Absolutely, I frequently cook Instant Pot Mac and Cheese, its easy and wonderful. In the mac and cheese recipe, the pasta is cooked in the Instant Pot under pressure.
In this recipe, the Instant Pot cooks the chicken and veggies under pressure however it is used to boil the pasta using the saute setting at the end. While the noodles could be cooked under pressure in this recipe, the chicken and noodles need different cook times and the Instant Pot takes a lot of time to come up to pressure.

You can make this Instant Pot chicken noodle soup with rotisserie chicken that you already have on hand, or you can use your own pre-cooked shredded chicken. Your broth wont be as flavorful, but its a speedy choice.
- To Use Rotisserie Chicken. Omit the bone-in chicken from the recipe, then stir the cooked, shredded chicken into the soup at the very end.

It takes about 15 minutes for the Instant Pot to come to pressure and another 18 to cook the chicken. This recipe uses quick pressure release, so as soon as the 18 minutes are up, remove the chicken and shred it into tender, bite-sized pieces.
- Cook the pasta and vegetables: While you shred the chicken, set the Instant Pot back to the sauté function and bring the broth to a simmer. Add the pasta, cook for a few minutes, then add the escarole and tomatoes and continue cooking until the pasta is al dente.

- Youll need a 6-quart or larger pressure cooker for this recipe. The pot should be just big enough to fit a 3- to 4-pound chicken. If you have a larger pressure cooker , you can also get away with using a slightly larger chicken.
- Be careful when doing a quick-release. This is because liquid-heavy pressure cooker recipes like this soup can release a lot of steam during the venting step after cooking.
- Scared of steam? That’s ok! If you want to avoid the jet of steam entirely, you can wait for the pressure to release naturally. Just wait until the pressure cookers float valve has returned to its “down” position. This will take quite a while, though, since this recipe contains a lot of liquid.
- Chicken jello?! Good chicken soup made with the whole chicken will often develop a jelly-like consistency once chilled, so don’t be alarmed if this happens to you! The soup will turn back into liquid when warmed.
Can I Freeze This Soup
Yes! In fact, I like to keep mason jars filled with this chicken soup in the freezer. That way its easy to defrost some of this chicken soup when needed.
I prefer to freeze soup in wide mouth 16-oz mason jars. Just ladle the cooled soup into each jar, leaving about 1.5 inches of room for expansion in the freezer. Seal with BPA free, freezer safe plastic lids. The soup will keep for 5-6 months frozen.
When you are ready to defrost some soup, simply run the glass parts of the jar under warm water for a few minutes to loosen up the soup. Then invert the jar over a saucepan to remove the soup. Should Noodles Be Cooked Before Adding To Soup
While this recipe doesnt specifically call for noodles, you could add them if you want. If you cook the noodles in the soup they will suck up most of the broth, so its best to cook noodles separately. However, its better to add the noodles directly to single hot bowl of soup instead of to the whole pot because the noodles will continue to suck up the liquid of the soup and become waterlogged.
Can I Use Chicken Breasts In This Chicken Soup In The Pressure Cooker
I used chicken thighs with the skin for this recipe. I think the thighs have more flavor, and when youre sick and barely eating, you need the fat in your diet.
Fat is good for us, and I am working on including more healthy fats in our diet.
If you are someone who really doesnt like the skin or thighs, you can remove the skin, and/or use chicken breasts instead for this recipe.
Just know that you wont have as rich a flavor in the end as you would if using chicken thighs.

One of my favorite ways to add a richer flavor to soups is to use broth in place of the water, or in addition to it.
For this recipe, I love adding some rich chicken broth that I have already made, or purchased.
If you want to make your own chicken broth, you can use the same steps in my Slow Cooker Turkey Stock recipe, but use a chicken carcass instead.
Broth freezes beautifully and is always great to have on hand in your pantry or freezer.

Sure! I find that white button or baby bellas work best for Instant Pot chicken and mushrooms, but you can certainly try a different variety as well.
Baby bellas are simply young portobello mushrooms and typically have a firmer texture. They are also extra savory, so stick with the white buttons if you prefer a milder flavor.
Can I save leftover Instant Pot cream of mushroom chicken?
Allow the dish to cool to a room temperature, then transfer to an airtight container and store for up to 4 days.
Reheat leftovers in a pan on the stove, adding a few splashes of broth as needed for moisture.
