What Is The Best Cut Of Beef For A Rare Roast

Instant Pot Classic Pot Roast | Boneless Chuck Roast Recipe

A Top Loin roast is my favorite cut of beef for this method. It has lots of flavor. Slice it thin for amazing roast beef sandwiches! The roast pictured is an Eye of Round roast, which is a little less expensive, and still produces excellent results. You could also try a Bottom Round roast, and have a wonderful, sliceable beef roast.

You will get the best results from a thicker roast. This roast is about 2.5 pounds, and just 3 inches thick. I wont cook this one as long as a larger, thicker roast.

Here are the steps to make a nice rare or medium rare beef roast in the Instant Pot:

When you trim the fat, dont take all of it off. Leave some for flavor!

When you add the roast back into the pot to pressure cook it, use the metal trivet/rack and set the roast on it.

You dont HAVE to do this, but I like the results a little better as the sear stays a little crisper.

Sometimes I forget the trivet, as I did below, and the results are still awesome!

If you are making the roast to have slices for roast beef sandwiches, you can skip the gravy making steps.

Maybe save the juices and make some French Dip sandwiches? Strain the au jus before serving so it is nice and clear of bits.

If you dont want your roast to be rare, but you still want it to be sliceable, just let it cook an extra minute or two. Then let it Naturally release a little longer.

How Do You Shred Beef Easily

  • Hold the roast steady with one hand, then place the beef on your cutting surface. Hold it securely with your non-dominant hand.
  • Shred off the beef with one fork going with the grain. After its been slow cooked or pressure cooked it should be SUPER easy to do.
  • Repeat as needed and discard inedible pieces. Thats how we made our Instant Pot barbecue beef recipe.

    What You Need To Make This Instant Pot Round Roast Recipe

    Use a beef round roast. This is a less expensive cut of meat, typically tougher but not when you prepare it like below!

    All root vegetables will work here. Seriously, use this as an opportunity to use that leftover produce. Potatoes of all kinds, carrots and other root vegetables cook wonderfully in here.

    I have not used a frozen or canned vegetable in here and recommend to keep it with the thicker, more dense root vegetables in their fresh state.

    You can use a frozen chuck roast to make Instant Pot Pot Roast. Simply add about 20-30 minutes to your pressure cooking time if cooking a frozen roast. There is no need to sear it first just rub the seasoning on the frozen roast and pressure cook as instructed. You can reverse sear the roast after it’s done following the same instructions as our Instant Pot Prime Rib.

    Yes, unfortunately, you can overcook the meat. If you are working with a smaller cut of beef sirloin, like a 2lb cut, you will need to lessen the amount of cook time by 5 minutes.

    When overcooked, steak is still edible. It wont be as enjoyable if its not cooked properly.

    Be sure to use a digital meat thermometer when checking the temperature. For a medium-rare roast, it should be 120 degrees F.

    Tips For The Best Instant Pot Pot Roast

    So, with all that background in mind, I have found that there are a few key tips to making a good Instant Pot roast.

    • Start with good tried and true cut of meat. So, use a chuck roast. In a pinch a round roast might suffice.
    • Use a good amount of flavoring. In my case I cook in beef broth and use Montreal Steak seasoning, onion soup mix, and bay leaves.
    • Pressure cook the roast for at least 20 minutes per pound.
    • Natural release, preferably a full natural release, but if impatient, try to get at least 20 minutes.
    • Pressure cook the vegetables separately to avoid mushy veggies.

    Cooking Time For Instant Pot Pot Roast

    The Instant Pot website lists the cooking time for small chunks of beef roast at 15-20 minutes per 450 grams or 1 pound and large chunks at 20-25 minutes per 450 grams or 1 pound. I prefer roasting a large roast that is not cut into chunks to avoid accidentally overcooking or drying it. That also assures that the collagen is spread through the whole roast. I cook at 25 minutes per pound and typically use a three pound roast. So 75 minutes is about perfect for that. You will see some suggest 90 minutes for any roast, but I have seen reports of overcooked roasts with that length of time, and a generic time that does not consider the weight of the roast is not very helpful. However, overcooking usually wont harm things too much other than causing a loss of flavor and some drying.

    Very small roasts can be tricky. I suggest adding more time, even perhaps doubling it, than the normal 20-25 minutes per pound for a small roast.

    Natural Release is also key to a good Instant Pot roast. If impatient, give the natural release at least 15 minutes. My full natural release took 25 minutes. Doing so helps lock in the juices and keep the meat moist. It seems that many times when a person reports getting a tough roast they either pressure cooked it for too short of a time, or they used quick release. So, once quick release is used, your 3 pound roast will actually take longer, around 100 minutes.

    How To Make Pot Roast In Pressure Cooker

    • Turn your pressure cooker to the Saute function and pour in 1 tablespoon oil.
    • While the pressure cooker is heating, liberally season the chuck roast on both sides with salt and pepper.
    • Place the seasoned roast into the heated inner pot, and sear the roast for 3-4 minutes per side or until browned.
    • Turn the instant pot OFF from the saute function and remove the pot roast from the inner pot and place on a platter.
    • Pour in about ½ cup of the beef broth and use a spatula or wooden spoon to scrape up the browned bits on the bottom of the inner pot, so that pressure can build appropriately and you wont get a burn notice.
    • Add seared roast back to the inner pot. Pour in the rest of the beef broth and then sprinkle the with additional salt, pepper, and onion powder. Top the roast with minced garlic and horseradish.
    • Cook for 20 minutes per pound on high pressure. This would be 60 minutes for a 3 pound roast.
    • Once the cook time has elapsed, let the pressure release naturally for at least 10 minutes. This will keep the pot roast super tender.
    • Remove the pot roast from liquid and place onto a platter or cutting board. It is okay if it falls apart as you are removing the roast–it should be fall-apart tender.
    • Tent the meat with foil and let rest for 5-10 minute befores shredding or slicing and serving with the cooking juices.

    • It’s important to let the pressure release naturally. Leave it for another 20 minutes after cooking to allow it to release.

    A great Instant pot beef roast starts with a good cut of beef. Normally, tougher cuts work best for pot roast as they have high amounts of collagen that, when cooked over a long period of time, breaks down into gelatin which tenderizes the meat.

    Press Saute button to Sauté More function to heat up Instant Pot. It will switch to ON on the screen.

    Wait until it says HOTon the screen .

    *Pro Tip: Make sure Instant Pot is as hot as it can be in order to induce a Maillard reaction.

    Add 1 tbsp olive oil in the Instant Pots inner pot. Ensure the whole bottom is coated with olive oil.

    *Note: In total, there are 6 sides to a beef roast. We are browning 4 sides of the beef roast excluding both ends .

    Pat dry the beef roast with paper towel. Generously season one side of the beef roast with kosher salt and black pepper.
