  • Beef Bone Broth: Also made from simmering bones with a small amount of meat attached to them for a long time. However, bone broth is slightly different from stock because it is cooked longer and often incorporates a little acidity to help extract collagen and trace minerals from the bones and connective tissue.

When soup bones appeared in a local farm CSA share pick-up, it was time to figure out what in the world to do with them. Family and Consumer Sciences Agent Jimmi Buell walks us through the steps of turning those soup bones into a quick and easy bone broth that can be used in a multitude of ways.

Ways To Use Instant Pot Beef Bone Broth

There are so many ways to use this yummy and versatile broth!

You can really use it to replace any broth youd need in any recipe. Here are just a few ideas to get you started:

  • Have a cup on its own! As I said, we use it in my home as an immune-boosting drink to fight off the sniffles. When the kids were toddlers, I added a little into their puréed food.
  • Use it as a flavorful base for gravies, soups, stews, and chili.
  • When a casserole calls for broth, use this one!
  • Replace the water with beef bone broth when youre cooking or steaming veggies, cooking rice, or making mashed potatoes.

How To Make Beef Bone Broth

Instant Pot Beef Bone Broth

1. Add your shoulder or marrow bones to a large pot and cover with water.

2. Over medium-high heat, bring to a boil, reduce heat and simmer for 20-minutes.

3. Preheat your oven to 450 degrees .

4. On a bar pan or dutch oven, roast the beef shoulder in the oven for 40-45 minutes until some of the fat has rendered and the bone has caramelized some.

5. Transfer the bone to an Instant Pot / Slow Cooker or a large stock pot and add the remaining ingredients.

Instant Pot: Set pressure cooker for 3-hours with natural pressure release.

Stock Pot: Heat the broth over high heat bringing it to a rolling boil for about 3-minutes, then reduce the heat to low and simmer for 12-20 hours, add water as needed to keep the bones submerged due to water loss from steam.

Crock Pot: Turn crock pot to high and bring the broth to a boil for about 3-minutes before reducing the heat to low. Simmer for 12-16 hours on low, add water as needed to keep the bones submerged due to water loss from steam.

6. Remove the bones and aromatics with a mesh strainer.

7. If you want to use the broth right away, transfer it to a fat separator and use the broth you want.

8. If you aren’t going to use the broth right away, pour into 32 ounce glass jars and seal with a lid. Cool to room temperature and then transfer to the refrigerator for at least 4-hours to allow the fat to separate and harden.

9. When you are ready to use, remove the fat layer on top and enjoy in your favorite recipes.

What Is The Difference Between Beef Broth & Bone Broth

Beef broth is made by simmering beef, which gives a lot of flavor to the broth, but doesnt add the thicker collagen that comes from simmering bones. Bone broth is made with mostly bones, which imparts collagen, vitamins and minerals directly from the bone. This broth tends to be quite thick and silky, and it firms up into a gelatin when cooled.

Part of our goal with our farm is to make unique cuts of beef less intimidating. Beef Bones is a cut of beef that many people find intimidating, but they are a wonderful addition to any kitchen. With only beef bones and water, you can make flavorful bone broth that is the base of many soups, stews, sauces and gravy.

Although we know that its much easier to buy broth at a local store, homemade bone broth tastes so much better and its made with real food beef bones and water.

How Do You Make Bone Broth In An Instant Pot

You can easily make bone broth in an Instant Pot by doing the following:

1. Place beef bones in the Instant Pot and add some water.

2. Add carrots, onions and celery to it

3. Add spices like garlic, ginger, peppercorns, parsley and thyme.

4. Seal it, select the correct setting and cook for 90 minutes.

Beef bone broth consists of beef bones that are boiled in water until they release their nutrients. The result is a savory broth that is slightly gelatinous, resulting from the release of collagen. Making bone broth can be a time-consuming process on the stovetop, but can be sped up with an Instant Pot .

How To Store Beef Bone Broth

This liquid gold should be one of your staples since its a great way to add flavor and nutrition to many dishes. Heres how to store it:

  • Pour your beef bone broth into clean containers and allow it to cool down before refrigerating or freezing. Store for up to 5 days in the fridge and 4 to 6 months in the freezer.
  • Store it in small batches to be conveniently used as needed. Defrost it in the fridge or microwave or throw it into hot dishes such as soups and stews while still frozen.
  • Mason jars make suitable freezer storage containers, but they become fragile when frozen. To avoid broken jars, use wide-mouth canning jars. Make sure the broth is cooled and leave at least an inch of space at the top. Freeze the jars uncovered and dont place the lids on the jars until the broth is completely frozen.
  • Its best to defrost glass jars of bone broth in the refrigerator to avoid sudden temperature changes and possible breakage.
  • Freeze your Instant Pot bone broth in silicone ice cube molds for easy use in recipes. When the cubes are frozen solid, place them in a plastic ziptop freezer bag. Each cube represents approximately 1/3 cup of broth. When you need to quickly thaw some bone broth, just pop a few cubes into a saucepan or your microwave.
  • Reduce bone broth for storage to save on freezer space. Simmer the broth over low heat on the stovetop until its reduced by half. You will need to thin the reduced broth with water before using it.

    How to Make Instant Pot Beef Bone Broth rich in collagen and nutrients

    Makes 8 cups

    Heres how to make the broth:

    Dump the leeks and carrots in the pressure cooker or Instant Pot , and toss in your bones .

    Then, cover with water and add vinegar.

    Add the fish sauce and toss in the dried shiitake mushrooms . Then, cover and lock the lid, and program to the Instant Pot to cook under high pressure for 30-50 minutes . If Im not in a rush, I set my Instant Pot on high pressure for 2 hoursthe broth only gets better with more time.

    If youre using a stovetop pressure cooker, place the pot on a burner set on high heat. Once the indicator pops up showing that the contents of the pot have reached high pressure, immediately decrease the temperature to the lowest possible setting to maintain high pressure .

    Set the timer for 30 minutes .

    When the broth is done cooking in the Instant Pot or stovetop pressure cooker, let the pressure release naturally .

    Remove the lid, skim of the scum , and strain the broth. Taste and adjust for seasoning. I keep it on the blander side if I will be cooking with it.

    I dont parboil the bones to decrease the scum because Im lazy. Plus, there really isnt that much left after you strain it.

    Faster and more flavorful than other methods. Really.

    Stove Top Beef Broth:

    Once the bones are roasted, add the remaining ingredients. Cover the pot and bring to a gentle boil. Reduce hear to a very low simmer and cook with lid slightly ajar for at least 8 to 12 hours, ideally 24 hours. DO NOT LEAVE THE STOVE RUNNING OVERNIGHTcool and store in the refrigerator and continue to simmer the next day. Add more water if needed to make sure bones and vegetable are fully submerged.

    Saving And Using Tallow

    In the case of Instant Pot Beef Bone Broth, the fat that rises to the top is actually a rough form of the traditional cooking fat Tallow. So I like to remove the fat, and dab it dry. If I want to store it, I will render it and strain it off into a jar for using later. If I plan on using it soon, Ill just dab it dry and leave the chunks in a small container in the fridge. Its great for cooking potatoes, meats, and seasoning cast iron skillets.

    Tallow itself is great for a variety of uses , but this rough version of tallow is a little more limited and retains quite a bit of beefy flavor.

    How To Make Homemade Instant Pot Beef Bone Broth

    BONES: The best bones for bone broth are knuckles, shank, marrow, ribs etc. If you have a local butcher shop, try there first. Your grocery store meat department doesnt always have them but a butcher shop will always have bones and are willing to cut them down for you. Have the butcher cut your bones in half so they will fit in your instant pot.

    ROASTING THE BONES: To get the best flavor from any bones make sure they are roasted. This will add another layer of flavor to your broth. If you are using leftover bones from making a roast, you can skip this step. Preheat oven to 425°, place bones on a baking sheet and roast 25-30 minutes or until golden.

    MAKING HOMEMADE INSTANT POT BEEF BONE BROTH: Now that youve figured out what bones youll be using and they are roasted. Making your own homemade beef bone broth is easy. No peeling or chopping. Basically a dump and leave recipe. Add the roasted bones to a 6 quart instant pot along with celery, carrots, turnip, onion, garlic, apple cider vinegar, pepper corns, bay leaves, fresh thyme and salt.
