How to Make a Roast in an Instant Pot

Yes! I have a 6qt machine and Ive frequently cooked two pot roasts in one go. The trick is to not lay them on the bottom like Ive done in this recipe, if you put them one on top of the other like that they may take much longer to cook. What I do is simply stand them up sideways on opposite sides of the pot, the cook time then is exactly the same as it would be for one pot roast, win win!

Cooking The Pork Roast

There will be some browned bits on the bottom of the pot from searing the pork. You need to get that up by adding liquid to the pot. Dont do this while saute mode is still on. Its very hot and the liquid will steam up immediately. It can be dangerous to stand over the IP when its that hot.

Add the broth and use a whisk to scrape the bits up. This adds great flavor to the broth, which will be used later to make the gravy.

Then put the trivet in the pot. Place the roast on top of the trivet. This is to keep the roast whole and to steam it rather than boil it. If you want, you can leave out the trivet. I just think the roast looks nicer when cooked on the trivet.

Close the Instant Pot and set it to pressure cook . The length of time you need to cook the pork for will vary depending on the size of your roast.

It is recommended that you cook a boneless pork roast for 15 minutes per pound in the Instant Pot.;For a 3 lb roast, that would be 45 minutes. Cooking it this long will lead to a sliceable roast, not a fork tender roast.

PRO TIPS

If you want to slice the roast, dont cook for longer than 45 minutes or it can become dry. If youd rather have a fork tender roast that falls apart like shredded pork, you need to cook it for much longer, like 60 to 70 minutes. If shredded pork is what youre after, Id also recommend placing the roast directly into the pot, not on top of the trivet.

If its under, you can turn it back on for 5 or 10 minutes.

How To Make Pot Roast In The Instant Pot

This recipe is prepared in three stages:

  • First, youll sear and pressure cook the meat. Once that cooking program begins, you can walk away from the pot if you like itll default to the Keep Warm setting and stay hot and ready to carve for up to 10 hours.
  • Second, youll transfer the cooked pot roast to a carving board, strain the fat off of the cooking liquid, then add the potatoes and carrots to the pot with the liquid and cook them under pressure on their own.
  • Finally, when the cooking program ends, youll do a quick pressure release on the pot, carve the roast, spoon the vegetables out of the pot, and pour some of the cooking liquid over everything to serve.

Saute Onion And Garlic

*Note: Your Instant Pots inner pot should look quite brown. Dont worry! Your pot didnt burn, those caramelized brown bits add yummy flavors to your roast beef.

Add in one more tbsp olive oil. Add in sliced onions, then saute for 3 minutes.

Add in 2 bay leaves, ¼ tsp dried rosemary, and minced garlic in Instant Pot. Saute for another 30 seconds until fragrant.

The Best Cut Of Beef For Instant Pot Pot Roast:

Chuck roast is the most commonly used cut of beef used in pot roast recipes.;Chuck is from the front part of the animal and different cuts will be labeled as blade, boneless cross rib, top blade, bottom blade, and shoulder. There are even different names for the same cut and it can differ from store to store I know so confusing!

While you might instantly think of the rectangular, highly marbled chuck roast widely available at most grocery stores, some of the other cuts are also a great choice for pot roast.

The popular rectangular cut of chuck will have a large amount of fat both around the edges of the cut and running through it. I have used this cut with great success in this recipe and nothing rivals it in terms of a tender result but it takes a bit more prep to make it work well . Since a big part of my end goal in this recipe is to create a luscious, fuss-free gravy, I went with a boneless chuck cross rib roast, aka, shoulder roast , this time around. It is a leaner cut of chuck which means less trimming of fat before the cooking process and cleaner drippings that will result in an effortlessly perfect gravy.

Rump roast, which is obviously not from the front portion of the animal, is another cut that will work here. This was my moms cut of choice for her roast and a much leaner cut than chuck. This recipe has not been tested with a rump roast and its possible it could need a longer cook time.

How To Cook A Roast In The Instant Pot Tips & Tricks

  • You really do need to cook a blade or chuck roast for 120 minutes. Blade and chuck roasts are very tough and have fibers that absolutely need to be broken down by cooking, and cooking for a long time. Theses roasts take 8-10 hours in the crockpot, so 2 hours in the Instant Pot is definitely the way to go!
  • You need liquid and not just liquid you need DELICIOUS liquid. Food can be a bit bland when pressure cooking so you need to spice up!
  • If you have a roast that is from a quality butcher, you can try cooking it at 90 minutes. Grocery store roasts are generally lower quality. Play it by ear based on the meat quality of the roast you are cooking.
  • Thick roasts may need to be cooked a little longer as its thickness that determines how those fibers are going to break down inside.

Just writing this post up makes me want to make this roast again. Its similar to that Mississippi roast in the fact that I use a package of dry Ranch dressing in it, but theres no peppers. Trust me, the dry Ranch dressing makes this delicious!

    • Chuck roast- You might be able to use a beef brisket or a round bottom roast, but I havenât personally tried them in this recipe. If you try either, instead of a chuck roast, you may need to add a few more minutes of cooking to achieve the same tenderness.
    • Water- Many readers asked if they can use beef broth as a substitute for the water. You absolutely can, you just might need to pull back on the salt used, depending on how salty your broth is.;

    I’m in the club of, I know browning adds flavor, but I’m willing to sacrifice some flavor so I don’t smell like meat. ;In this recipe however, I finally gave in to the fact that the flavor was 100% better when I sealed in those spices and achieved a deep brown crust. However, I’ll admit, sometimes I sear 2-3 sides and then call it a day.

    To brown your roast in the Instant Pot, set saute to high and wait until the pot says hot.; Then add your oil and meat and DO NOT MOVE THE MEAT for at least 4 minutes.; When the meat will release easily from the pot, you know you’ve formed a good crust.; Flip it and repeat on another side.; Depending on how many pounds of meat you are cooking, you may need to do this in batches.

    What Do I Serve With Pot Roast

    Roast with potatoes and carrots are the classic combination. This recipe cooks up small potatoes along with carrots. So the beauty of this recipe is that you have everything you need to make a complete meal out of it.

    However, Ive made those steps optional so if you prefer your roasts with mashed potatoes, its easy to make the switch.     Mix 1.5 tbsp all purpose flour with 3 tbsp water.

    Mix flour mixture into the beef gravy in Instant Pot one third at a time until desired thickness.

    How Long Does It Take To Cook Pot Roast In A Pressure Cooker

    How to make a chuck roast in your instant pot the easy way.

    The time it takes to cook pot roast in an Instant Pot will vary depending on how large your piece of meat is. For a 3-pound piece of beef, the total time required will be about 2 hours and 30 minutes. This includes the time to bring the beef to room temperature , searing time, and the cook time required inside the pressure cooker.

    I know 2 hours and 30 minutes might seem like a long time, but for ultra-tender and juicy beef, we need all of it. The great news is that a pressure cooker makes much quicker work of pot roast compared to a slow cooker, oven, or when it is cooked on the stove-top.

    Now, I mentioned there was extra time for bringing the beef to room temperature. After testing this pot roast recipe in our own kitchen, we found that if you start with beef straight out of the refrigerator, the roast doesnt become as tender as when you give the beef some time out of the fridge so that it comes up to room temperature before cooking it.

    For a three pound roast, we found that leaving it on the counter for 1 hour was perfect. This extra time has another benefit, it gives us a chance to season the meat. Right after taking the beef out of the fridge, we season it liberally with salt, which means that as the beef sits, the salt has a chance to seep into the meat, making it extra tasty when cooked.

    As a general rule, when cooking roasts in a pressure cooker, assume 20 minutes of cook time for every pound of meat.
