Tapioca Pudding a sweet pudding made from small tiny tapioca pearls from the cassava plant. Don’t mistaken them for sago which are made from sago palm tree. Tapioca and Sago are often used interchangeably in many cultures. It is made using milk or cream as the base for the pudding and varies in consistency from thin, thick or even even with your fork.;Traditionally it’s sweetened with sugar and garnished with either, dried fruits, jams, compotes, nuts, rose petals etc. It can be served hot or cold

How To Store And Freeze Tapioca Pudding

  • Store:; Leftover pudding can be stored in a sealed container in the fridge for 3 days.; Be aware that the color may become less vibrant because of the bananas.
  • Freeze:; Pudding can be frozen, but in my opinion doesn’t taste as great once it is thawed.; Instead, pour leftovers into a popsicle mold and make tapioca pudding popsicles!

  • 1 1/2 teaspoons vanilla

Begin by rinsing the tapioca in cold water using a sieve for about 45 seconds.

Next, put the rinsed tapioca and water into the Instant Pot. Close the valve and choose the Rice setting for 7 minutes.

When the 7 minutes are complete, Turn off the pot and allow to sit for 12 minutes.

Next, whisk in sugar and salt.

In a separate bowl, mix together the milk and eggs. Then, pour into the Instant Pot. Turn on sauté and cook, stirring constantly until mixture begins to come to a boil.

Remove from heat and stir in vanilla.

Transfer to separate dishes or to one larger dessert bowl and allow to cool for at least two hours before serving.

Double Parrot Brand Cooking Method

This cooking method only worked for me when testing the Double Parrot brand. Other brands will disintegrate when you try to soak them, and must follow the 30 & 30 method instead.

Step 1. Soak the pearls to drastically reduce cooking time. Soak half a cup of pearls in four cups of water in a sealed container at room temperature for at least eight hours or overnight. Drain when ready to use.

Step 2. Boil water, then add pearls. In a pot over high heat, bring eight cups of water to a boil. When it begins to boil, carefully add the soaked pearls.

Step 3. Cook the pearls. Once they all float after about two to three minutes, lower the heat to medium and cover your pot. Watch over this and continue to cook for an additional two to three minutes.

Step 4. Check doneness. After two minutes, taste test a tapioca pearl for doneness. It should be chewy and translucent on the edges, but still be slightly al dente and have an opaque center.

Note: the opaque center shows the difference between white tapioca pearls that have been soaked and cooked versus white tapioca pearls that were not soaked. The pre-soaked tapioca pearls did not turn completely translucent, but were perfectly cooked and had the right amount of chewiness.

I remember the days back when I was still in college, the bubble tea pearls or that was originated from Taiwan was crazy popular. It seemed like everyone had bubble tea whenever I went. It seems like the bubble tea fever is back again lately. Or has the bubble tea fever ever gone down at all? Anyway, I never really into bubble tea, but I do love tapioca pearls coconut milk dessert Anything in coconut milk really!

Make Ahead And Storage

Prep Ahead Make your iced coffee concentrate and your boba in advance and store in the fridge. Assemble the drink according to the recipe and serve.;

Store Boba are best used within a few hours but will keep for several days in the fridge. Be sure to store them in the cooking liquid or simple syrup or they will harden. Your Iced Coffee Concentrate can be refrigerated in an airtight container for up to 1 week.

Freeze Freeze leftover iced coffee concentrate in ice cube trays to add to coffee drinks later on. To freeze boba follow these instructions.;

  • Place cooked, cooled, and drained black tapioca pearls into a freezer-safe bag and remove excess air before sealing.
  • To use, put the boba into boiling water for 5 minutes, stirring occasionally.
  • Turn off the heat and let sit for 5 more minutes.;
  • Run under cool water then drain and serve according to the recipe.;

How To Make Tapioca Pudding From Scratch

First make sure you are using small fine tapioca pearls not the ones you use in bubble tea. Thoroughly rinse them and keep them aside for 15 minutes.; Since you are going to be pressure cooking the pearls you don’t need to soak them.;

In the mean while gather all your ingredients, milk , bananas, mangoes, vanilla extract and water. Just 5 ingredients!!!

Before sharing this recipe we tried making it once with over ripe bananas and other with just rightly ripe bananas. Yeah another thing to make apart from Banana Bread. It turned out great with both except that the one with overripe bananas darkened a little in color when refrigerated plus it also had more fibers from banana.;

Mash the bananas and puree some of the mangoes while keeping some mango aside for garnishing.;In a steamer pot or heat proof bowl add the coconut milk , mashed banana and vanilla extract . Mix well and add the tapioca pearls and water to that.

Pour water into the inner pot and place the streamer pot on a trivet and place it into water.;

Cover the Instant Pot lid, seal the vent and pressure on high for 10 minutes.;As soon as the timer beeps after 10 minutes, immediately release the pressure.;

Remove carefully and stir the pot or jars with a fork. Tightly cover with aluminium foil and bring the pudding to room temperature before refrigerating it.

Once cool pour the mango puree and garnish with a 3-4 small mango cubes and refrigerate.;

How To Cut A Mango

Mangos have a large pit in the very center.; The best way to cut a mango is to stand it on the bottom end and use a sharp knife to cut off the cheeks of the mango.; I do this by first finding the pit with my knife, then moving it over until it cuts into the soft mango flesh.; Once you have the two cheeks of the mango, use a spoon to scoop the flesh from the skin, and cut it to your desired shape and size.; Here is a good video to demo how this is done.

Cooking Tips For How To Make Taro And Tapioca Pearl Dessert:

  • Peel off taro skin, wash and cut them into cubes.
  • I used instant pot to cook taro because it is faster. Manual for 4 minutes at high pressure and natural release. If you dice taro very small, I recommend manual for 3 minutes and natural release. Then, drain the water.
  • I find out the best way to cook small tapioca is boiling them over the stove for 10 minutes. Then, cover the lid and turn off fire for 5-8 minutes. Drain them and rinse with cold water.
  • Pour coconut milk, water, sugar into instant and put sauté button. Wait until its boiling then turn off instant pot and add sago and taro.
  • You can serve them as hot or cold.

How To Cook Tapioca Pearls: Instructions

Bring 6 cups water to a boil in a deep pot, and add the tapioca.

Bring it to a boil again, cover, and turn the heat down to medium low. Cook covered for 15 minutes, stirring occasionally to prevent sticking.

After 15 minutes, turn off the heat, keep the pot covered, and allow to sit for another 15 minutes.

Drain the tapioca pearls and rinse under cold water.;

If the tapioca pearls still have opaque white centers, repeat STEP 1 and STEP 2 until all the tapioca balls are translucent.

You may have to repeat a few times depending on their size.

In the meantime, dissolve 3 tablespoons sugar into 1 cup warm water.

Once the tapioca pearls are cooked, drain and rinse under cold water one more time.

Then put them into the sugar water to prevent them from sticking together.

The cooked tapioca pearls lose their chewiness rather quickly, so its best to use them within 1-2 days.

What If Our Moms Had Instant Pot Back Then

Now when we think of it, all we can think of is hours and hours of standing and stirring and making sure there are no sticky bottoms as Tapioca Pudding requires a lot of attention. Mine didn’t burn. I am no cooking expert at all and I’m new to instapot but I had a gut instinct that cutting down the milk and the water content by 1/3 would be wise. I greased my pan with a vegan butter instead of a spray. When I opened up the lid I didn’t wait for it to completely exhaust the Steam on its own. I rushed it do it on my own, released the steam after 5 minutes of letting it do it on its own. Instead of whole milk I used whipped coconut cream and I used 2/3 of the can. The texture looks just right and like it will solidify more as it cools. That tastes very coconut E. I also added in some chopped mango. Next time I’ll add toasted coconut to it. Plan on eating it with oat whipped cream.

Mine burnt also. I salvaged it by pouring it into my 6″ baking pan and cooking for 3 minutes longer.

It made a mess of the liner. I sprayed but seemed to do no good. Easier to use an insert.
