When youre working with a pressure canner, you have two different ways to test your pressure. Youll either have a dial gauge or a weighted jiggler.

If you have a dial gauge, youll want to be sure to take it into the county extension office every single year, and before the first time you use it to be sure its reading the pressure correctly.

If you have a weighted gauge, they work with simple physics principles, so these are always correct.

How To Do It

The process for traditional steaming with a glass lid is similar to the pressure steaming process:

  • Set up your Instant Pot with your trivet, steaming basket, and at least 1 cup of water.
  • Instead of hitting Steam, hit the Sauté button. Doing so will create a steaming environment similar to steaming on the stovetop: the water in your pot will boil, the lid will retain the steam, and you will be able to watch your steaming food inside the pot through the clear lid.

Clean Your Instant Pot Sealing Ring

The sealing ring is made of durable, heat-resistant silicone that provides the air-tight seal thats critical for your Instant Pot to work properly. You can hand wash the sealing ring with warm, soapy water or run it through the dishwasher. Wait until the sealing ring is dry before replacing it in the correct position.

Another option is to steam clean the sealing ring while its still attached to your Instant Pot. Add one cup of water, a cup of white vinegar and one cut up lemon rind. Run the Steam program for two minutes, then remove the sealing ring and let it air dry.

The sealing ring is critical for maintaining the right pressure in your Instant Pot. Scrutinize it for cracking or tears after each wash. If you see any damage, you should install a new sealing ring. The manufacturer suggests using only genuine Instant Pot sealing rings, as using those from other brands may void your warranty.

Since silicone can pick up food odors and discolorations during cooking, you may want to use one sealing ring for spicy foods and another for sweet foods. An easy solution for getting rid of sealing ring odor is to soak the ring in white vinegar and let it air dry.

What Is Pressure Canning Exactly

Pressure canning is when you preserve food by bringing it to a temperature of 240 to 250 degrees Fahrenheit to eliminate the risk of spoilage from the bacteria known as Clostridium botulinum or botulism for short.

It can be killed at a temperature of 212 degrees Fahrenheit but its spores can survive and spread so they need a temperature of between 240 to 250 degrees Fahrenheit to kill them off.

The Instant Pot Max claims it can maintain a steady pressure of 15PSI which keeps the temperature at a steady 240 degrees Fahrenheit or higher.

How Long Does It Take To Cook Steak In An Instant Pot

The answer to this question depends on a series of variable factors.

First, we have the shape of the steak. Are you cooking an entire piece or will you cube/shred the meat?

If youre cooking an entire piece , you should also decide on the result youre aiming for . Still, regardless of the case, you shouldnt use thick pieces the heat must be able to penetrate the meat from top to bottom.

For a rare steak, you only need to use the saute function. For medium and well-done you will need to top the sauteing with some pressure cooking.

I like my steak well-done so I usually leave it in the Instant Pot for about 15 minutes, but you should also adjust the time and temperature according to the size of the steak.

What About Water Bath Canning

What Can You Do with an Instant Pot?

It is always okay to water bath can in any large pot as long as you have some sort of rack to keep the jars off the bottom of the pot.

Yes, you can use your pressure canner or pressure cooker as that large pot IF you do not seal the lid. Sealing the lid would build pressure and you would no longer be water bath canning.

However given the heaviness and bulkiness of a pressure canner or cooker, you may want to use something more light weight like a stockpot or a good old-fashioned water bath canner.

  • If you press only the Steam button, it will automatically steam your food under high pressure for 10 minutes.
  • If you press More, this time will go up to 15 minutes
  • Pressing Less will steam it for just three minutes.
  • You can also change the time manually and adjust the pressure as usual with the Pressure button.

While the steaming process in an Instant Pot can accomplish the same result as steaming on a stovetop, the added pressure of the Instant Pot accomplishes these results much more quickly, in the same way its Pressure settings accomplish many aspects of traditional cooking in less than half the time.

For tougher veggies like potatoes, carrots and other roots, this can be a great time-saver, and there are really no disadvantages. But for delicate foods that are more easily overcooked, like spinach and broccoli, there can be a risk with the Instant Pot of overdoing it.

To compound this risk, unlike in traditional steaming over the stovetop, you are unable to check on the progress of your steaming foods while they are inside a pressurized Instant Pot. You will not be able to see how far they have cooked until the process is completely over.

It really depends upon the food you want to cook and the brand/size of pressure canner you have.

  • First, you must check the manual of your particular brand and model size to verify it is okay to pressure COOK in your canner. Some brands vary as I describe below.
  • You should avoid cooking things that bubble up or foam because they can potentially clog and block the steam vent of the canner. A blocked vent would cause the pressure to build in the canner which would be dangerous.
  • There are two main brands of pressure canners here in the United States: All American and Presto. And there are different sizes/models of each.

    Note: To make things just a little more confusing, Presto also makes cookers and they call their canner a canner/cooker.

    The All American Pressure Canning manual states that you should NEVER cook the following foods in the canner: rice, applesauce, beans, cranberries, rhubarb or spaghetti plus any other food you think might foam up.

    However, the Presto Pressure Canning manual states that you CAN cook these items IF you only fill the canner half way so that the food can not foam up to the lid.

    So to cook in your pressure canner, you must find or look up the manual for your brand and model and verify its use.

In the infomercial, the hosts claimed that the instant cooker being demonstrated could be used for home canning. They also claimed the product met USDA standards for canning. This perked my ears up because such claims could be very dangerous.

    You may be thinking its just home canning. My grandmother did it. Whats the big deal? Well, not all home canning is created equally. There are two methods of home canning used for two different types of foods.

    For your normal run-o-the-mill canning, such as making some jam or fruit preserves, you wouldnt need a pressure cooker or any type of instant cooker. For that, youd just use the hot water bath method. This method, which most home cooks will be more familiar with, is suitable for high-acid foods such as pickles, tomatoes, salsas, and fruits that contain enough acids, especially citrus fruits, but many others as well.
