When you prefer beef Stroganoff as just the meat cooked in the sauce, it can be served in a variety of ways: over egg noodles or pasta, rice, mashed potatoes or quinoa. However, in our recipe, everything is cooked in one pot so its ready to be served as is. The only compliment would be a side dish of vegetables or a salad.

Tips For Making A Successful Instant Pot Beef Stroganoff:

  • Dont overcook the meat, or it will become tough. Just barely sear it on all sides.
  • Add a small spoonful of the heated beef sauce/gravy to the sour cream. Stir it to combine. Continue adding small amounts, a little at a time, to bring the sour cream up to the same temperature as the sauce. This is called tempering. It will keep the fats in the sour cream from separating and breaking.
  • Make sure to deglaze the pan well otherwise, you may get a burn warning. See #5 above for detailed information on deglazing.

As a teenager, it was one of the things I learned to cook right after mastering microwave Kraft dinner. To this day I can still taste its salty, salty sauce. I had no idea it even was supposed to contain mushrooms.

As a grown-up, I still crave both the delicious taste AND the speedy preparation that were hallmarks of that pre-packaged ground beef stroganoff comfort food.

Also as a grown-up, I want fewer processed meals and more fresh or natural ingredients. Yes, I want Hamburger Helper taste, but without the sodium-infused blood pressure bump. And I want it now. Please.

Enter, as is so often the case, the Instant Pot.

A pressure cooker is a great tool for turning frozen meat into fast meals in a hurry.

Cooking Tips For Instant Pot Beef Stroganoff

  • Be sure to cut the mushrooms into thick slices, unless you want the mushroom pieces to be very small after cooking.
  • For firmer noodles, reduce the pressure cook time to 2 minutes plus 5 minutes natural pressure release. After 3 minutes of pressure cooking plus 5 minutes NPR, the noodles are quite soft.
  • Use full fat Greek yogurt, not nonfat, or it may curdle when you stir it into the stroganoff. Also prevent curdling by whisking a little warm broth into the yogurt and letting the stroganoff cool for a few minutes before stirring in the yogurt/broth mixture.

BEEF Using a higher quality steak works great in this recipe but the pressure cook setting on the instant pot will turn even tough cuts of meat into tender bites. So you can use a less expensive cut of meat like flank steak and skirt steak with ease.

GRAVY Some people prefer their gravy with dijon mustard and Worcestershire sauce for extra flavor, but you may omit them if desired. You can substitute the sour cream with Greek yogurt if needed.

  • Cook with your favorite wine. Add a splash of red wine into the beef broth mixture before cooking.
  • Watch the noodles. Its important not to overcook your noodles, and egg noodles in this recipe only need about 5 minutes in the Instant Pot.
  • Spice it up. If youre craving a little bit of heat in your pasta, you can add just a dash of smoked paprika, chili powder, or cayenne powder. Note, though, that the traditional beef stroganoff recipe does not include these spices.

For this dish, the sauce really comes together from all of the ingredients. From the beef drippings and the mushrooms, garlic, and butter all cooking down together to the broth, worcestershire, and sour cream added at the end, all of these things make the sauce happen. And it makes them so finger-licking-good too!

Other recipes might call for paprika, white or red wine, or fresh herbs. Others might ask you to add onion, Dijon mustard, or milk. Those are all fine to add as well to suit your own tastes. Cooking in the Instant Pot can sometimes result in a LOT of sauce that needs a little thickening. A lot of Stroganoff recipes use flour to thicken the sauce and sometimes I do too.

For a keto / gluten free version you can replace the flour with Xanthan Gum, which will thicken the sauce and give it a very nice gloss. Worth remembering that the sauce will thicken a little as it cools.

Which Cut Of Beef To Use For Beef Stroganoff Stew

This recipe works best with more tender cuts of beef, which require little cooking time. I used rump steaks in this recipe, which are more affordable and very juicy. Simply slice them into strips or cubes.

For a budget-friendly version, I use less meat and add more mushrooms, onions, peas and sometimes even potatoes or carrots

Thickening the beef stew: I am only using 1 cup of beef stock, which might not seem enough, but the mushrooms will release quite a bit of liquid during cooking. The sour cream will thicken the stew slightly, however, I also dissolve a tablespoon of tapioca flour or arrowroot flour right at the end, this is the brand we like. If gluten is not an issue, you can also add regular flour to thicken the stew. Cornstarch and rice flour are also okay.

Prepare boiled or mashed potatoes, rice or pasta while the beef stew is cooking. Serve with a salad or steamed greens on the side.

Dairy-free/Whole30/Paleo: Omit the cream but feel free to add a couple of tablespoons of coconut cream instead. Thicken with tapioca flour or arrowroot as per recipe. Serve over zucchini noodles or cauliflower rice and this recipe is then paleo and Whole30-friendly.

How To Make Beef Stroganoff In Your Instant Pot

Its so easy in just four simple steps! For this recipe, youll use the saute feature and the high pressure setting to make this delicious dinner.

First, you will turn on the saute feature and place the butter, garlic, onion and mushrooms in the pot. Once the butter is melted, add the flour and stir so it mixes with the butter and coats the veggies. The flour is what helps thicken the sauce once you add all the liquids.

Once youve cooked the vegetables add the beef broth, Worcestershire sauce, stew meat, salt, pepper, and mustard. Stir it all together until its well combined. Secure the lid, close the steam vent, and set the manual pressure setting to high for 15 minutes.

When the timer goes off, do a quick release and once the pressure has released open the Instant Pot. At this point, add the uncooked noodles and place the lid back on and close the valve. Set the manual pressure to high for five minutes. Once the timer goes off do another quick release and then take off the lid.

Stir in the sour cream and dinner is ready to serve! The sauce will thicken up as it stands.

The best thing about using an instant pot to cook beef stroganoff is you won’t be needing expensive prime steak cuts like rib eye, beef sirloin, or beef tenderloin or sirloin.

Inexpensive beef cuts that are sold as braising beef work well for this recipe including blade, chuck, skirt, leg, and flank. Choose a cut with a nice marbled fat so it doesn’t dry out during pressure cooking.

This Instant Pot stroganoff recipe uses flour, and so it is not gluten-free.

However,you can easily make this dish gluten-free by leaving out the flour and instead of using a gluten-free thickener like cornstarch. Use half as much cornstarch for the ratio of flour .

Egg noodles also usually contain gluten. However, there are gluten-free egg noodle varieties you can use instead. Or, serve over a gluten-free side dish such as mashed potatoes.

Slow Cooker Ground Beef Stroganoff Instructions

Prepare the ground beef, onions and garlic on the stovetop in a skillet .

Add browned ground beef, onions and garlic to the slow cooker. If desired, saute the mushrooms in the same skillet you cooked the beef, adding a tablespoon or two of butter or oil, saute until soft.

Add to slow cooker or crockpot. Deglaze the skillet with wine , scraping the bottom to get all of the browned bits, pour over ingredients in crockpot, add beef broth and Worcestershire sauce and give it a stir.

Cover and cook on low 5-6 hours. Stir in sour cream and fresh thyme, adjust seasonings with salt and pepper.

Before serving, boil egg noodles al dente, according to package, drain and stir into slow cooker beef stroganoff. Or serve stroganoff over the top of the noodles.

How To Store The Leftovers

One thing I love about Beef Stroganoff is that the leftovers taste as amazing as when it was first made! Well, if we have leftovers my family tends to clean their plates and ask for seconds when I make it! But, if you have leftovers just know that it tastes great warmed up the next day.

  • Store the leftovers in an airtight container and they will keep well up for up to three days in the refrigerator.
  • You can also freeze the leftovers! Make sure its cooled and then keep them in a freezer-safe container for up to a month.

When I reheat Beef Stroganoff I sometimes add a splash or two of beef broth or water to loosen the sauce. It thickens up quite a bit when its chilled and adding a little more liquid will help it turn creamy again!

How Do You Know When Roast Beef Is Done

Easy Instant Pot Beef Stroganoff

The easiest way to tell if a roast is ready is to check the internal temperature using a meat thermometer. Roast beef is usually cooked to medium rare. Its important to remember when roasting beef that the roasts temperature will continue to rise by 5 degrees while it rests so dont overbake.

Check that your roast is done to your liking using my handy roast beef temperature guide:

  • For Medium Rare Roast until it reaches 135-140ºF
  • For Medium Roast to 145ºF

The cooking time will depend on the size of your roast as well as your oven. Its always a good idea to monitor the temperature with a thermometer.

What Goes With Beef Stroganoff

We recommend pairing this with a quick and easy vegetable or salad. Simply steam green beans, roast vegetables, toss together a side salad etc.

The egg noodles cook right in the Instant Pot so you only need to add the vegetable to make it a meal.
