Gather Your Ingredients For Instant Pot Cornish Hen
As noted, it really doesn’t take much to make a great Cornish hen, and that goes for effort and ingredients. Kamikawa’s recipe calls for a Cornish hen, , plenty of kosher salt, some poultry seasoning, some ground black pepper, olive oil, water, and vegetable oil.
And in case you’re wondering, you can buy pre-made poultry seasoning. If you’re the industrious DIY type, though, you can also blend it yourself using garlic powder, onion powder, dried basil, dried rosemary, ground coriander, sage, thyme, pepper, and paprika.
“This is a very versatile recipe, it gives the basics,” Kamikawa says, adding: “You can season a hen with any spice you like, BBQ, Cajun, lemon pepper, etc. using the same method.”

Season And Dry Brine The Cornish Hen
Make your dry brining mixture by combining the kosher salt, the poultry seasoning, and the black pepper together in a small bowl and stirring until everything is well combined.
Now season the Cornish hen with the spice mix, making sure to cover the entire bird evenly. Also season inside of the cavity as well, and if you run out of the dry brine mixture, just prepare a bit more and keep on coating.
Then, when it’s coated all over, inside and out, let the Cornish hen dry brine in the refrigerator for 15 minutes. “This a pretty straightforward recipe, but there are a few things to keep in mind,” Kamikawa says. “Letting the hen dry brine for those 15 minutes really lets the seasoning work its way into the meat. If you have time, you can dry brine the hen up to six hours.”

How Many Cornish Game Hens To Serve Per Person
One of the trickiest parts of serving Cornish Game Hens for a holiday dinner is planning out just how many to cook for a crowd!
Luckily, it can be easy to figure out with a little bit of planning!
While one Cornish hen per person might make the most sense for your dinner party, you might want to go for a little less, and serve it pre-carved to guests.
If you want to serve a meal with some meat left as leftovers, it is important to be sure you cook a slightly bigger portion per person.
Since cornish game hens are quite small, they really only give 1 – 1 ½ servings per bird, making them a dish you really need to plan ahead to be sure you have the proper amount before roasting.
For larger portions dinners, plan for one cornish game hen per person for dinner.
This hen can be sliced and portioned and then served to dinner guests on a platter, or presented whole on a plate so the guest can carve their own hen.

There is just one small difference between the two. A chicken is bigger than a Cornish hen and a Cornish hen is associated with a young chicken.
It is a bit like comparing lamb and mutton.
The Cornish hen that we bought weighed in at 800g and normally our small chickens from the supermarket that are labelled as small weight in at 1.1kg. So you can tell the size difference.
Do You Cover Cornish Chickens While Cooking
Bake the fried chicken in a preheated oven for about 1 hour or until the instant thermometer inserted in the thickest part of the thigh shows 165 degrees F and the juice is drained.
Remove the chickens from the oven, cover them with aluminum foil and let them stand for 10 minutes before cutting or serving.

If poutry has not met 165 degrees internally, add another 2-5 minutes to cook time.

Most Cornish hens are sold frozen and come two to a package. Although they are sold frozen, Cornish hens thaw quickly overnight in the refrigerator is plenty of time. Instant Pot Cornish Hen Recipe
First things first, let’s answer the question about half of you are probably asking yourself right now: What is a Cornish hen, anyway? Well, for starters, it’s the same thing as a Cornish game hen. And it’s not a game bird in either case, meaning one you’d hunt, like a pheasant. And it need not be a hen, technically speaking, either: a Cornish hen can be male or female.
But don’t worry, it’s actually quite simple. It’s a chicken, according to Love Kitchen Today. A Cornish hen is simply a chicken, a breed created by crossing traditional Cornish chickens with White Rock chickens and that are harvested when still quite young and small, with the bird weighing about two pounds at most at slaughter. So basically, just a small chicken.
And when you use an Instant Pot and follow chef and recipe developer Kieth Kamikawa‘s recipe for preparing a Cornish hen, you’ll find the whole process quite simple, too, yet the results will be a delight. With just a half dozen ingredients and a five-minute prep time, you’ll create an entree fit for the finest white table cloth restaurant in town.

Why Is It Called Cornish Hen
You would probably assume that a Cornish hen comes from Cornwall. In fact, it a Cornish hen was created when cross breeding occurred between chicken and game birds.
These resulted in small chickens that many people use for barbecues, rotisseries and restaurants often serve for two people.
Just like the barbecue chicken we have served up in Portugal is these baby chickens that have been spatchcocked, cooked and then served as chicken pieces.

The Best Way To Cook A Frozen Cornish Game Hen:
The best way to cook a frozen game hen is in a pressure cooker. You can cook them in an oven from frozen but it will take longer and you have to take some measures to keep it from drying out or burning on the outside before it cooks completely on the inside. This recipe for Instant Pot Cornish hens is the best way to get the job done.
A pressure cooker like our Instant Pot cooks food under high pressure which raises the boiling point of the water, cooking it at a higher temperature. The high pressure also forces liquid into the meat which creates a tender, juicy Cornish game hen.
Since the heat and pressure get turned up, the inside of the Game hens cook more quickly without drying out the outer portion of the birds.
The drawback to cooking your Game hens in the pressure cooker is that it will not give you a crispy brown skin. The easiest and fastest solution to getting the skin brown is to pop it under the broiler for 5 minutes. Now, I want to warn you not to walk away when you do that. You can go from golden crispy skin to black and charred in an instant so keep an eye on them when they are under the broiler.
Blend Of Spices I Used Here:
- Peel and cut potatoes in half. Cut onion in half. Add to the pot
- Rub Cornish hen with a mix of spices and add on top of the veggies.
- Add chicken broth or water. Close and lock the lid. Set the timer to 18 minutes. Quick release when done.
- Carefully transfer Cornish hen to the oven safe pan, turn the broiler on and let is sit under the broiler for 5 minutes, until the skin is brown and crispy.
- Serve with potatoes and desired side dish.

Can I Make Cornish Hens In The Instant Pot
Thats what I thought when I first got my Instant Pot. I didnt really find any recipes I liked so I created what I think is the Best Instant Pot Cornish Hens recipe.
Growing up, we never had turkey at Thanksgiving once my mom died and my dad was in charge of Thanksgiving dinner. He hated turkey, so instead he would cook us Cornish Hens. It was a once a year occurrence that we had these little birds.
My dad would put tons of onions and garlic in the Cornish Hens and they baked in the over forever. A couple years ago my dad decided he would not be cooking anymore which included Thanksgiving dinner. If I wanted a traditional or non-traditional Thanksgiving dinner, Id be in charge of it now. Those little Cornish Hens are take so long to make, and after trying it the first year I was in charge I swapped to turkey.
However, last year I got an Instant pot and wanted to try pressure cooking Cornish Hens. I tried it the first time with just water and a second time with white wine and the water proved to be a better choice for the Cornish Hens. I shoved a half diced onion and a smashed garlic clove in each hen. Heres the key though: the rub. First wash the Cornish Hens and pat them dry. Spread a generous portion of butter all over the Cornish Hens. Now, Ive got a variation in case you dont want to buy it, but I highly recommend the Tea Thyme blend from Eat More Tea. I bought it on a visit to Ann Arbor.
How Do You Know When A Chicken Coop Is Ready
How do you know when Cornish chickens are ready? The chickens are ready when the meat thermometer inserted in the thickest part of the leg shows at least 74 ° C. When you have roasted the chickens, the skin should be golden brown. If you dont have a meat thermometer, cut it in your thigh and see if the juice is clear.
