So last November, Black Friday to be more specific, I bought myself a little present. I impulse bought an Instant Pot, at a hefty 35% discount, I might add. Ive been experimenting with the Instant Pot for a few months and the other day I made my first Instant Pot Chicken Stock. OMG. You guys. This is the best chicken stock Ive;ever made. The extra pressure during cooking really pulls out so much more flavor and collagen to make an ultra rich broth.

How Do You Make Instant Pot Chicken Stock

This is the best and easiest part. Put all the ingredients in the instant pot. Pour in enough water just to cover everything. Put the lid on, seal and set it for 45 minutes. Then do a full natural release. You dont want to use a quick release for a couple of reasons, the flavor has more chance to develop and a quick release may cause boiling liquid to come out of the valve.

After the stock has cooled slightly, you can use a spoon to skim off some of the fat from the top.

Strain the veggies and chicken carcass and then use in all the recipes.

You can freeze it in jars or in ice cube trays for when you need just a couple tablespoons.

Easy peasy huh?

This Chicken Stockrecipe is so easy, and requires very little hands-on attention from you, and results in some delicious, very cost-friendly chicken stock.

Youll use your crock pot/slow cooker or your instant pot/pressure cooker to make this recipe, just set it and forget it while it cooks all day!

So. You roasted a chicken for dinner, and have a chicken carcass in your fridge. Or you got a rotisserie chicken from the grocery store, and after the chicken was eaten, you considered throwing the bones away?

Dont do it! This is a great way to use up all the vegetables in your fridge that are past their best, use a chicken carcass, and get some gorgeously flavored stock to use in your favorite recipes later on.

Whenever I have a bag of carrots that are past their best, but still good I throw them in a zip lock bag in the freezer. I add celery ends whenever they start to wilt. If I dont have any freezer veggies I just use fresh ones from my refrigerator. The point is this recipe is incredibly forgiving, and very versatile.

Homemade chicken stock is always full of flavor, and I love that you can customize it to your own personal tastes. I do this by adding fresh rosemary, oregano or thyme to mine.

Pressure Cooker Chicken Stock

If you are using an electric pressure cooker like an Instant Pot, all you have to do is throw everything in there and program it. You can even leave it on overnight because the keep warm setting will keep the temperature in the safe zone without cooking it any more.

Unlike stocks cooked on the stove, with a pressure cooker theres no evaporation; all the liquid stays in the cooker. In fact, youll likely wind up with more liquid than you started off with, because some of it will cook out of the bones and meat.

I dont add a lot of liquid when I make my stock. I dont even measure it; I just eyeball it, adding enough to barely come level with the bones. Its a method more than a recipe, one that gives you a very concentrated stock with a robust flavor.

Storing The Chicken Stock

After I cool and strain the stock I store it in 1 or 2 cup mason jars in the refrigerator for upto 7 days. If it doesnt get used up immediately then it can be frozen for upto 3 months. You can thaw the stock overnight in the refrigerator. Or if youre like me and always remember it in the last moment you can microwave it. Remember to remove the lid before nuking.

In this recipe I give you the cook times needed to make chicken bone broth or chicken stock. If youre wondering what the difference is between bone broth, chicken stock and chicken broth, the main difference is in how long they cook. Bone broth has the longest cook time, which extracts the most nutrients from the bones.

  • Bone broth is made with bones and sometimes meat, vegetables and aromatics. It is cooked for a long time to extract more nutrients from the bones, and has the highest gelatin content. Bone broth is often thicker than stock.
  • Chicken stock is made with bones, vegetables and aromatics. The cook time is shorter than the cook time for bone broth. Chicken stock has a richer flavor than chicken broth.
  • Chicken broth is made from meat, vegetables and aromatics. It has a shorter cook time than both stock and bone broth.

You can! In fact, when I make Instant Pot chicken stock, I make a triple batch. I buy organic chicken from the grocery store and have learned that I can get about three rounds of stock before my bones turn to mush.

Every bird is different though, so youll have to play with it to see how many batches of stock you can get.

For example, I made stock for my sister-in-law and was only able to get two solid batches of stock. She buys her chicken from a local Amish farm and after two rounds, there were literally no bones left!

Cut down on the time it takes to make homemade stock and you’ll find yourself making more of it.

I am a big believer in the glory of homemade stock. Grocery bought stock works just fine for many applications, but if you want to give your mealsparticularly a nice soup or saucethat extra restaurant-level complexity of flavor, homemade stock is the way to do it. You can make it from the scraps that you have leftover from making other thingsjust throw chicken bones and carrot tops and other trimmings into a zip-top bag in the freezer until you’ve collected enough to make a decent stock.

Making stock isn’t a particularly complicated processbasically you put your bits into a deep stockpot, cover in water, and let is simmer slowly for several hours. But the timing part is what is often annoying, particularly if you don’t have several hours to babysit a pot on the stove. As mentioned above, I;love using it for homemade chicken noodle soup. It will also work in any other recipe calling for chicken stock. I use my Instant Pot Chicken Stock when I make chicken curry. I use it when I make gravy.; Basically any recipe that calls for chicken stock, I use this.

I also use it when my son is craving ramen and I dont want to use the seasoning packet. Its perfect for that!

Why You Should Make Bone Broth And How To Make It

So what is bone broth anyway? Bone broth is basically stock; thats been cooked for such a long time that the tendons and connective tissues have dissolved and the bones are falling apart and fragile. The extra long cook time;helps more collagen and nutrients dissolve into the broth. Its because of this that so many people consider it to have healing benefits for the joints, gut and immune system. We arent nutritionists so we wont go too far into that, but what I can tell you is that bone broth tastes more rich and intense than regular stock or broth. Its absolutely delicious as a warm drink or light soup. I especially love adding a little fresh pepper, minced ginger and herbs to mine. Think of it as a savory tea.

Its also an excellent swap for stocks in soups and since it does taste more flavorful, it can make soups and stews extra delicious. Try it in our Lemony Chicken Vegetable Soup, its excellent.

You can technically make bone broth on the stovetop, but it will take a very long time over 24 hours. Since we cant commit to standing next to a simmering pot for that long, we turn to a pressure cooker or slow cooker to make it. A pressure cooker takes about 4 hours, while the slow cooker will take 24 to 48 hours.

For the most rich and intensely flavored broth, roast your bones. We simply add them in one layer to a baking sheet and roast in a very hot oven until brown. It takes about 30 minutes.

How To Store And Freeze Chicken Stock

I like to funnel my cooled stock into jars and store it in the refrigerator for up to a week. The stock is often good for another week after that, but if thats the case, I recommend boiling it before using it. That tends to give it a fresher taste.

To always have stock on hand, freeze it for up to one year.

If you plan on making stock in your Instant Pot regularly, , you really want to think about getting a steamer basket like the one pictured above. It is a GAME CHANGER when it comes to making stock. Before I bought my steamer basket for my Instant Pot, I used my mesh strainers ;to separate the stock from the solids. It did the job, but it was rather tedious and a little messy.

The steamer basket, though, is ridiculously easy to use. Just lift all the solids from the pot with the baskets handle, and youre left with a pot full of stock.

I also highly recommend an extra inner pot. Not just for this recipean extra pot comes in handy all the time. I make two batches of stock with the same bones, so having an extra pot means I can lift the steamer basket from one pot and simply set it in the next. EASY PEASY.

Keep in mind that there are so many other things you can put in your stock, this is just what I like to put in mine .

Tips And Notes On Making Homemade Instant Pot Chicken Stock

  • If you have time, roasting the chicken carcass and the vegetables before adding to the Instant Pot can add a different depth of flavour to your chicken stock.
  • Dont feel the need to follow my recipe exactly! If theres something you dont like, omit it! The stock will take on the flavour of the vegetables you add so if you dont like something, why have your stock taste of it!
  • Be sure to let the stock cool before storing.
  • For the best tasting stock, I try to stick with fresh vegetables. Like I mentioned earlier, if the vegetable scrap is looking like its about to brown any second now, I dont use it for stock as I feel like the taste will reflect that.
  • If you have a Large Mesh Steamer you can place it in your liner first. That way, you can easily just lift it up and separate all the ingredients from the stock when its done pressure cooking.
