Well, thanks to everyones favorite pressure cooker , the Instant Pot, were able to make this amazing Italian-style short ribs feast in no time at all!

Before we start the pressure cooking process, we need to quickly sear the ribs and sauté the vegetables.

Dredge the ribs in seasoned flour, and then in batches, use the SAUTÉ function to beautifully brown them in a little oil.

After searing the ribs, its time to start building that classic Italian flavor profile.

In the same pan, we cook the cubed pancetta until just crispy.

Next, go in the chopped onions, carrots, and garlic.

It only takes about 40 – 50 minutes for most beef short rib recipes in the instant pot. When it beeps do a natural pressure release for 10 minutes and then release any remaining steam.

40 minutes may seem like a long time, but most short rib recipes take 6-8 hours in a slow cooker.

The instant pot speeds up the process without compromising on taste or texture in the instant pot short ribs.

  • Dont skip the sear. Browning the meat on the outside only takes a couple more minutes and it adds an extra layer of flavor.
  • And speaking of the sear, dont forget to season before it. A little bit of salt and black pepper seared right into the meat are all you need.
  • Be patient. Once the Instant Pot is finished cooked, be sure to let it do a Natural Pressure Release for 15 minutes before venting the steam. This will help makes sure the ribs are super tender!

  • Use a Dry Rub. To start your ribs on a delicious note, cover them generously with a delicious dry rub.

The rib rub recipe Ive included here uses basic pantry staples you probably already have, like chili powder, garlic powder, and cayenne, to give the ribs loads of flavor. If youd like to make the ribs more spicy, feel free to bump up the amount of cayenne.

To balance the spice, I also add brown sugar to my Instant Pot Ribs rub. I grew up loving the brown sugar/molasses flavor of Kansas City BBQ, and the brown sugar reminds me of some of my favorite KC BBQ joints.

The Instant Pot has several settings, depending on which model you have. I used the “Pressure Cook” setting, also known as the manual setting to make these.

Some people have a “slow cooker” setting. That setting is to make the instant pot act like a slow cooker.

I love to make these short ribs ahead of time! After cooking, I just let them cool in the cooking pot and refrigerate them overnight.

About an hour prior to serving, remove the short ribs from the fridge. Use a spoon to skim the solidified layer of fat from the surface.

Reheat the short ribs in the pressure cooker by selecting High Pressure and 2 minutes cook time. Allow the pressure to release naturally for 5 minutes, then finish with a quick pressure release.

How To Reverse Sear After Pressure Cooking

How to Make Short Ribs in the Instant Pot

Okay, so you do the pressure cooking first. Like I said, just throw them in there. Then what? Well, they need a nice crust. I have tested two ways to get a nice crust on these after theyve finished pressure cooking.

The first is to use the air fryer. Eight short ribs fit perfectly in a single layer in my air fryer. You mist the ribs lightly with cooking oil , sprinkle them with a little bit of salt, and then put them into the air fryer at 400F for 7-10 minutes, no flipping required, until nice and brown.

The second method to get a good reverse sear on the short ribs is to put them under the broiler. Again, mist them lightly with some cooking oil and season them lightly with salt, and then put them on a pan about 6 inches from the broiling heat source. Watch them carefully because they sometimes brown more quickly than I expect, but youre looking at about 3-5 minutes and then you flip them over and do another 3-5 minutes on the other side.

I dont recommend using the Instant Pot on Sauté to get a sear on the short ribs after pressure cooking. I tried it and it took a long time and I had to do it in batches or else they wouldnt brown. So definitely go with the air fryer or broiler.

Can I Make These Without An Instant Pot

Absolutely! We love using a slow cooker here if you want to make short ribs without the oven. Use a skillet on the stovetop to follow this recipe as directed until you add the wine to the sauce, then transfer everything to the crockpot and cook for 7-8 hours on low.

The draw of the Instant Pot is that short ribs can be cooked quickly so just be aware that if you use another method, this recipe will take some extra time.

Tips For The Perfect Short Ribs

  • This is a great make-ahead recipe, as the ribs are even more flavorful on the second day. Cook the ribs as directed, then transfer them to a baking dish and spoon the sauce over the top. Cover the dish with foil, then refrigerate until youre ready to eat. Reheat the ribs in the covered dish at 350 degrees F for about 25-30 minutes or until they are warm.
  • Serve your short ribs over mashed potatoes, cauliflower rice, polenta, or a short pasta such as orzo. I also like to add a green vegetable on the side like zucchini, broccoli, green beans or asparagus.
  • Have leftover short ribs? Dice up the meat and use it to make beef noodle soup.
  • I recommend using fresh herbs in this recipe, but you can substitute dried herbs in a pinch. Just use 1/3 of the amount of dried herbs thats listed for the fresh herbs.
  • The alcohol in the red wine evaporates during the cooking process, but if you prefer not to use wine, just add more beef broth instead.

How To Make Instant Pot Short Ribs

  • Sauté veggies: Turn Instant pot to sauté setting and sauté onion and carrots in oil. Remove veggies to a plate.
  • 2. Brown Ribs: season ribs in salt and pepper and coat on all side with flour. Add ribs and brown on all sides, then remove to a plate.

    3. Deglaze: Add the wine to deglaze the pan, scraping the bottom of the pan to release any browned bits of flavor. Bring to a boil, add beef broth, salt, pepper, and tomato paste.

    4. Pressure cook: Return ribs and veggies to the pot and add sprigs of thyme and rosemary. Cook on Manual/High Pressure for 45 minutes with a 15 minute natural release.

    5. Thicken sauce: carefully remove short ribs to a plate and turn pot to sauté. Add cornstarch slurry and cook until sauce has thickened.

    6. Serve ribs over mashed potatoes with a spoonful of gravy from the pot.

    Store leftover short ribs in a sealed container in the refrigerator for 3-4 days depending on the freshness of your ingredients.

    MAKE AHEAD AND FREEZING INSTRUCTIONS:

    To make ahead: If youd like to make this ahead of time, I suggest using the stovetop method!

    To freeze: Allow the dish to cool completely. Store in a freezer safe container in the freezer for 3-4 months. Allow to thaw in the refrigerator and reheat slowly on the stove or in the microwave.

    Lets get to the best beef short ribs recipe, Im getting hungry!

    First, well season the meat with salt and pepper. This step helps to build flavor throughout the cooking process. Dont skimp, you need a generous amount!

    Next, were going to sear the short ribs and get a nice crust on them well do this right in the Instant Pot using the Saute setting. Be sure to do this in batches. We dont want to crowd the pan too much or they will steam instead of brown.

    After cooking short ribs on the outside to get a brown crust, remove them and saute the garlic with some oil in the Instant Pot for just a minute.

    TIP: This is a basic 5-ingredient beef short ribs recipe thats the point. You can definitely up the flavor by adding some sauteed onion before adding the garlic, or adding fresh herbs such as thyme or rosemary.

    Add some beef broth and coconut aminos to the pressure cooker, and use a spoon to de-glaze the pan. This means getting all the yummy browned bits off the bottom! Place the short ribs back in there, along with a bay leaf.

    Then, well let the pressure cooker do its magic. For boneless Instant Pot short ribs, set the time to 40 minutes, or increase to 50 minutes for bone-in pressure cooker short ribs.

    After the instant pot short ribs are done, let the natural release do its thing for 10 minutes before switching to manual release.

    TIP: You need the natural release, because this helps the beef short ribs finish cooking and helps them come out tender.
