Pro Tips For Perfect Instant Pot Fried Rice

Some of the things I think really helps me achieve non-sticky, flavorful Chinese restaurant style Fried Rice are:

USE LONG GRAIN WHITE RICE The grains have a firm, dry texture, and are best for side dishes, pilafs, fried rice. Produces distinct firm grains that stay fluffy and separate even after cooking.

RINSE RICE rinse the rice thoroughly. Use a fine mesh strainer, rinse the rice under cold running water for couple of minutes or until the water runs clear. Drain the rice well.

To Prevent Mushy Fried Rice:

As I mentioned above fried rice is best made with leftover day-old rice. But in this case, most of you are going to use freshly cooked rice.

Here’s how to prevent that fresh rice from getting mushy:

  • Once you finish cooking the rice in a pressure cooker, you need to transfer the rice to a big tray such as a baking sheet.
  • Spread the rice our while it’s still hot all over the tray, and give it a few minutes to allow some surface moisture to evaporate while you’re preparing other ingredients.

Its an easy step that can absolutely save this and many other dishes from mushy rice.

Don’t forget to put the leftover fried rice in airtight containers or heavy-duty freezer bags. Properly stored, leftover fried rice will last for 5-7 days in the refrigerator. It will maintain the best quality for about 6 months but will remain safe indefinitely if it’s constantly frozen at 0°F.

Few Notes On Making This Instant Pot Fried Rice Recipe:

  • Rinse rice in a strainer and let it hang out for couple of minutes to drain as much water as possible. This step is important to not only wash the rice, as well as remove excess starch < less mushier rice
  • Do not double the recipe. Its just too much to work with and makes the rice overcooked in the process.
  • I used 1 cup of 33% less sodium chicken stock and the salt was perfect along with soy sauce. But, if you have regular sodium chicken stock, then Id suggest using 3/4 cup stock + 1/4 cup water.

What If You Want To Use Brown Jasmine Rice

Brown jasmine rice needs more time to cook in the instant pot and also needs more water. This recipe uses a ratio of 1 cup of rice and 1.25 cups of liquid for the white jasmine rice and cooks in 3 minutes. Brown jasmine rice will require 1.50 cups of liquid and 7 minutes of high pressure to cook the rice.

To make this with brown jasmine rice, add ¼ cup of water and increase the cooking time from 3 minutes to 7 minutes. Everything else will stay the same.

Who doesnt love a night out at a Hibachi restaurant like Benihana ?! Crazy chefs, silly gags, yummy food and gathering around a table with friends and family or sitting awkwardly with strangers and texting about them while at the table and talking about them in the car ride home.

Lifelong memories made. The only thing I dont care for is smelling like I took a Hibachi steam bath every time I leave!

While I love ordering steak, shrimp, chicken and veggies, my favorite thing at any Hibachi place is the Hibachi Fried Rice that is served at the top of the meal.

This is a very simple and light fried rice that isnt doused in oil, has a delicious sesame/veggie flavor and is very satisfying especially with some homemade Japanese mustard sauce or ginger sauce added at the end. It is perfect as a complement to any protein or simply to eat by itself!

And the best part? Thanks to cooking it in your Instant Pot, your clothes wont smell like you just exited a Hibachi sauna!

Heres How I Made It!:

Next, were going to put the rice in the instant pot and with jasmine rice its a 1:1 ratio so Im adding 2 cups of water to go with our 2 cups of rice.

Well start with some milk

followed by some soy sauce

a little heavy cream

just a spoonful of sugar

and some mustard powder

How To Make Chicken Fried Rice In The Instant Pot

Start by rinsing the rice in a mesh strainer. Wash the rice until the liquid from the rice runs clear. This will help ensure that the rice isnt overly sticky and mushy at the end.

Once the rice has been washed, strain off all extra water and add the rice to the instant pot.

Pull the peas out of the freezer and allow them to defrost on the counter.

Add the water, coconut aminos, spices and salt to the instant pot and stir well to fully incorporate into the rice. Be sure all the rice is submerged in liquid.

Cut the chicken thighs up into ½ inch cubes. I typically use my kitchen shears for this, but you could also use a sharp knife and a plastic cutting board .

Add the chicken thighs directly to the instant pot on top of the rice, dont stir. Try to flatten the chicken out but dont mix it in with the rice. The rice needs to be submerged in liquid and if you stir it all together, the rice will likely not all be submerged.

Add the lid and turn on the instant pot for high pressure for 3 minutes .

After coming up to pressure and cooking for 3 minutes, allow the instant pot to naturally release pressure for at least 10 minutes . If you are choosing to release pressure after 10 minutes, carefully flip the valve and release the pressure.

Open the instant pot lid and stir the chicken and rice mixture. To this add the partially defrosted peas and shredded carrots. Stir well.

Thinly slice the green onion and sprinkle it over the top right before serving.

Absolutely! Any kind of protein, shrimp, chicken, beef, or pork will work well in this recipe!

Simply cook the meat in the skillet before scrambling the egg. If using rotisserie chicken, add it to the rice along with vegetables and egg mixture and not before scrambling the egg as the meat is already cooked.

How To Make Veg Fried Rice On The Stove

Before the instant pot, I used to make fried rice on the stove. One of the good parts of cooking on the stove is that you could make instant fried rice with left over rice. But if you do not have left over rice, you can also make it in a matter of minutes.

In a saucepan, boil enough water, on medium-high heat, to cook the rice. Allow the water to come to a rolling boil and then carefully add the soaked rice. Allow the rice to cook for about 12 minutes, it should be al dente.

Strain the water and spread the rice on a plate and allow it to cool down. This ensures the rice does not get overcooked and mushy. While rice is cooling down, stir fry the veggies for fried rice in a wok or a frying pan.

Heat a wok on high flame and add some oil. Once oil is hot, add the green onion whites followed by carrots and green beans. Saute for about a minute and add salt, sugar, black pepper, soy sauce, and vinegar and mix it well.

Finally, add the basmati rice and mix gently. Cook for about a minute, turn the stove off and garnish the vegetable fried rice with chopped green onions.

Smart Program Cooking Option

You can also choose to select the RICE smart program button. This program cooks on low pressure and is best used for white rice. For rice with a firmer texture or thinner rice like Jasmine or Basmati, use the Less mode for rice with a normal texture or regular long-grain or medium-grain white rice, use the Normal mode for rice with a softer texture, use the More mode. You can change the modes by pressing the RICE button again. Use quick release at the end.

How Do You Make Fried Rice In The Instant Pot

Instant Pot Fried Rice

Its super simple to make fried rice in the Instant Pot. You dont even need pre-cooked white rice when making this version!

Well start by frying up some diced bacon. Then, remove the bacon from the Instant Pot using a slotted spoon. Leave about a tablespoon of the bacon fat in there. Next well scramble the eggs in the Instant Pot, flavoring them with the bacon fat.

Then goes in the rice and some water along with soy sauce and oyster sauce. Seal the Instant Pot and let it cook for 6 minutes. Once the timer goes off, let the pressure release naturally for about 5 minutes, then remove the lid and stir in your cooked eggs and bacon along with the frozen peas and green onions. The heat of the rice will thaw those peas in just a couple minutes. Theyll stay tender and firm, and wont be overcooked this way.
