This Indian cabbage and peas stir fry goes by many different names, including bandh gobi matar or patta gobi matar. Both patta gobi and bandh gobi translate to cabbage, and matar means peas.
Chances are you wont find this dish served in an Indian restaurant its not fancy, and it doesnt call for cream or butter. But go into an Indian home, and you may find this on regular dinner rotation at least, that was the case for me, growing up in a Punjabi home. This is real Indian food or maybe I should say everyday Indian food. Cabbage and peas sabzi is the kind of thing an Indian mama/parent will make for you.
Ive mentioned this in previous blog posts, but the great thing about cooking Indian vegetables in an Instant Pot is that you can cook a dry dish. Not everything you cook needs to end up wet and soupy. This cabbage dish is a great example of a stir-fry/sauté dish you can make in a pressure cooker. It takes far less time than if you were to make it on the stovetop, and you dont need to add much water to the pot because vegetables naturally release water.
That said, when you make this recipe, please be sure to use freshly sliced cabbage. Pre-cut cabbage will become overcooked/mushy under pressure.

Usually, A lot of people buy 2 instant pots- a 3 Qts and a 6 Qts. Some also buy extra inner pot so you can use it to store food too.
Based on how much space can you spare on the kitchen Counter, you can go for a small 3 Qts to 8 Qts.
The price of Instant pot varies from $79 to $800.

Traditional Pressure Cooker Or Instant Pot For Indian Cooking
After using a traditional pressure cooker for years and Instant pot for 2 months now I think both do the job wonderfully. With stovetop pressure cooker the problem is you have to watch the whistle and cooking time, with Instant pot being a programmable cooker you just set the time and forget it.
You can take the hint of my love for egg recipes from the exhaustive varieties of egg curry recipes and omelettes on my tasty curry. A similar love has developed for instant pot recipes. The similarity being, they are both simple, require minimum effort from my side and give the maximum results.
An instant pot has surely become the talk of the town lately. I use instant pot on daily basis for my everyday Indian cooking and am trying to master the Instant pot basics. I now cook rice, curries, pulao, soups and so many one pot meals in the Instant Pot.

Yes, there are some things that you cannot make in it, such as the Indian bread or roti. But other than that, a lot of recipes can be easily converted into pressure cooking. See some recipes here.

How To Make Yogurt In An Instant Pot:
I know what youre thinking making yogurt in an Instant Pot sounds a little strange. While its a tad unconventional, its sure convenient! While it takes a long time to cook, the prep time is only 5 minutes, which is something anyone can get behind! Another plus is you only need two ingredients: ½ gallon of milk and two tablespoons of prepared yogurt with cultures.
In order to make yogurt in your Instant Pot, follow this easy recipe by A Mind Full Mom:
- Pour milk into the inner pot of Instant Pot. Push the yogurt button until the screen reads boil. This will take about an hour.
- Once the Instant Pot beeps that the boil cycle is complete, carefully remove the lid and test the temperature. It should be around 180 degrees Fahrenheit. Let the inner pot sit in Instant Pot for 5 minutes and then remove the inner pot.
- Allow the milk to cool to 105-115 degrees. This will take an hour on the countertop or about 15 minutes if you place your inner pot into an ice bath.
- Gently skim off the skin on the yogurt and discard.
- Whisk in the prepared yogurt.
- Place inner pot , put lid on and press the yogurt button again and then adjust until the screen reads 8:00.
- Once yogurt beeps that it is complete, store in glass jars or a large plastic container in the fridge.
- This is a great time to freeze some yogurt for future yogurt making.
Once youve started making your own yogurt, youll never want store-bought again!

Why Does my Instant Pot says Burn?
Instant pot says burn when there is not enough cooking liquid to generate enough steam to create pressure. This results in bottom of the pot becoming very hot and triggers the burn code. Mostly Instant pot burn error happens when you are cooking food with higher amount of starch and have not added enough liquid.
