Make your dry brining mixture by combining the kosher salt, the poultry seasoning, and the black pepper together in a small bowl and stirring until everything is well combined.

    This recipe makes a nice dinner and is from The Pillsbury Family Kitchens’ Cookbook. I use 1 can chicken broth and enough water to make 2 cups in place of water and bouillon cubes. This recipe can also be used with quartered or cut up frying chicken. I have only made it with the cornish hens.

    6 ounces white and wild rice mix
    2 tablespoons onions, chopped
    4 ounces mushroom stems and pieces, drained
    2 cups water
    salt

    Steps:

    • Heat oven to 375 degrees. I spray 13 x 9 glass baking dish with Pam .
    • Using kitchen shears or sharp knife, cut game hens in half lengthwise through breastbone.
    • In 13 x 9 glass baking dish combine rice mix, onion, celery and mushrooms.
    • Heat water and dissolve bouillon stir into rice mixture.
    • Dot with butter.
    • Place game hens cut side down over rice.
    • Brush with 1 tablespoon honey.
    • Sprinkle with salt.
    • Cover with foil and bake at 375 degrees for 45 minutes. Uncover, brush with remaining honey.
    • Bake uncovered for 30 minutes longer or until tender and brown.

    The best way to cook a frozen game hen is in a pressure cooker. You can cook them in an oven from frozen but it will take longer and you have to take some measures to keep it from drying out or burning on the outside before it cooks completely on the inside. This recipe for Instant Pot Cornish hens is the best way to get the job done.

    A pressure cooker like our Instant Pot cooks food under high pressure which raises the boiling point of the water, cooking it at a higher temperature. The high pressure also forces liquid into the meat which creates a tender, juicy Cornish game hen.

    Since the heat and pressure get turned up, the inside of the Game hens cook more quickly without drying out the outer portion of the birds.

    The drawback to cooking your Game hens in the pressure cooker is that it will not give you a crispy brown skin. The easiest and fastest solution to getting the skin brown is to pop it under the broiler for 5 minutes. Now, I want to warn you not to walk away when you do that. You can go from golden crispy skin to black and charred in an instant so keep an eye on them when they are under the broiler.

    • Rub Cornish hen with a mix of spices and add on top of the veggies.
    • Add chicken broth or water. Close and lock the lid. Set the timer to 18 minutes. Quick release when done.
    • Carefully transfer Cornish hen to the oven safe pan, turn the broiler on and let is sit under the broiler for 5 minutes, until the skin is brown and crispy.
    • Serve with potatoes and desired side dish.

    Can I Make Cornish Hens In The Instant Pot

    Thats what I thought when I first got my Instant Pot. I didnt really find any recipes I liked so I created what I think is the Best Instant Pot Cornish Hens recipe.

    Growing up, we never had turkey at Thanksgiving once my mom died and my dad was in charge of Thanksgiving dinner. He hated turkey, so instead he would cook us Cornish Hens. It was a once a year occurrence that we had these little birds.

    My dad would put tons of onions and garlic in the Cornish Hens and they baked in the over forever. A couple years ago my dad decided he would not be cooking anymore which included Thanksgiving dinner. If I wanted a traditional or non-traditional Thanksgiving dinner, Id be in charge of it now. Those little Cornish Hens are take so long to make, and after trying it the first year I was in charge I swapped to turkey.

    However, last year I got an Instant pot and wanted to try pressure cooking Cornish Hens. I tried it the first time with just water and a second time with white wine and the water proved to be a better choice for the Cornish Hens. I shoved a half diced onion and a smashed garlic clove in each hen. Heres the key though: the rub. First wash the Cornish Hens and pat them dry. Spread a generous portion of butter all over the Cornish Hens. Now, Ive got a variation in case you dont want to buy it, but I highly recommend the Tea Thyme blend from Eat More Tea. I bought it on a visit to Ann Arbor.
