Prep And Cook The Pork

  • Turn on the saute setting on your Instant Pot. Melt the butter and then cook the onions in it until theyre softened. Add some garlic and cook it with the onions for about a minute.
  • Add some more butter to the pot and, once its melted, sear the pork roast on each side for 2 to 3 minutes or until it develops a nice golden crust.
  • Remove the pork roast and add some Worcestershire sauce to the pot with the onions and garlic. As it simmers scrape up all of the brown bits off the bottom of the pot.
  • Place the trivet in the pot and place the pork roast on it.
  • Secure the lid, close the vent, and set the Instant Pot to manual high pressure for 70 minutes.

  • Choose the chuck roast, trust me!
  • Dont skip searing. Its where youre going to create loads of flavor for your Instant Pot pot roast recipe
  • Leave your potatoes whole! They turn out just right using this method.
  • Larger chunks of carrots will yield better results. You can use baby carrots, but they may be a bit too soft at the end of cooking.
  • BONUS GRAVY: You can remove the meat and vegetables to a serving dish and create an optional gravy with the liquid in the pot. Just whisk together 1/3 cup of cold water with 3 tablespoons cornstarch. Set the pot to sauté, high and let the mixture bubble, then whisk this mixture into the liquid in your pot. Start off with a small amount mixed in then add more if necessary based on the amount of thickening you desire.

Tips For Making The Best Instant Pot Pot Roast:

  • Like I mentioned before, please do not add the veggies for the first cook time. You do not want your veggies cooking an extra 60+ minutes under high pressure! 3 minutes and they are perfectly tender and fluffy.
  • You can skip searing the meat if you need to cut out some prep time, but it does add significant flavor to the dish overall. If you dont sear, youll find that your juices will be more beefy and you will taste less of the other flavors.
  • If you need to save some time, cut the roast into 2-3 chunks and pressure cook for 40-50 minutes, or save even more time by using pre-cut stewing beef.
  • All of my Instant Pot recipes are tested in a 6 quart Instant Pot.

How To Cook A Frozen Roast In An Instant Pot

Wondering if you can cook a frozen chuck roast in your Instant Pot?

Well, the short answer is yes! The long answer is a bit more complicated. Please note that your results will be much better if you used a thawed piece of meat, but, I know that sometimes you really want to make a pot roast and the only meat you have on hand is frozen. Been there, done that!

If you do decide to cook a frozen chuck roast, youll want to add about 5 extra minutes per pound of cook time and skip the searing step. Since youre adding so much cooking time, I would suggest doing a quick release after the first 70 minutes, then adding the vegetables, and cooking on high pressure for an additional 15-20 minutes.

I make frozen chicken breast in an Instant Pot all the time, but with a beef roast, you will find that the outside cooks much faster. This can mean result in the outer layers being overdone by the end of the cooking time.

Once you try making your pot roast this way, you will never make another pot roast any other way. This truly is the ultimate Instant Pot pot roast recipe ever! Pot roasts used to be something I only cooked on the weekends because it took way to much time to cook in the oven during the week. But, we live in a world where we have an Instant Pot that can tackle any meal pretty much in a fraction of the time. So now I can make this ultimate instant pot, pot roast anytime I want. I dont have to make sure I am home to monitor the roast the entire day.

With the natural release at the end of the cook time, it really helps tenderize the meat and locks in all the flavors like it has been cooking the entire day. You pull it out and dish it up for that same flavor you grew up eating.

Browning your roast on both sides adds a whole new flavor and texture to your meat. I learned that years ago, and I always quickly braise both sides. You can easily prepare a pot roast using a frozen chuck roast when cooking in the Instant Pot. Unlike slow cookers, the Instant Pot will get hot enough in a short amount of time to safely cook frozen meat.

  • Skip searing the meat, as you can not sear a frozen cut of meat.
  • Place the frozen beef roast, salt, pepper, garlic, and onion powder inside the pressure cooker.
  • Pour in beef stock around the roast, then top the roast with horseradish.
  • Cook on high pressure for 30 minutes per pound For a 3-pound roast that would be 90 minutes.

What Cut Of Meat To Use For Pot Roast

I highly recommend chuck roast. These do have a higher fat content, and it is marbled throughout. The grass fed, grass finished ones tend to be a little less fatty, FYI. And they work great. It is actually what I am using for this recipe.

How To Make Gravy

While I find that this Instant Pot Pot Roast is so flavorful and so juicy, there is no need for gravy, you certainly can prepare gravy using the remaining cooking liquid. And you can do this right inside your Instant Pot! Yay for one-pot meals!

  • After cooking the roast and vegetables, strain off the cooking liquid.
  • Turn the Instant Pot to saute and let heat up.
  • Add 2 tablespoons of butter to the inner pot and let melt. Once the butter is melted, add in 2 tablespoons of flour and whisk together, to form a roux.
  • Let the flour mixture cook for 30 seconds and then slowly whisk in 1 to 2 cups of the strained liquid.
  • Cook, whisking constantly until the mixture is thickened.

Its time for a new Instant Pot recipe and one of the most requested and most popular recipe is Instant Pot Roast Beef and Vegetables.

One of the main reasons that I purchased my Instant Pot was to make roast beef in a fraction of time that it took to make in my slow cooker.
