We love broccoli and cheese soup at our house! Ive been making my own copycat Panera Broccoli & Cheese soup recipe for many years. Normally, my soup takes about 30 minutes to prep and cook. I needed a faster solution that generated the same taste! Enter the Instant Pot Broccoli and Cheese soup recipe!

Yes it does! Let it cool completely before freezing it. Try to freeze in portions versus all in one big container.
Best results for reheating is by letting it thaw first, and reheating on a med-low heat, slowly.

- 6ozCheddar Cheese,shredded
- 4ozMonterey Jack Cheese,shredded
- 2cupsHalf and Half
Gather all ingredients, and prepare all of the vegetables, and shred the cheese. It’s easier if you have it all ready to go.
Turn on the pot’s Sauté setting. When hot, add the butter and olive oil. Then add the onion and cook for a few minutes.
Add the grated carrot and the potato and cook for a minute to soften.
Add the pepper. paprika, salt, nutmeg, and garlic. Cook for a minute, stirring.
Add the broth and stir.
Add the broccoli, but don’t stir. Put the lid on and lock it in place. Set the steam release knob to the Sealing position.
Cancel the Sauté function. Then press the Pressure Cook/Manual button or dial. Then the + or – to select 5 minutes .
When the cooking cycle is finished, let the pot sit undisturbed for 5 minutes . Then slowly at first, in bursts, Quick Release the remaining pressure by turning the steam release knob to the Venting Position. Turn off the pot.
Use a potato masher to mash up the veggies well. If you want a creamier consistency, use an immersion blender.
Taste and adjust salt, if necessary.
Serve with some nice bread.

- Hand shred the Cheese This soup is best when shredding the cheese by hand. The pre-shredded bags of cheese do not melt as smoothly in the soup. For the creamiest soup with the best consistency, it is definitely best to shred the cheese yourself.
- Use an Immersion blender: You can use an immersion blender if you prefer a more pureed soup. This will result in a really smooth and creamy soup if dont care for the large pieces of broccoli.
- Cook longer for softer broccoli: If you are using bigger pieces of broccoli add 2-3 minutes to the pressure cooking time. This will insure that the broccoli if extra soft and will fall apart. Naturally giving you smaller pieces of broccoli in your soup.

Stove Top Broccoli Cheddar Soup Recipe Directions
Wash and prep Broccoli. I prefer to cut florets into small bite size pieces. Cut about 4 cups of Fresh Broccoli and set aside. Dice onion, rough chop matchstick carrots and grate cheese.
In a large stock pot over Medium/High Heat add butter and melt. Saute Onion for 4-5 minutes. Onion will begin to turn translucent. Add Garlic, chopped Carrots, and Ham and allow to saute for another minute or two.
Add broth, pepper and Dry Mustard. Dry Mustard is a secret ingredient in this recipe. Its delicious. Stir and add Broccoli.
Bring Soup to a boil and then cover and reduce heat to Low. Allow soup to simmer for 15 minutes.
Add Half and Half and grated Sharp Cheddar Cheese and stir. The heat will melt cheese beautifully.
To thicken soup make a Cornstarch Slurry. Stir in Slurry over medium heat. Cooking soup just a couple minutes will thicken soup nicely. Soup will also thicken as it cools.
Garnish with additional cheese and enjoy. Its also fun to serve with Brown Bread or a Bread Bowl.
Rarely do I have leftovers of Broccoli Soup Instant Pot Recipe, but when I do they are easily reheated. Heat in microwave and stir every 30 seconds until desired temperature is reached or larger portions can be reheated on stove. Gently stir as soup warms reaching desired temperature.
Store leftover soup covered in container in refrigerator for up to 4 days. Broccoli Cheddar Soup can be frozen up to 3 months.

How To Make Broccoli Cheese Soup Thicker
To thicken your broccoli soup, make a quick roux using equal parts butter and flour that is sauteed into a thick paste. You can also make a cornstarch slurry or flour slurry using equal parts water and cornstarch or flour. I typically start with one tablespoon of each, whisk them together until well combined, and add into your soup mixture well.
How To Make Instant Pot Broccoli Cheddar Soup
So you may remember a few years ago I made this recipe for Copycat Panera Broccoli Cheese Soup. Ive had a large number of people asking if I could make an Instant Pot version of that classic recipe.
And the answer is YES.
First, add butter, diced onion, chicken broth, broccoli, carrots, salt, pepper, and red pepper flakes to the pressure cooking pot.
Lock the lid in place, making sure to select Sealing on the valve. Select High Pressure Cook for 4 minutes.
Once the cook time ends, turn off the pressure cooker and do a quick release.
In a small bowl, whisk together cold water and cornstarch. Open the lid of the pressure cooker .
Turn the instant pot on saute and add the cornstarch mixture to the pot. Also add the heavy cream and cheddar cheese. Stirring continuously, mix the soup until cheese is melted and thickens, about 3 minutes.
Turn off and serve immediately. ENJOY.

What To Serve With This Soup:
I am a big fan of soup and a loaf of crusty bread. Since this pressure cooker broccoli cheddar soup is pretty heavy, a nice fresh salad pairs really well. We love this simple Spring Green Salad with Sourdough Croutons.

What Cheeses Go In Broccoli Cheese Soup
There are many varieties of cheeses that you can use in this Broccoli Cheese Soup. You can use whatever cheese that you want to use. However, in this recipe Velveeta is your best choice because it is so creamy and makes the perfect consistency for this soup. I do like to top the soup with shredded cheddar.

Instant Pot Broccoli Cheddar Soup Ingredients:
- broccoli: fresh or frozen will work. I prefer fresh just to be able to chop it very small for my Instant Pot Broccoli Cheese Soup
- cheddar: for the creamiest, cheesiest soup, shred your own cheddar from the block. Pre-shredded cheese doesn’t melt quite as well, however it will still work. We use sharp cheddar in ours.
- carrots: shredded or small chopped, I have found shredded carrots in a package at the grocery so that saves a lot of time!
- butter: unsalted preferred
- onion: white or yellow
- half and half: you can use a combo of milk and cream if preferred. Heavy cream will be richer and thicker, almost too much for my liking. But it will certainly work!
- broth: I opt for chicken broth, low sodium, but for vegetarian, use vegetable broth
- garlic: freshly minced is ideal, but you can sub for about ½ to 1 teaspoon garlic powder
- corn starch and water: this will make a slurry to thicken the soup. If you don’t have corn starch, you can opt for flour as it will work as well.
- seasoning: very basic seasoning in this soup. A touch of paprika, salt and pepper is it. Adjust to your own taste!

One of the things I love most about this time of the year is all of the soup recipes we get to put on the menu! Theres just something about a warm bowl of soup that warms you from the inside out. Dont you agree?

Which Cheese Is Best For This Soup
We love using sharp cheddar. We find it has the best flavor. You can use other varieties of cheddar if you prefer, cheddar jack, or even a Mexican blend of cheeses.
If you are making this vegan, then use your favorite cheddar cheese alternative. Not all vegan cheeses melt the same, so make sure you are using a variety you like and that will melt nicely into the soup.

How To Make Instant Pot Broccoli Cheese Soup
The full list of ingredients, instructions and notes are in the recipe card below. Here are some basic steps and photos to help you along the way.
Prepare all your ingredients or at least begin with the onions and carrots as those will be sauteed first. Turn the Instant Pot and set to Saute. Melt the butter and cook the onions and carrots for 2 minutes. Then stir in the flour .
Add the stock, spices, broccoli and stock and stir through. Pop and lock the lid, set the Steam Release handle to Sealing and press Manual/Pressure Cook button, then adjust the time to 1 minute on HIGH pressure, which should be the default. The IP will beep 3 times and it will say ON on the screen the pressure will build up for 10-15 minutes as there is quite a lot of liquid inside the pot. Once pressurized, the timer will start.
Even though we have set the time to 1 minute, the cooking actually begins during the pressurization of the Instant Pot. Once the timer is done, move the Steam Release handle to Venting to let off all that pressure.
Open the lid and pour in the half and half cream. Use a potato masher to roughly puree the soup.
Press the Saute button again and allow the soup to come back to simmer. Turn off and at that moment add the cheese in 2-3 batches, stirring it into the soup until its melted.
