This is a very simple recipe that youll find much success with! Here are a few pointers to keep in mind:

  • Saute the onion and chicken before pressure cooking:;This lets the onion soften and the chicken get a little crispy on the outside.
  • Use white rice:;I love brown rice but this recipe works best with white.
  • Parmesan gives it a nice, sharp, nutty richness:;The parmesan isnt mandatory, but it adds the nicest texture and flavor. You could also use another cheese, like cheddar, if you prefer.

Make In Four Easy Steps

Saute: Turn on the saute setting to high heat. Melt the butter with olive oil in the pot and then add the onion, carrots, and garlic. Cook them for about five minutes. Add the meat, salt, and pepper and cook it with the veggies for another five minutes. The chicken wont be cooked through at this point.

Deglaze: Add some of the broth. It will simmer, making it easy to scrape up the browned bits off the bottom of the pot. Add the rest of the broth and the rice. Stir to combine and then secure the lid.

Pressure Cook: Once the lid is secured, close the steam vent. Turn off the saute feature and set the manual button for 10 minutes on high pressure. Once the time is up, do a quick release, so all of the steam is released.

Garnish and Serve! Open the lid and add the Parmesan cheese. Stir until its combined and then garnish with chopped parsley.

  • Rice: I use regular long-grain white rice. . Be sure to rinse the rice before adding it to the instant pot to remove the starch, and help keep the rice from sticking to the bottom of the pot.
  • White wine: Ive used white wine in this recipe to deglaze the pan and add great flavor to the dish. The alcohol gets cooked out. If you dont want to use wine, just leave this step out and deglaze the pan when you add the chicken broth.

We used a 6 Quart Instant Pot to make chicken and rice. This recipe moves fast so have all of your ingredients prepped and ready before you turn on your instant pot. Chop your onion, grate or your carrots , half your garlic head.

  • Set your instant pot to sautee on high heat, add 2 Tbsp oil and 2 Tbsp butter.
  • Add onion, carrots, and salt and saute 5 min.
  • Add chicken and salt and saute 5 min.
  • Pour in broth and rice and stir. Place halved garlic head cut-side-down.
  • Cover with lid and set the lever to sealing position. Cook on manual high pressure 10 minutes with manual pressure release.

    Avoiding Burn Notification While Cooking In Instant Pot

    Getting burn notice while cooking on an instant pot is quite annoying, especially while you have a hungry family to feed. I have made this chicken and rice in the instant pot multiple times without any issue.

    First of all, every time the pot is giving a burn notice doesn’t mean something has burned. It might be an indication that the bottom layer of the pot has some brown bits stuck. So it is very important to deglaze the pot to release any brown patches from the bottom. Like in the above recipe, Stock is added to deglaze the pan.

    Another reason for the burn notice could be because of very little liquid in the pot. In the recipe, the amount of stock is enough for the chicken. Also when the chicken thigh gets cooked it releases liquid.

    The last reason could be the Inner pot is very hot, while setting it to manual high-pressure mode. In this recipe, first chicken thighs are being sauteed followed by onion and garlic. If you tend to get frequent burn notifications in your IP, then after you saute the chicken thighs, switch off the IP and let it cool down a bit. Then again switch to saute mode and start cooking onion and garlic.

    What Operation Functions Do I Need To Know Right Now About My Instant Pot

    Why did I use the Manual; function key? Since Im using a variety of ingredients I knew I could program it to all finish at the right time using the Manual function. I use it 90% of the time.

    When you make soup using the Soup;function key the liquid;will never go into the heavy boil state and the chicken will remain intact. I actually wanted mine to break down so I didnt use it.

    The Meat/Stew function will strip meat from the bone so it could be used if you are using bone-in meat. Since I was cooking rice and vegetables with my meat I didnt use this function.

    How do I figure out the time my recipes will use? Consult the manual. O.k. I dont like that answer either. The time is calculated based on the longest item in the pot. For this recipe, its the rice.

    Making Chicken and rice in Instant Pot is easy and convenient. No need for cleaning multiple pans or spending hours in the kitchen. Make it in the instant pot from start to finish in just 20 minutes.

    Start with seasoning Chicken. Seasoning Chicken well and browning helps in developing flavour. I have used chicken thighs but you can also use chicken breast instead.

    Next is to caramelize onion and a lot of garlic in butter, which again adds lots of flavours. You can use; Olive oil instead of butter, but believe me, it will not be the same. So for once keep your worries about calories aside and use butter.

    I have used a mix of herbs Oregano, thyme and parsley. But you can use any of your favourite herbs.

    Using Chicken Stock instead of water makes the flavour robust.; Use water or a mix of water and stock instead.

    Tips For Using An Instant Pot:

    First-time users: always read the users manual for your specific instant pot prior to starting since your machine may not operate or look exactly like ours.

    • Make sure the rim and rubber seal on your instant pot are clean for the seal to form properly.
    • Stir the rice together before turning on to avoid the burn notice.
    • Remember to set your lever to the stealing position for pressure to build.
    • When manually releasing pressure, wear an oven mitt and keep your face away from the hot steam vent.
    • I keep a paper towel ready to shield the vent in case it sputters liquid while venting/releasing pressure.
    • Always check the pressure indicator on your machine to ensure that the pressure has fully released prior to opening the lid.
    • Follow timing instructions precisely and set timers. With pressure cooking it easy to over-cook something if you forget about your pot.

    Tips For Making Instant Pot Chicken And Rice

    It is important to layer the ingredients in the Instant Pot in the order listed below in the instructions.

    Youll start by setting the instant pot to sauté, then youll add a little bit of butter to cook the mushrooms and onions. When the veggies are tender, youll stir in a little bit of garlic. Remember that you can change up the veggies however youd like. If you dont like mushrooms, you do not need to use them. Carrots would also be a delicious option. Sometimes Ill stir in spinach at the very end just before serving.

    Once the veggies are tender, I like to deglaze the pot with the chicken broth. Youll be using about 2 cups of broth for this recipe. Make sure to scrape up and of those bits that are stuck to the bottom of the pan as you add in the chicken broth.

    From there youll add in the rice and place the chicken on top. Just spoon the cream soup over the top of the chicken. Do not stir it in.

    This recipe will cook for about 10 minutes in the Instant Pot but remember that itll take about 10 minutes for the Instant Pot to come up to pressure before the timer will begin counting down.

    Once the Instant Pot has cooked for 10 minutes and the timer goes off, you will be letting it naturally release for another 10 minutes. After the Instant Pot has naturally released for 10 minutes, use a long utensil like a kitchen spoon or tongs to switch the valve from sealing to venting. Have a kitchen towel handy to cover the valve so that it doesnt spew juices all over.
