This may sound strange, but the absolute best sauerkraut recipe contains more than just fermented cabbage and caraway seeds.
You actually might be shocked to find out what we put in our sauerkraut to make everyone love it.

Tips For Making Kielbasa In The Instant Pot
- We enjoy Kielbasa or Smoked Sausage I usually choose based on price at the grocery store
- A bag of frozen green beans can be added between the sauerkraut and potatoes if desired
- I prefer Yukon gold potatoes have a tender skin and do not require peeling
- Potatoes can be substituted for cauliflower and/or beets know that beets will likely turn the sauerkraut pink
- Chicken broth can be substituted for beer
- Fresh rosemary OR dill can be used, or fresh herb can be omitted
- Sauerkraut does not have to be drained, but Ive found that having too much liquid in the pot makes this recipe too soupy

What goes with pork and sauerkraut?
This is a dish that really has it all so finding things to serve with it can be difficult. I think a nice German potato salad can add a little sweet and tanginess to the plate if youre looking for more flavor, but simple mashed potatoes could make this into a nice comforting meal.
Is pork and sauerkraut lucky?
Something that I didnt know growing up is that many cultures actually eat this dish on New Years because its supposedly good luck. Its said to bring good luck, good health, and good fortune in the New Year. Im not sure how lucky it really is, but the sauerkraut does give a nice immunity boost with fiber, vitamins, and iron.
How long are pork and sauerkraut good for?
You can expect your leftovers to last up to 4 days in the fridge if stored in an airtight container.

While Im Italian, we never did the Feast of the Seven Fishes on Christmas Eve. Technically we feasted on one fish as an appetizer, our all-time favorite baked clam dip, but we stopped there.
No baccalà for us.
Since each year we would get together with our close family friends for dinner, wed each make a tried and true family recipe for the main dish. This meant most years we ate a combination of baked ziti with meatballs right alongside kielbasa, pierogies, and sauerkraut.
Looking back the two cuisines werent quite matchy matchy, but when comfort food tastes that good, who wouldnt want to enjoy them both? I certainly wouldnt want to be the person who had to pick between them.
Theres a major difference between the sauerkraut I grew up eating and this Instant Pot Sauerkraut, and thats the cooking vessel. What typically is made over the course of hours on the stove top to let the flavors meld just right can come together with just ten minutes of pressure cooking time in the Instant Pot.
No need to keep an eye on it, add more liquid at intervals if needed, etc. Just lock the lid, set the time, and listen for the beeps.
Plus with my less than ideal knife skills, who knows how much extra time it would add to the recipe for me to finely slice a whole head of cabbage?!

Why Do Pork Chops Get Tough In The Instant Pot
Using a thick pork chop will typically be more tender because it takes longer to dry out. A thick bone-in pork chop will also typically stay more tender because the bone increases cooking time, thus keeping the chop tender longer.
The Instant Pot is one of the most challenging ways to cook pork chops and keep them tender because you cant just peek in and check the temperature.
If you try this recipe and love the flavors but have trouble keeping the pork chop tender try making the pork chops in the oven. Then the sauerkraut and remaining ingredients can be cooked in the electric pressure cooker.

The first step is to sear all sides of the pork roast. If youre using the Instant Pot, you can do this easily with the Saute function, so you dont have to use two pans. Otherwise you can sear the meat on the stove, then transfer to the pot or slow cooker.
Remove the roast from the Instant Pot. Put the broth in and whisk the bottom of the pan to remove any browned bits .
Next, return the pork roast to the Instant Pot, add the vegetables and apples around the edges, and put the sauerkraut on top of the roast. Cook for 1 hour on the Pressure Cook setting. Allow it to naturally release pressure.
If your pork roast is larger then 2 lbs, you may need to cook it longer. Once youve opened the lid, you can check the internal temperature of the meat . It should be at least 165 degrees F.
