Whats The Difference Between An Instant Pot And A Regular Pressure Cooker
Modern electric pressure cookers and Instant Pots are very similar and function by using electricity to pressure a metal insert inside the cooker with a locking lid. Stovetop pressure cookers do not have an internal heat source or use electricity, but instead, use the heat from a stovetop burner.
In many ways, they do the same thing and function in the same way. Instant Pot is basically a brand name for a certain type of pressure cooker.
But with regular pressure cookers, there are actually 2 different kinds.
The modern pressure cooker plugs into a wall socket and functions very similarly to an Instant Pot. The other kind of pressure cooker is the old-school kind your grandmother may have had which sits on a stovetop burner as its heat source.
Another key difference between the Instant Pot and other modern pressure cookers is the inner pot.
On the Instant Pot, this is made of stainless steel, whereas many other brands have an insert with a non-stick coating. Like virtually all pans with non-stick coating, this eventually scratches off and will have to be replaced.
The Instant Pot can also sauté and function like a Crock-Pot which most other pressure cookers cannot do. So its ultimately more versatile than other modern pressure cookers and much safer than old-school stovetop pressure cookers.

You can also use dry, shelf-stable tortellini in the Instant Pot.
Fresh, refrigerated tortellini would not be my first choice to cook in the pressure cooker, because it is more delicate and would be more likely overcook and fall apart. If thats what you have on hand, you could try a 0 minute cook time, followed by a quick release, to hopefully keep it from getting too soft!

I Cant Figure Out The Timer
This is a very common issue when first using the Instant Pot, and there are a couple of guidelines you really need to know to avoid mistakes or problems.
Selecting an option like poultry will automatically create a timer, which you then adjust to the proper time with the + and buttons below the timer screen. Remember that the timer does not include how long it takes the Instant Pot to heat up or cool down. Its designed to only be the time that the food inside is actively pressure cooking. Therefore, your Instant Pot will take time to reach pressure anywhere from 5 to 20 minutes, usually, but it depends on the initial temperature of the ingredients, the amount of the ingredients, and the type of ingredients. It will also take time to release pressure, especially if the recipe calls for a natural pressure release, which often takes another 10 to 20 minutes. Remember to include all this time in your cooking calculations.

The Frustrating Thing Nobody Tells You About The Instant Pot
Im late to the Instant Pot craze. In fact I actively resisted it for as long as I could. Im an old-fashioned gal at heartI like slow cooking in my Dutch oven. But Id heard so many people gush about their Instant Pots that I was finally ready to be impressed by one, so I started experimenting with it. And I was disappointed to discover that it wasn’t quite the magic, faster-than-light cooking machine I had thought it would be.
Part of the problem was, perhaps, my unrealistic expectations. Before using the Instant Pot for the first time, I expected to be blown away by its speed and efficiency. Of course I didn’t read the manual just the recipe I was following. I set the Instant Pot to cook at high pressure for 12 minutes, closed and sealed the lid, and then waited. And waited. At first, it seemed like nothing was happening. The countdown clock wasnt ticking. But the machine’s digital screen read “On,” so I waited some more. It ended up taking 15 minutes for the pressure to buildbefore the 12 minutes of pressure cooking even began. No one had told me this would happen! And then when those 12 minutes were up, I had to be there to push the valve to quick release the pressure, which also took a few minutes longer than I had expected.
Don’t be fooled by the one-minute cook time on this Instant Pot shrimp scampiit’ll actually take you longer than that.
Natural Vs Manual Pressure Release
When the cook time is up on your Instant Pot, there’s still one more step — releasing the pressure.;
There are two ways the pressure can be released. With natural pressure release, the valve on the lid stays in Sealing position and the pressure dissipates naturally over time. This can take anywhere from 20 minutes to more than an hour, depending on what you were cooking. Low-liquid meals take much less time than high-liquid meals, like soup or chili.;
The other option is manual pressure release . Here, you’ll carefully move the valve into Venting position and watch as steam shoots out of it, releasing the pressure. This method is much faster, but very high-liquid meals, like soup, can still take about 15 minutes to release pressure manually.
So which one should you use? Consider that with natural pressure release, the Instant Pot is still full of pressure, so the food will continue cooking while the Instant Pot is in Sealing mode. Manual pressure release is useful — and necessary — when you’ve built in enough cooking time and cooking needs to be stopped as fast as possible.
If the goal is to cook a meal quickly, set enough time on the Instant Pot to cook your food and release the pressure manually when the time is up.;

But Isnt Instant Pot Just A Pressure Cooker
Yes, the Instant Pot is a pressure cooker. But there is a big difference between the two in terms of how they function and how easy they are to use for the typical home cook.
Lets take a look at what a pressure cooker can do:
When cooking something on the stove top, the water boils at 212 degrees and stays at that temperature, but inside a pressure cooker the water can build up to 250 degrees, which allows the food to cook much faster.
- Cooks food in 70% less time than on the stove top.
- Great for cooking foods that take a long time, like pot roasts, whole chicken, brisket and dried beans.
- Breaks down the tough fibers in meats much faster for tender roasts and briskets in half the time.
Both a traditional pressure cooker and an Instant Pot do those same basic things. The difference comes down to how convenient they are to use.

Who Invented The Pressure Cooker
Denis Papin was a French-born British physicist who is credited with inventing both the first cylinder and piston steam engine and the pressure cooker. His invention was simple enough: a “closed vessel with a tightly fitting lid that confines the steam until a high pressure is generated, raising the boiling point of the water considerably.” A safety valve stopped leaks and prevented explosions.
An early iteration of the commercial pressure cooker was showcased at the 1939 New York World’s Fair, while the first home-use unit was made available six years later, in 1945. Pressure cookers work by keeping extremely hot water and vapor in an enclosed space, maintaining the internal temperature of the vessel, thus speeding up the cooking time for food that typically takes a long time to prepare.
Replacing The Steam Release Handle
There is a metal safety clip inside older models of instant pots to prevent these pots from over-pressurizing. Over time, this ring could get bent and make the steam release handle bend in the sealing position as it would be when set to Venting, making steam escape from the instant pot.
You can buy a new steam release handle and replace it to effectively solve this problem if you notice your instant pot is one of these old models. Alternatively, you can remove the metal ring from the instant pot straighten it with a pliers pair to get it back in position before placing it back into the instant pot.

Do You Need To Double The Cook Time For A Double Recipe
If you would like to double an Instant Pot recipe, you may double the ingredients . You do not need to double the cook time.
However, you may need to adjust the cook time based on the size/width of meat and vegetables. For example, a small 8 ounce chicken breast will cook faster than a large 12 ounce chicken breast and a small sweet potato will cook faster than a large sweet potato. Read all recipes and directions carefully to determine how long to cook your food.

Make Sure Your Vent In Set To Sealing
This is key. On your lid there is a vent that looks like a lever of sorts. When starting your cook, you want this lever pointing toward “sealing” and not “venting.” Sealing means the Instant Pot is going to hold all the pressure created inside the pot, while venting is what you’ll likely do to release the pressure when the food is finished cooking.

Use The Saute Button For Cooking As You Would In A Skillet Or Pan
Want to saute vegetables in the;Instant Pot? You can do that and basically cook up anything as you would in a skillet or pan. You dont need the 1 cup of liquid. Just press the saute button, add some;cooking oil or animal fat like beef tallow or lard to the inner pot and add food you want to cook like a skillet or pan. You can even adjust the saute temperature .
Mistake: You’re Clogging Your Steam Release Pipe
You won’t have to worry about most foods, but when you’re making certain thingslike applesauce, oatmeal, and noodlesyou might experience foaming, frothing or splattering due to clogging the steam release pipe or valve if you fill your Instant Pot too high. Luckily, there’s a simple fix: To prevent a mess from going down in your kitchen, just be sure the inner pot isn’t filled higher than the 1/2 line.
Can You Cook Frozen Meat In An Instant Pot
Cooking frozen food in your Instant Pot will make it take longer to come up to pressure. The extra time does start cooking your food though, so you only need to add a few extra minutes to your cook time.
For ground meat or chopped veggies, add 1-2 extra minutes to your cook time. For chicken breasts, add about 3 extra minutes.
Cooking a brick of frozen meat is very likely to result in undercooked food. So if your chicken breasts have stuck to each other in the freezer, allow them to thaw at least until you can detach them.
B Cooking Liquid: Too Much Liquid
Mistake:;On the contrary, when there is too much cooking liquid in the Instant Pot, it will increase the overall cooking time . This may overcook the food.
Plus, too much cooking liquid will dilute the seasoning, resulting in a bland dish.
Solution: Unless stated in a recipe, we recommend new users to use 1 cup of total liquid until they get comfortable with the machine.
