Some people worry about smells trapped in their silicone sealing rings they keep a second ring for recipes with a strong smell, like chilis and currys. For those people, a set of color-coded rings is an obvious purchase.

As you can probably tell from my those people attitude, I dont bother with separate rings. Yes, I can smell something on the ring when Im done with some recipes. When Im done cooking, chili or not, I clean my sealing ring in the dishwasher. After it dries, I store it loose in the lid, upside down on top of the cooker base, to let it air out. Ive never noticed any smells transferring between cooks.

That saidI do keep a second ring on hand, as a backup. This is a holdover from my stovetop pressure cooker days. Gather round, kids, and let me tell you about the before times. In the good old days, pressure cooker sealing rings were made out of rubber. They had to be hand washed none of this fancy machine dishwashing, no sir! And they worked greatfor a few years. Then they would lose their flexibility. When the lid started leaking steam in all directions, it was time to replace the ring. And we liked it that way!

Ahem. Sorry. Where was I?

Long story short: When I buy a new pressure cooker, I also buy a second sealing ring, just in case. If I have a second ring, why not make it colorful? I think Im part hummingbird, attracted to the reds and blues. Do I need more sealing rings? No. But theyre so pretty. I had to have them.

Instant Pot Porridge Setting

The porridge setting on the Instant Pot can be used to cook oatmeal using old-fashioned oats and steel-cut oats, rice porridge and congee or porridge-like dishes that use a mixture of grains that expand in liquid. Ideally, you should use natural release when cooking high-starch foods that expand or a combination of 5-10 minutes natural release and quick release to follow. Below is how to use the Porridge setting on Instant Pot.

  • Turn the Instant Pot on, it will say OFF to indicate the Stand-By mode. Add the grains, liquid and spices or fat if you wish. Secure and lock the lid. Press the Porridge button. The default setting is pre-programmed to set the pot to cook at High pressure for 20 minutes. If you press the Porridge button again, you can adjust the mode from Normal to Less or More.
  • Less mode 5 minutes at High pressure this is suitable for cooking rolled oats and risotto-like porridge or rice porridge with slightly firmer to bite texture.
  • Normal mode 20 minutes at High pressure use for steel-cut oat porridge or rice porridge with a slightly softer texture and for making congee.
  • More mode 30 minutes at High pressure use for a porridge/congee that contains a mixture of beans or tougher grains.

If desired, use the / + buttons to further customize the time. The cooking time may be adjusted at any time during pressure cooking.

-Natural release. If you do NOT do a quick release by pushing the valve to the venting position, the Instant Pot will naturally begin to release the steam on its own immediately after the programmed cooking time is over. This allows the pressure to naturally dissipate on its own. It will start counting to let you know how many minutes it has been releasing the pressure. Usually this takes about 10-20 minutes depending on what and how long you have been cooking something.

I was holiday shopping on Amazon, and noticed some new Instant Pot silicone accessories. I love their silicone pinch mitts, so I bought the new silicone steam rack and colorful sealing rings to test them out. Here are my thoughts after using them for a few weeks:

So How Do Instant Pot Settings Work

Each Instant Pot setting button is essentially a SMART PROGRAM option. Most smart programs, or buttons, simply set the pot to HIGH or LOW pressure for a specific period of time most closely aligned with the food it is meant to cook. For example, the default SOUP button sets the pressure cooker for 30 minutes at HIGH pressure, which you could use to cook any food that requires that much time and pressure.

If you press each SMART setting button more than once, it will toggle between Normal, Less or More options, which gives you more control of time, temperature or default pressure. For example, the RICE button can be set to Less or More depending on how soft or firm you like your rice or the type of rice you might be cooking.

Some buttons dont use the pressurizing function of the Instant Pot. For example, Slow Cook and Sauté settings use the heating element that sits underneath the inner pot. They are programmed for heat level and time.

To keep it super simple, it is possible to use the Instant Pot for all recipes using just a few important buttons. With the Pressure Cook or Manual buttons in addition to the Pressure Level and and buttons, you can control the time and pressure level which are otherwise preset for the rest of the buttons. This will work for any recipe that requires pressure. For non-pressure cooking, the Sauté, Slow Cook and Yogurt buttons help you accomplish a similarly custom cooking setting.

One reviewer illustrates the glory perfectly: I had a dozen new eggs and was anxious to try my new Aozita stackable egg steamer rack trivet. I had already had some egg failures and thought, What the heck, Ill put the whole dozen in. This time I didnt set it on Manual, which at least one source recommended. I set it on Steam and put the whole dozen in, leaving only the center spots free. I was a little cautious lowering the trivet and eggs into the Instant Pot, but there were no falls and no breakage. Not quite enough room for trivet plus fingers, so I dropped it in when my fingers couldnt reach any farther. No problems. I ended up with a dozen perfectly hard-boiled eggs. I probably should have taken them out before all the pressure was gone instead of falling asleep and remembering hours later, but they were great and super-simple to peel. Goodbye, old egg cooker. Youll be confined to the cupboard until I find something the Instant Pot cant do. The trivet was a great purchase.

How to use Instant Pot as a Pressure Steamer

Now, I almost didnt buy this one. My first thought was: Whats wrong with the metal steam rack that came with my Instant Pot? Why would I want one of these floppy things?

Why? Because those floppy handles are fantastic! They are a lot easier to grab than the thin, slippery wires on the standard rack. And, the flexible handles wrap around the sides of my pressure cooker cheesecake pan. I dont need to make foil slings for cheesecake any more that alone is worth the $8.99. I have a new favorite rack for my pressure cookers.

Change The Size Of The Meat

Large cuts of meat require much longer in the pressure cooker than that same cut of meat diced into bite-size pieces. So if you want to cook a side with a longer cook time, consider changing up the size of the meat. For instance, the thinly sliced beef strips in Beef and Broccoli only take 12 minutes at high pressure, so theyre too long for white rice and too short for brown rice. However, beef cut into 2- or 3-inch cubes would need about 20 minutes at high pressure, making them a good match for brown rice, which has a 22-minute cook time and a 20-minute natural pressure release.

Cooking Multiple Recipes Together

This method is only applicable to foods that have the same cooking time and temperature. First, fill the inner pot with 2 cups of water and adjust a trivet at the bottom.

Place the dish containing your food on this rack. Lay another rack over the food dish. Place the second dish of food and let the instant pot do its job.

Reasons To Use A Pressure Cooker Steamer Basket

If you use a pressure cooker in your kitchen regularly, then having a steaming basket or even a silicone steamer basket is always a good idea because it allows you to cook a variety of foods that are elevated, rather than sitting directly on the surface of the inner pot. They are also usually dishwasher safe like most pressure cooker models, so you don’t have to worry about excess cleanup following your meal.

Elevation like this allows for a calmer cooking environment and allows you to make more delicate foods much easier. It is also good for foods that you don’t want sitting in the liquid in the base of the pot for example, when you make certain desserts.

The following are a few good reasons to use a pressure cooker steamer basket:

Cooking Eggs. This is a delicate food, and you don’t want them sitting in the bottom of the inner pot and able to move around and become broken. The basket allows you to cook hard-boiled eggs without the frustration of them rocking and breaking under the pressure.

Vegetables. If you have tougher vegetables you want to cook, then the steamer basket can help. It elevates them above the liquid, so the veggies dont soak it all up from sitting in it. Potatoes are a good example of when to use the steamer basket.

For Baking. When you are making desserts like cakes or cheesecake, or you want to try your hand at baking bread in your pressure cooker, then the steamer basket comes in handy again to keep the food above the water or other liquid.

The nice thing about this Steamer Basket is that it doubles as a colander. You can use it to do my everlasting berry hack, to prevent your berries from molding for weeks!

I typically do this in my salad spinner because theres a colander that fits into the base, but if you dont have that, you can use this basket and your Instant Pot liner! Its the perfect size!

To Use The Instant Pot For Pressure Steaming Use The Following Method:

  • In the pot, place a cup of water and set the trivet inside.
  • Put your food which needs to be steamed on top of the trivet and shut the lid.
  • Switch the venting knob to the sealing position.
  • To turn the pressure cooker cycle on, press the manual button and set the cooking time.
  • After it is finished cooking, release the pressure by switching to the venting option.
  • Open the lid.
  • I’m Not Sure I Can Blindly Steam My Food In The Instant Pot What’s The Traditional Way

    It’s completely understandable if you’d still prefer the old-fashioned way, since you can’t check on the food while it’s steaming with the Steam button. Figuring out the right cook times without ruining the food can be frustrating if you don’t have the patience for it, here’s how to do it the traditional way, except still in the Instant Pot.

    Please keep in mind that this method does require a glass lid that fits over the Instant Pot. It can be any glass lid you already have in the kitchen, but Instant Pot does sell its own glass lid if you need to buy one.

    To use your Instant Pot as a traditional steamer, just pour in at least one cup of water into your liner. Then place the trivet at the bottom, and set a steamer rack or basket on top of the trivet. Place the food you want to steam inside the basket or rack, and then push Sauté. You can adjust the temperature of Sauté mode by pressing the More button after initiating Sauté. Then just wait for the water to start boiling to create steam, and then place the glass lid on top. Allow the food to cook, though you can lift the lid off to check up on the food periodically. Once the food has reached your desired doneness, push the Cancel button to stop cooking.

    Like the traditional stovetop method, this does require a bit of babysitting, which is one reason why I prefer the Steam function.

    How To Use The Instant Pot For Pot In Pot Method

  • Fill the inner pot with at least 1 cup of water.
