For the easiest place to get your bones, just purchase bone-in meats and seafood and instead of throwing the bones out, store them in the freezer to be used in your next batch of bone broth. As always, be sure to use organic, pasture-raised meats and wild-caught seafood. The conventional versions contain more pro-inflammatory properties, hormones, antibiotics and pesticide residues. You dont want to be extracting those things from your bones into your bone broth!
You can also often purchase bones from your local butcher, farmers market, health food store or co-op. For this recipe, I got my cow bones from a local cattle rancher that raises their cattle on pasture, just a few miles from my house.

How To Store And Freeze Bone Broth
Before storing your bone broth in the refrigerator or freezer you want to bring it down to room temperature. You want to do this as quickly as possible to prevent any chance of contamination as bone broth is the perfect breeding ground for nasty bacteria.
The easiest way to do this is by adding a couple of handfuls of ice to your pot, covering, and then waiting for the broth to cool. Ice helps expedite this process.
You may also create a large ice water bath for your pot by filling your sink with ice water by 2-3 inches. Place your pot directly in the ice water and allow it to cool.
Once cooled, transfer your broth to mason jars with lids or airtight reusable storage containers. Refrigerate your broth for up to one week.

- Find a local farmer who you can purchase meat from. My sister and I usually split a whole cow a couple times per year. The meat processor charges a very small amount to throw in the bones.
- Ask local farmers what they do with the extra bones that people dont want.

Do I Need To Roast The Bones
If you are using a cooked chicken carcass, or cooked chicken pieces, you do not need to roast the bones ahead of time.
If you are using a raw chicken that you have broken down for the bones you should roast them before placing them in the Instant Pot. To do this lay the bones and chicken parts on a baking sheet and roast for 20 minutes in a 400 degrees F oven. Once they are done roasting you can add them, and all of the juices, to your Instant Pot.

Heat up your pressure cooker over medium high heat
- Instant Pot: press Sauté button and click the Adjust button to go to Sauté More function
Make sure your pot is as hot as it can be
- Instant Pot: wait until the indicator says HOT
Add 1 tablespoon olive oil in the pot and brown the bones for 3.5 minutes per side.
*Note: You may have to do it in two batches.

For red meat bones, at least 6 hours and up to 18. For the pressure cooker, the time is 120 minutes on high pressure regardless of the type of bones used.
