, like you would a potato. If the fork goes through easily to the center, you know its done. If its still not done, simply put the lid back on, close the valve and cook an additional 2 minutes, then test again.

  • Place steaming rack in your Instant Pot and arrange beets on top of the rack.
  • Pour 1 1/2 cups into the Instant Pot. Put the lid on and lock.
  • Set Instant Pot to Pressure Cooker mode and cook on high pressure for 12 minutes.
  • When the beets are finished cooking, do a quick release.
  • Unlock the lid and test the beets. Using a sharp knife poke the beets. If the knife pierces the flesh without too much resistance, theyre done. If the beets still seem a little too hard, cook them under high pressure for 2 to 5 more minutes.
  • Let the beets rest for 10 minutes. Once cooled, slide the skin right off using your hands.
  • Slice up and serve.
  • Store in an air tight container in the refrigerator up to one week.

    I absolutely adore beets. Not only do they taste delicious, but the color is just stunning. I always marvel at the natural beauty of them when theyre cooked and cut up like little jewels.

    I know how to roast beets really easily, but I figured there had to be a faster way to pressure cook them in the Instant Pot. The Instant Pot is my new best friend, these days. Im known to keep cooked beets on hand so I can whip up a batch of my Borscht whenever I want, or if I have friends stop by I can make some Beet Hummus quickly.

    The Instant Pot came through again, and I was right! Its a faster and easier way to cook beets perfectly every time. Ill tell you how I do it.

    You want to work with really clean beets. I spend some time scrubbing them, and then I trim off the greens on the stems, leaving about 1 inch. Dont throw away those greens though, heres how I cook beet greens theyre delicious.

    To cook them, all you do is add some water to the bottom of the Instant Pot and put the beets on in. I pressure cook them for 20 minutes and let it naturally release for a bit before releasing the pressure manually.

    Now you have perfectly cooked beets to use in whatever youd like.

    How Long To Cook Beets In The Instant Pot

    Instant Pot beets two ways

    For soft

    • Small beets: 15 minutes, 10 minutes natural pressure release, then quick release.
    • Medium beets: 20 minutes, 10 minutes natural pressure release, then quick release.
    • Large beets: 25-30 minutes, 10 minutes natural pressure release, then quick release.

    For semi-soft

    • Small beets: 10 minutes, 10 minutes natural pressure release, then quick release.
    • Medium beets: 15 minutes, 10 minutes natural pressure release, then quick release.
    • Large beets: 20-25 minutes, 10 minutes natural pressure release, then quick release.

    Mixed sized beets:

    • 20 minutes, 10 minutes natural pressure release, then quick release.
    • You can also cut the larger beets in halves and choose your cooking time accordingly.

    How Long Do Beets Last

    Raw or uncooked beets will last for a month or more in the crisper drawer of the refrigerator. Twist off the stems and store, checking them periodically for freshness.

    Cooked beets will last 3-5 days in the an air tight container in the refrigerator. Though they never last that long at my house.

    How To Make Instant Pot Beets

    Heres our method for how to make beets in an Instant Pot. As youll see, theres a bit of variation based on the size of the beets. Youll need to estimate the timing, and then adjust as necessary. It makes for perfectly cooked, tender beets in just 30 minutes. Though the Instant Pot doesnt always cook things faster, in this case pressure cooker beets are half the time of roasting in the oven.

    Time Chart To Steam Perfect Beets

    First, when I started steaming beets in instantpot, I simply placed 3 different sizes of beets and just cooked them on high pressure for 20 minutes.

    Smaller beets were overdone and bigger size beets were underdone. It was a realization that definitely it depends on the size of the beetroot, for how long they should be pressure cooked.

    This was the experiment I did, Bought 3 beets of the same size and another 3 of different sizes. Measured their circumference using a measuring tape.

    Steamed for different amounts of time as per their size and the texture I look for. I prefer soft & easy to cut through texture and doing this experiment I could get the perfect cooked beets.

    Cooking Perfect Beets in Your Instant Pot

    Im canning beets today from our garden. I cleaned them really well, leaving a portion of the tops. Then I put them in the Instant Pot with 1 cup of water 12 minutes on high pressure. Do a Quick Release releasing the pressure manually. Put the beets into a colander and run under cold water. They were so easy to peel, I was able to do it with one hand while filming with the other.

    Then proceed like you normally do with your canning recipe. This is how I do mine. I peel and quarter them and place in sterilized jars. I add boiling water leaving 1 head space. Add, 1/2 tsp salt to each pint jar. Put on lids and rings. Beets need to be processed in a pressure canner for 30 minutes using #15 lbs pressure The pressure canner looks like this:

    This was the easiest way to prepare beets that Ive ever done and Ive been doing this for over 48 years.

    I made a video, but I called it a pressure canner instead of Instant Pot! DUH ??Its one reason I dont do videos, Im not very good at it! lolIt was the last beet to do thats why I didnt retake it, but I will share it with you anyway! You have to give me credit for shooting a video with one hand and peeling the beet in the other.

    Cook on MANUAL or PRESSURE COOK Mode. The size of the beets will determine how many minutes you need to cook whole beets.

    • small size cook for 10-12 minutes
    • medium size beets choose between 15-18 minutes and
    • larger beets cook for 20-25 minutes.
    • If you cut the beets in half or into quarters, you can reduce cooking time to 10 minutes across the board.

    Cooling & Peeling Beets

    Once the beets are done cooking, turn off the instant pot, leave the lid off and let them cool in the instant pot.

    Once the beets are cooled down, you can easily handle them and remove the outer peels. The nice thing about cooking in the instant pot, is the peels come off so easily!

    Some people prefer the skin on the beets, and thats totally fine. Theyre edible!

    If you decide to leave them on, theyll add a chewy texture to the outside of your pickled beets.

  • Pour Water: Add water in the steel insert of the instant pot.
  • Add Rinsed Beets: Place the steamer rack and place the rinsed whole unpeeled beets on the metal rack.
  • Pressure Cook: Pressure cook on HIGH and set the time according to the size of the beets . Allow the pressure to release naturally than open the lid.
  • Peel & Serve: Check for doneness by inserting a knife inside the beets. Bring them out, allow them to cool down a bit. Than slowly slide off the skin of the cooked beets. Chop, dice, slice and serve them with your favorite seasonings and toppings. Enjoy!

  • No need to peel skin or chop beetroot before cooking. Note if you do chop up raw beets, cooking time will again vary. You will need to reduce the cooking time.

    We found that if we wash our hands, towels, or chopping board with tap water immediately after handling the beets, the red coloring washes off fairly easily. But when we let it sit too long, the blood-red stains can be a little scary on your fingers.
