This Simple Instant Pot White Bean soup recipe, and my visit to Nebraska was sponsored by the Nebraska Dry Bean Commission. Post contains amazon affiliate links.

Nebraska. A blank space in my mind, except for visions of corn fields and cattle spread across the flat landscape. And yet I found myself booking a plane ticket for the state at the end of September, on assignment for the states Dry Bean Commission.

I arrived in Scotts Bluff county on the western edge of Nebraska, to find something completely different and beautiful, with an overwhelming sense of solitude. The wide-open landscape, the enormity of the sky, the incredible rock formations the magnificent sunsets and sunrises. And salt of the earth people.

I was there to capture the bean harvest, and the passionate farmers who grow more than 85% of the countrys great northern beans and the second leading state in pinto bean production. Chances are if youve eaten either of these varieties theyve come from the hands of Jim, or Burdette. Jeff. Dean. Or another family farm just down the road.

What Types Of Beans Can You Cook In An Instant Pot

That’s a great question! And the answer is most. There’s really only one type of bean I wouldn’t bother cooking in the Instant Pot and that’s red lentils. Red lentils are super delicate, cook very quickly on the stove already and you’ll end up spending more time cooking them in your pressure cooker.

All other beans are fair game!

Quick Vs Natural Pressure Release For Pressure Cooked Beans

I always use a natural pressure release when cooking with beans. Beans create a lot of foam when they cook and that can come through the pressure release knob with a quick release. A natural release is also more gentle on the beans where a quick release may result in many broken, less pretty beans.

Do Lima Beans Need To Be Soaked Before Cooking

Soak dried lima beans in water for at least 8 hours. Soaking the lima beans is necessary because it helps to remove some of the sugars, which makes the beans easier to digest. The beans need to be soaked in the refrigerator rather than at room temperature because otherwise they will begin to ferment.

    What Are White Beans

White beans can refer to a couple different beans: Navy beans, Great Northern beans, Cannellini beans, or Baby Lima beans. Theyre all white beans and to be honest, they kinda look the same. I even know people who use the white beans interchangeably for recipes. So whats the difference?

White Navy Beans: also called pea beans, the white Navy beans are small, oval-shaped, and quicker to cook. As they get creamy when cooked, theyre perfect for mashing, pureeing in dips, and thickening soups, stews, and more.

Great Northern Beans: larger than Navy Beans but smaller than Cannellini beans, medium-sized Great Northern beans are known for their mild, nutty flavour and firm flesh. They hold their shape better than the smaller white Navy bean.

Cannellini Beans: they are the largest of the white beans family, also called White Kidney Beans. Their flavour profile is nutty and earthy, and cannellini beans keep their shape best out of all of them.

Baby Lima Beans: also called butterbeans, they have a distinctive flat-oval shape with a mild earthiness flavour and a creamy, buttery texture.

For todays Instant Pot recipe, Ill be using white navy beans. I have not tested the other white with the other beans.

    Overnight Soaking Of Lima Beans

It is the usual method of soaking the dry lima beans. To follow this method, take water in a large bowl and add the beans to it. All the beans should immerse adequately, and there should be enough space to accommodate the double-sized beans. Then cover up the bowl and keep it in the fridge overnight.

When you are ready to make the soup, drain the water and rinse the beans. Now your lima beans are prepared, and you can start cooking the soup.

How To Reduce Gas Caused By Eating Beans

Yep, I’ve got even more to say about gas, I am, after all, still a Nurse Practitioner at heart and belly problems are a regular topic of conversation for me.

    • Soak the beans for at least 12 hours before cooking them
    • Slowly increase your intake of beans over time. Your belly will learn to deal with the extra fiber better as you eat more of them
    • Try different beans. Some people do better with certain beans than others so if one variety is causing you or your loved ones problems, try a different one
    • Take a supplement like Beano with your meal. Beano contains enzymes that are better at breaking down the hard to digest sugars in beans which means less fermenting and gas production in your digestive track

    How To Use Them

I love that these instant pot pinto beans can be eaten as is, or used in other recipes! Here are some of my favorite ways to use them.

Add a bit of cilantro, and eat them as is. You can strain them, or serve them with the liquid. I love them with a scoop of cottage cheese, as well.

Use them in enchiladas. Some of my favorites are these Easy Enchiladas or these Garlic, Bean and Chicken Enchiladas, using the pinto beans in place of the cannellini beans.

These beans are perfect for topping Navajo Tacos!

They are great in most chili recipes, like this Crock Pot Chili. If the recipe calls for another kind of bean, I will often use pinto beans.

Do You Have To Soak Beans

Another good question! And my answer isit depends.

A lot of people say that soaking your beans beforehand will help make them easier to digest. There are studies that show it does, others that say it doesn’t make a difference at all. So I guess my point here is that it depends on your body.

If you find that beans are hard to digest, or that they give you gas/cause bloat, then you should probably soak them. If not, then you might be fine not soaking!

HOWEVER when it comes to cooking, that’s where the real benefit of soaking your beans lies. When you soak your beans, your cooking time is cut by at least 75% . So if you’re in a rush, then for sure soak your beans!

note: If you do soak your beans, soak them overnight!

    Instant Pot Kidney Beans

The Instant Pot is our preferred method for cooking kidney beans because its quick and easy , and yields perfectly tender beans!

Heres what you need to know:

    • Ratio = 1 part kidney beans : 3 ½ parts water
    • Cook Time = 40-45 minutes
    • Release = 15 minute natural release, then release any remaining pressure

Kidney beans are versatile and go especially well in stews, soups, chili, pasta, salads, or alongside steamed or sautéed greens.

    How To Store Homemade Beans

Instant Pot Pinto Beans ⢠Now Cook This!

Cooked beans can be stored in a sealed container in the refrigerator for up to a week.

To freeze, portion 1 cup of beans into freezer safe ziplock bags . Press them flat to freeze this will allow them to thaw more quickly.

You can store your beans in some of the cooking liquid or rinse and dry them prior to storage. Storing them in the cooking liquid will keep them a bit more moist. Storing them rinsed makes them very convenient to take from the freezer and add to a recipe without needing to thaw or rinse beforehand.

What If My Beans Are Still Hard

Occasionally, you might open your pressure cooker and find that your beans are still a little crunchy or not cooked quite as much as you like. This is fine! The cooking times I give in the recipe are just general guidelines, but know that there can be quite a lot of variability in the beans themselves. Your beans might take a little longer to cook than expected depending on their age, their type, or even the type of water you use .

If your beans aren’t quite done, here’s what to do: Put the lid back on the pressure cooker and make sure the release valve is set back to “sealing.” Cook at high pressure for another 5 to 10 minutes . The pot will quickly come back up to pressure because the contents are already hot. Check your beans after the extra cooking time and continue cooking for longer if needed.
