What Condiments Goes With Corned Beef
I mean you can really serve it with anything but typically regular and a variety of gourmet mustards are known to pair well with this cut of meat.

While the beef cooks, wash and prepare the vegetables. The potatoes should be cut into 1-inch chunks, the cabbage into 3-inch wedges, and the carrots peeled and cut into 1-2 inch pieces.
When the timer for the beef goes off, quick release the valve and wait for the pressure to release fully before taking off the lid.
Carefully remove the whole corned beef, add the vegetables to the bottom of the pot, and stir to coat them in the vinegar mixture.

Do You Rinse Corned Beef Before Cooking
NO! I mean some people do in order to minimize the overall sodium content but it will drastically change the taste since the brine is really where its at with this.
- Just remove it from the bag and put the small seasoning packet aside, I do rinse that off. Place it into your pot, or in this case on top of your potato trivet.
- Use some sort of liquid to essentially steam it, beer is best in my opinion.
If youre concerned about the alcohol, it really is cooked off in the process so youre just getting the flavor.

Tips For The Best Instant Pot Corned Beef
- Potatoes: To get the best results you want to use waxy potatoes that wont break down as easily when cooked. Yukon golds or yellow potatoes, red potatoes and fingerlings are all ideal choices. Avoid russets, they can break down into mush when cooked.
- Carrots: Yes baby carrots can be used and are convenient, but if you have the time use large carrots peeled and chunked. They will give you better flavor and hold up nicely to the instant pot.
- Pickling Spices: Almost all corned beef will come with a package of spices with it. This is the same as pickling spices and you can just use them for ease. If you do not have a packet use a combination of allspice berries, coriander seeds, mustard seeds, whole pepper seeds, bay leaves and whole cloves. Salt and pepper to taste.
- Cut against the Grain: This is one of the most important steps for insuring tender, melt in your mouth meat. As you look at your corned beef youll notice how the strands of meat lay in one direction, usually lengthwise. You are going to want to cut against that or at a perpendicular angle. This automatically will help the meat be tender and not fibrous when you eat it.
- Leftovers: Store leftovers tightly wrapped or in an airtight container for up to 5 days. You can freeze it for up to 3 months. Thaw and reheat as desired.

When the corned beef has cooked for 85 minutes and the pressure has released for 20 minutes, I like to transfer the brisket to a baking pan to rest. When ready to serve, slice the brisket against the grain in 1/8 to 1/4-inch slices. The spoon a bit of the reserved cooking liquid over the slices on the platter. Serve a whole grain mustard on the side for dipping.

Adding vegetables to an Instant Pot corned beef dinner is a breeze. I love the flavor that the pressure cooker infuses into the vegetables from the beer-based cooking liquid. I dont usually get that excited about boiled or steamed cabbage wedges, but I really enjoy the flavor of these.

As with most classic recipes adapted for pressure cooking, this Instant Pot Corned Beef will require less liquid than traditional methods, like stove top or slow cooker. Most recipes call for 5 to 6 cups of liquid. Because of its sealed nature, the liquid in the Instant Pot doesnt evaporate as quickly. Thus, this recipe will use only 3-1/2 cups of water. The spices remain the same, 2 tablespoons of pickling spice. And this is enough to perfectly infuse the brisket.
Most Instant Pot meat recipes only require the minimum pressure cooker liquid, usually 1 to 1-1/2 cups. Ive increased the liquid here to balance the saltiness of the brisket.
