As a mostly stay-at-home dad responsible for all the meals in our household, I depend on a supply of boiled eggs in the refrigerator ready to be added to soups, salads, stews, sandwiches, stir-fries and tacos as an essential part of my planning.

Years ago, in an effort to answer a perennial question whats the best way to boil an egg? I hatched a plan using the only method I know: lots and lots of testing.

It was a multidecade endeavor. The series of tests I conducted variously as a kitchen monkey at Cooks Illustrated magazine, as recipe czar at the website Serious Eats and in researching my cookbook produced good data, but none of it felt definitive. Further home experimentations have left unanswered questions and conflicting results.

Do older eggs really peel more easily? Can an ice bath prevent green yolks? Is there anything the Instant Pot cant do better? I simply did not have enough data to say for certain.

With that in mind, for my first column on cooking and science for The New York Times, I decided to undertake my greatest egg-peeling experiment yet, and I have finally come up with some answers.

For some experiments such as a test to determine how much eggs from true pasture-raised hens differ from the eggs that come 15-dozen-in-a-crate at Costco I administered a triangle test.

Instant Pot Pasta Sauce

Unless Im following a specific recipe, I prefer to cook the pasta in water and cook the sauce pot-in-pot above the pasta.

However, you can cook pasta in a sauce. If you do this, it is SO IMPORTANT to add enough liquid to the pot. Many jarred sauces include thickeners, which can create a film on the bottom of the cooking pot that will change how your pasta cooks and may lead to a Burn notice.

If the sauce is thin when you remove the lid after pressure cooking, turn off the Instant Pot. The pasta will continue to absorb liquid as it cools.

If the sauce has far too much liquid, select Sauté and simmer the pasta until the sauce is somewhat thickened.

How Many Eggs Can You Hard Boil In The Instant Pot

Ive had great success with anywhere from 2-24 eggs. Most mornings I make just two or three eggs for breakfast, but its great to make a big batch and have a quick, healthy snack ready anytime.

You dont need to peel your eggs before refrigerating them. In fact, theyll keep better if you dont. Keep them in a bowl or container in the refrigerator, or use the egg holder that comes with your fridge if you have one for easy access. Unpeeled eggs will keep up to a week when refrigerated.

Cook Time Variations For Instant Pot Hard Boiled Eggs

This recipes uses the 5-5-5 method for cooking hard boiled eggs. But since everyone likes their eggs, more importantly, the yolks cooked a certain way, here are a few cook time variations. You can use these to customize the way you like your boiled eggs.

  • 3 minutes: Soft and slightly wet yolks with fully set whites
  • 4 minutes: Cooked creamy yolks with medium firm whites
  • 6 minutes: Fully set yolks with firm whites

To safely release the pressure, use a long spatula or a pair of tongs to move the valve to the release side. Do make sure your hand is not over the valve while doing this.

One Caveat To Pressure Cooker Eggs

The only un-perfect thing about this way of hard boiling eggs is that, every so often, one of the eggs will crack its shell during cooking. When this has happened to me, it’s usually been during the 5 minute “natural release” period after the eggs are already cooked, so the crack is only superficially cosmetic. Not ideal if you’re planning to dye a bunch of Easter eggs, of course, but perfectly fine for deviled eggs.

If your eggs seem to be cracking more often, or are cracking before the whites are set, try cooking them at low pressure instead of high pressure. My own tests at low pressure gave inconsistent results. But every pressure cooker is a little different, and you might have better luck with yours.

The jury is still out on unicorns and affordable airfare. But easy-to-peel eggs? At least they are real.

  • Place chicken breasts in the inner pot of the instant pot and season with salt and pepper.
  • Add in 1 cup pineapple juice or chicken stock and season with minced garlic or garlic powder.
  • Place lid on instant pot and be sure vent knob is pointed towards sealed.
  • Set pressure cooker to the cooking time based on the size of chicken breasts. NOT how many chicken breasts you are cooking.
  • Once the cooking time has elapsed, let the pressure release naturally for 10 minutes before doing a quick release of pressure. This is key to keeping your chicken breasts tender–don’t be tempted to do a quick release of pressure.
  • Remove the chicken breasts from the liquid and let rest for 5-10 minutes before serving or shredding.

Why Do Some Eggs Crack During Pressure Cooking

Note that sometimes, you will get one or two eggs that will crack during cooking. I am not sure what the reason is but Ive heard from others that it can be depended on the age of the egg. Older eggs might crack and fresh ones wont. They will still be perfectly cooked and the shell will peel off easily.
