With This Amazing Instant Pot Gravy Recipe Youll Never Run Out Again No Matter How Big Your Holiday Hoard

Gravy. Theres probably nothing more controversial when it comes to holiday foods. People have such intense feelings about it ~ theyre either set on recreating the gravy they grew up with, or maybe the stuff they grew up with was so atrocious theyre on a lifelong quest to make it right. It really is the distilled essence of the holidays: the long anticipationthe tense huddles over the bubbling potthe aroma that swims through the houseculminating in that epic moment when someone passes you the gravy boat and you get to slather it all over everything ~ how can you not be passionate about gravy?

Trouble is, with all that riding on it, gravy almost always disappoints. Its too thick, or too thin, has lumps, has no flavor, its too greasy, or.worst of all...theres not enough! Its a conundrum that nobody wants to get caught up in, so no wonder we only make gravy a couple of times a year.

But thats such a shame, because gravy makes so many everyday foods so much better. Luckily Ive figured out a way to solve these pesky problems, with the Instant Pot!

Heres what I propose: that you make a large batch of this no drippings Instant Pot gravy a day or two before any holiday meal. Then youll have extra for the big day, and plenty for leftovers, too. Once youve done that, plan to make it the rest of the year, just because you can.

How Long Is This Good For:

Instant Pot Gravy Recipe (no drippings!)
  • Serve: The gravy can be kept at room temperature for up to 2 hours.
  • Store: Keep the gravy in an airtight container in the refrigerator for up to 1 week.
  • Freeze: Since this is not a cream or milk-based gravy, it will freeze beautifully! I like to let it cool to room temperature and then pour it into Ziploc freezer bags. Frozen gravy will keep for about 3 months.
  • TO REHEAT: Thaw the gravy in the fridge overnight. Then heat it in a saucepan over medium heat until heated through. You may need to add ¼ or so of water or broth since the freezer tends to dehydrate things a little.

Do You Have To Use Gravy Packets Or Can You Make Homemade Gravy

No, you do not need to use gravy packets. You could add an onion soup packet to the roast while you cook it, and then make a simple gravy with the drippings. You may need to add a little more beef broth and season it to taste. The simplest way to make the drippings into gravy would be by thickening it with a cornstarch water mixture.

How To Roast A Chicken In The Instant Pot

When creating this recipe I tried so many different methods for getting the perfect juicy chicken meat, the perfect brown skin with just the right amount of caramelization, and the perfect velvety gravy with tons of flavour. Heres the BEST method for getting the perfect Instant Pot Roasted Chicken every single time:

  • Start on sauté mode. Youll be browning the chicken skin first before pressure cooking, so use a bit of olive oil and make sure your Instant Pot gets nice and hot.
  • Use a fresh or thawed chicken, not frozen. Starting with a frozen chicken wont work here. Be sure to thaw your chicken completely first, before starting this recipe, or use a fresh one.
  • Pat your chicken dry, and season generously. Patting the chicken dry before browning will ensure the skin becomes as brown and crispy as possible.
  • Brown the chicken on all sides, turning it gently. Let the skin brown nicely, turning the chicken as it browns to make sure it browns on all sides. Use a pair of tongs for this, and work carefully so you dont rip the skin.
  • Use the trivet. Cook the chicken in the Instant Pot on the trivet so the bottom of the chicken doesnt sit on the bottom of the pot. This will prevent that dreaded Burn notice, and itll prevent the bottom of the chicken from getting soggy as it cooks. The trivet also helps with easy removal.

Secret To A Delicious Instant Pot Gravy

This gravy is very flavorful, thick and golden brown and can be poured over everything! What makes it so good? Its the combination of chicken and beef stock that gives it the best flavor and that lovely color.

Using beef bone broth rather than stock will give you an even richer, more luxurious gravy. So, if you plan to make a batch for Thanksgiving or another special occasion, it is worth making some beef bone broth in the Instant Pot ahead of time. For a more intense flavor, we prefer to use chicken stock cube but you can also get pre-made chicken stock or make your own.

Another trick is to puree the cooked onions and garlic into the gravy to retain as much flavor as possible plus, the onion starch will thicken the gravy slightly before you even add any flour.

Note on flour roux: Finally, this easy gravy recipe doesnt use any roux and is instead thickened with flour slurry and a dollop of butter right at the end.

    Ingredients For Cooking Sausage Gravy

Quick Brown Gravy in the Instant Pot

*Soy Sauce: Definitely not a traditional ingredient in a classic sausage gravy, but its our little magical ingredient that will boost the savoriness and flavor complexity of the sausage gravy.

*Milk: We like to use Whole Milk for a richer flavor and more wholesome consistency.

*Unsalted Butter: Different brands or even different blocks of the same brand of salted butter can differ in levels of sodium, so we prefer to develop recipes using unsalted butter for more control & consistency on the dishs overall flavor profile.

There Are A Couple Of Things That I Think Are Important To Know About The Slurry Method

  • It is import to use cold water when mixing your slurry.
  • Stir the slurry right before adding it to the liquid. I am going to get a little science-y here. The cornstarch is actually in suspension and not dissolved in the water. It will settle out of suspension the longer it sits.
  • Add the slurry slowly to the simmering liquid, whisking constantly. As soon as the starches start to heat up, they begin to swell. If you dont stir constantly, you will end up with gelatin globs. Never good in a gravy.
  • Cook just until thickened and the starchy taste has disappeared. Starches break down the longer they are cooked. This means that your nice thick gravy will start to get thinner and thinner the longer it is on the heat. You do not want gravy soup.

    Instant Pot Sausage Gravy

    Instant Pot Turkey Gravy

One of my husbands favorite comfort foods and most often requested dinners is biscuits and gravy. Sometimes I make homemade biscuits and sometimes I buy a can of refrigerated biscuits at the grocery store. But every time I make it every ounce gets gobbled up.

I decided to try and make the gravy portion of biscuits and gravy in the Instant Pot. I combined the recipe from Completely Delicious and a few others that Ive seen around the internet. The results were a thick country style sausage gravy that tasted absolutely amazing. I liked how deep the Instant Pot inner pot was to stir and make the gravy. Usually when I make it in a frying pan on the stove it doesnt work as well to make a large batch.

The addition of 2 slices of bacon to the gravy made it so flavorful and by pressure cooking for just a few minutes it infused all the flavors for an amazing gravy that had us licking our plates.

You can easily double this recipe if youre serving a crowd for brunch and keep your Instant Pot on the Keep Warm setting until youre ready to serve it.

I made this recipe this morning and it was so delicious! My kids said it was the best gravy ever. I loved how it tasted and a bonus was doing it all in one pot! No more splattering of the sausage cooking or gauging if Id added enough flour/milk/fat ratio. This was PERFECT!

    Instant Pot Recipe Tips

    • It’s important to let the pressure release naturally. Leave it for another 20 minutes after cooking to allow it to release.
    • After 20 minutes, feel free to release the vent to release any extra steam and allow you to open the lid.
    • Don’t skip searing the beef – this helps lock in the flavor!
    • Halving the roast helps cut down on the cooking time and allows you to distribute the seasoning more evenly. This will give you a more flavorful dish.

How to Make Instant Pot Chicken and Gravy

Yes, this recipe is quick but the best part is you dont need any ingredients or anything super fancy for this dish. You will need:

    • Pork chops
    • Chicken broth
    • Cornstarch

Pork chops Boneless or bone- in chops work in this recipe. The cook time and everything stays the same.

Spices These are basic spices that I use for most of my meals. They give the meat a good flavor without being overpowering. Feel free to adjust the spices to your taste.

Olive oil This is used to grease the inner pot. You can also use butter instead.

Chicken broth You need a liquid in the pot to cook your pork chops. Chicken broth provides a nice flavor and makes a great gravy after.

Cornstarch This will help thicken your broth and create the gravy after cooking. Cornstarch can be found in the baking aisle. You can also use arrowroot powder if youd like.
