Instant Pot Farro Salad | How to Cook Farro the Easy Way

Since farro cooks so quickly in the Instant Pot, its often ready before I need it. If this happens, you can leave the Instant Pot set to Keep Warm for 30 minutes.

If the farro gets cold or is refrigerated, you can heat it in the microwave. Just add a bit of water and loosely cover it. Microwave it for 45 seconds at a time, stirring in between heats, until heated through.

How To Make Instant Pot Mushroom Farro Risotto

Start by turning the Instant Pot on Saute and press the Saute button until its on More.; Add the butter to the stainless steel pot.;When its melted add a finely chopped onion and cook for about a minute .

Then add sliced mushrooms and cook for 3 more minutes, stirring occasionally. You can use any type of mushroom here Ive made this successfully with shiitake, baby bella , and white button mushrooms before. Finally, add some garlic and saute for another minute.

Add the farro and vegetable broth and stir, scraping up anything that has stuck to the bottom of the pot. This helps to prevent the dreaded Burn error .

Note that if you do get a Burn notification it sounds a lot;worse than it is. It just means that some stuff is stuck to the bottom of the pot. It happens to me when I havent used enough liquid or when Ive used a tomato- or cream-based sauce that is touching the bottom of the pot.; To remedy the situation, release the pressure, open the lid, and stir well, scraping up any bits on the bottom of the pot.; Try turning the Instant Pot on again for the remaining time.; If it burns again, then release the pressure, take off the lid, and turn the pressure cooker on Saute to cook the rest of the way.

Lock the Instant Pot lid in place. Close the pressure release valve and press the Pressure Cook button until its on Normal and press the Pressure Level button until on High . Press the +/- buttons until it says 00:10 for 10 minutes.

What To Make With Farro

You can mix farro in with meat like in these amazing meatballs with farro and rosemary in them and you can mix it with cheese to make a really delicious side dish, like this easy creamy side dish with spinach and cream cheese.

How To Store Leftovers

  • Refrigerator: Leftovers can be stored in the refrigerator for 5 6 days.
  • Freezer: Cooked farro is can be stored in the freezer for 2 3 months. To freeze, spread the grains on a baking sheet in a single layer and place in the freezer for at least 2 hours. Once the grains are frozen, transfer to freezer-safe containers or bags. Its important to not skip the initial single layer freeze, or the grains will freeze in one giant clump!
  • Make ahead: Farro is great to make ahead so you have it on hand for a quick lunch or dinner.
  • Reheat: Warm on the stovetop over low, adding a splash of water for a little moisture, until warmed through. Alternatively, reheat in the microwave using 30 60 second intervals, stirring between each interval, until warm.

Cooking time for farro depends on the type of farro youre using.

  • Pearled farro: 15-20 minutes with no pre-soaking required.
  • Semi-pearled farro: 25-30 minutes with no pre-soaking required. You can presoak to cut down the cooking time to 15 minutes.
  • Whole grain farro: 30-60 minutes, depending on how long it has been soaked. Ideally, whole farro should be soaked overnight.

However, if you’re cooking whole grain farro, which takes the longest amount of time to cook, it will be easier to cook if you soak it overnight. Soaking whole grain farro in cold water overnight can cut the cooking time in half.

What If I Dont Have Sumac

  • You can substitute 1 teaspoon of lemon zest.

Not only does this mean theres less of a chance of it coming out undercooked, but it also means you dont need to worry about getting the ratio of farro to water just right. As long as the farro is completely covered in boiling water, youre good! Here are a few tips to keep in mind before you get started.1. Rinse your farro. Farro is sometimes covered in a dusty residue as a result of processing. To remove it , always rinse your farro under cool, running water in a fine-mesh strainer before cooking it.2. How To Cook Pasta In Instant Pot

  • For every 4 oz. of pasta you cook, use two cups of water.
  • Add 1/2 tablespoon of oil or butter for every 4 oz. of pasta you use.
  • If youre cooking pasta in sauce in your pot, simply substitute water for the sauce. Make sure to use some of both, though!
  • Make sure to read the cooking instructions for the type of pasta youre using. You can simply convert that time to Instant Pot time by halving it, minus 1 minute and using HIGH pressure. Finish up with a quick release. For example, if penne pasta needs 9 minutes of cooking time, you can use this calculation -1=4 minutes.;

What Is Farro Anyway

Farro is an ancient grain that is a relative of todays wheat. It is a great source of both protein and fiber, even moreso than quinoa.

According to Bobs Red Mill it is easy to digest and a great source of iron too. It can be used in a lot of the same ways you would use rice or barley.

When cooked, it has a great chewy texture and a nice nutty flavor. It makes a great base for salads and would be a lovely substitute for barley in the asparagus barley and chickpea salad.

It also goes well in soups like my creamy mushroom soup. The nuttiness would really be delicious with the earthy mushrooms.

But in todays recipe it is a nice filler for a hearty hot meal. It takes almost no effort to cook with the help of the pressure cooker.

Our Love Hate Relationship With Kale

Of course we know kale is good for us. It is also fiber rich and packed with nutrients.

I love that it is hearty enough you can make a salad from it and it lasts for days. It doesnt wilt and get wimpy like a lettuce salad.

You can make a lemony kale salad on the weekend and eat it for lunch throughout the week. It holds up well for quite a few days!

We get kale in more CSA boxes than we dont throughout the summer and my husband is done after one salad. So I try to come up with heartier ways to serve it otherwise Id be on my own eating the kale from the second week on.
